THE ULTIMATE NO-BAKE CHOCOLATE-PEANUT BUTTER PIE

- Combine the heavy cream, powdered sugar and vanilla extract in the clean, cold bowl of a stand mixer fitted with the whisk attachment. Whip until the mixture holds stiff peaks. Gently transfer the whipped cream to a new bowl. Add the cream cheese to the stand mixer bowl, switch to the paddle attachment and beat on medium speed for 1 minute. Add the peanut butter and beat until light and fluffy about 3 minutes.
- Gently fold the whipped cream and chopped peanut butter cups into the cream cheese mixture. Pour the filling into the pie crust and place in the fridge to set for 2 to 3 hours.
- Using a spoon, drizzle the pie in vertical lines with peanut butter sauce. Repeat with the chocolate shell ice-cream topping, also in vertical lines. Sprinkle the peanuts and mini chocolate chips around the perimeter of the pie.
- Heat the condensed milk, peanut butter and 3 tablespoons water in a small saucepan over medium-low heat until smooth and melted, 5 to 7 minutes. (Thin with a little more water if too thick.) Let cool slightly.

I was given this recipe a few years ago at a Weight Watchers meeting. It is a favorite of my family and at potlucks. My kids don't care it is low in fat & calories - they just like the taste. This was before the point system - so I don't know the values of it.

- Filler Layer 1: Add 2/3 cup dry milk powder to the vanilla pudding mix.
- Stir in 1 1/2 cup cold water until smooth.
- Beat in the peanut butter.
- Spread in bottom of the graham cracker crust.
- Filler Layer 2: Add 2/3 cup dry milk powder to the chocolate pudding mix.
- Stir in 1 1/4 cup cold water.
- Mix until smooth.
- Pour on top of the Peanut Butter layer.
- Top with 2 cup of whipped cream.
- Garnish with chocolate curls from the chocolate candy.
- Chill.
PEANUT BUTTER CHOCOLATE PIE
This is a very good recipe for peanut butter chocolate pie. Freeze this for storage or for a summer treat.

- In a large bowl beat cream cheese until smooth.
- Add peanut butter and 1 cup of the sugar.
- Beat until well blended.
- In a small bowl beat 1/2 cup of whipping cream until soft peaks form.
- Gradually beat in remaining 1/4 cup sugar and vanilla.
- Slowly fold cream mixture into peanut butter mixture.
- Pour into cooled pie shell.
- For the topping-in a double boiler over hot but not boiling water melt chocolate and cream together, whisking until smooth.
- Cool to luke warm and then pour over pie.
- You may need to rock the pie back and forth to get even coverage.
- One inch in from the edge form a circle with the chopped nuts and then chill for at least 2 hours.
- Once topping has set you can cover with plastic wrap.
- You can freeze this pie for storage or for a frozen summer treat.
CHOCOLATE - PEANUT BUTTER PIE
Another recipe from the Fiddlehead restaurant in Juneau! Incredibly rich, absolutely wonderful; this pie sends peanut butter fans into ecstasy. Prep time includes chilling time. This makes enough for two 9-inch pies or one large 10 inch pie...really depends on the depth of your pie plate.

- Crust:.
- Preheat oven to 350°F and place rack in center of oven.
- Combine cracker crumbs, brown sugar and melted butter in a deep 10-inch pie pan (or two shallow 9-inch pie pans).
- Press evenly into pan and bake for 10-15 minutes.
- Chill Crust.
- Ganache:.
- Bring 3/4 cup heavy cream to boil in small pan over medium-high heat, or microwave for 2-3 minutes, and pour over chocolate chips.
- Whisk together until smooth.
- Pour 1/2 of the chocolate mixture into cooked and cooled pie shell(s) and spread evenly over bottom. (Save the rest for the garnish).
- Refrigerate.

- In a large mixing bowl, with an electric mixer set on high, whip cream cheese and sugar until smooth.
- Add milk, peanut butter, and vanilla.
- Beat until well mixed.
- In a separate bowl, whip chilled cream until stiff and fold into peanut butter mixture.
- Spoon gently into chilled crust; using a spatula to smooth surface of pie.
- Refrigerate for at least 4 hours.
- Garnish with chocolate shavings, crushed peanuts, whipped cream or drizzle ganache over top.
- Serve at once.

- Make the crust: Preheat the oven to 350 degrees F. Butter a 9-inch pie plate. Pulse the graham crackers and peanuts in a food processor until finely ground. Add the melted butter and pulse to combine. Press the crumb mixture into the bottom and up the side of the prepared pie plate. Bake until set, 10 to 12 minutes. Transfer to a rack to cool.
- Meanwhile, put the chocolate chips in a microwave-safe bowl and microwave at 50 percent power in 30-second intervals, stirring after each, until melted and smooth. Spread evenly in the prepared crust with a small offset spatula or the back of a spoon; set aside until the chocolate sets, about 10 minutes.
- Make the filling: Beat the heavy cream in a bowl with a mixer on medium-high speed until soft peaks form; refrigerate until ready to use. In another bowl, beat the peanut butter, cream cheese, milk and vanilla on medium-high speed until smooth, about 1 minute. Add the confectioners' sugar and mix on low speed until incorporated.

- For the crust: Preheat the oven to 350 degrees F. Stir together the melted butter, puffed cereal, chocolate wafers and granulated sugar in a bowl. Press the mixture into a springform pan. Bake for 8 to 10 minutes. Let cool.

- For the crust, melt butter and mix with almond meal. You need enough to cover the bottom of your pan. This is gorgeous in a spring form. I add melted butter and almond meal back and forth until I have enough to cover it. You want the meal to stick together easily and press into shape, without being overly wet.
- Bake at 350 until it begins to brown, about 20 minutes in Colorado. Please let me know if it's a lot faster at sea level! Let cool completely.
- For the peanut butter layer, soften the butter to room temperature. Beat all ingredients together. Pour over the crust and spread even. Refrigerate until solid, about 1 hour.
- For the chocolate, finely chop the chocolate and set aside. I usually use Green & Black's brand, one bar of 60% and one bar of 85%.
- Heat the cream on medium low until almost boiling. While the cream heats, separate the eggs and beat the yolks together in a small bowl let come to room temperature. If you set it on the stove to warm, be careful the eggs do not cook at all.
- Once the cream is steaming, pour 2 T of it into eggs to temper. Beat together and pour egg mix into the cream, stirring constantly. Cook until it is back to a simmer. Add the chocolate and stir until it is fully melted. Set aside to cool.
- Once cool enough to touch, pour over the peanut butter layer. Place plastic wrap against the chocolate to prevent a crust. Refrigerate until solid. Takes about 4 hours. I usually let it sit overnight.
- Remove plastic wrap. With a plastic blade or spatula, separate the edge of the pie from the pan and remove, if using a spring form. Whip the cream until it forms stiff peaks. Dollop onto the pie. Sprinkle cacao nibs over the peaks of whipped cream. You can sweeten the cream if you like, but this is so rich I think a sweetened cream takes away from the flavor and decadence.
- As an alternative, you can put them in mini muffin tins and serve as peanut butter cups. If you do this, do not use egg yolks, and use equal volume of chocolate and cream (so less cream).

- 1. In large bowl,beat peanut butter,cream cheese, and sugar until creamy. Fold in 3 cups Cool Whip. Spoon mixture into crust and smooth to edges. Remove 2 tablespoons hot fudge and peanut butter from jars and reserve each in a zip-loc plastic baggie for later.
- 2. Heat remaining hot fudge according to package directions. Spread on top of peanut butter layer. Refrigerate pie until serving time. At serving time,carefully spread remaining Cool Whip on top of pie.

- Peanut Butter Filling: with a hand mixer or food processor, mix peanut butter, cream cheese and butter, and salt. Slowly add the sugar and then the 1 tsp vanilla until well blended. Add peanut butter mixture to the pie plate (or plates if making 2 small pies), pressing down on all sides to make flat.
- Chocolate Mousse topping: Melt the unsweetened chocolate squares in a sauce pan on low. (Do not overheat or boil!) When the chocolate is completely melted, add sweetened condensed milk and remove from heat. Add remaining tsp vanilla and mix quickly. Cool to room temperature.
- Fold 12 oz cool whip into chocolate mixture. Let cool. Carefully pour/scoop onto peanut butter mixture. Add to pie plate(s) and refrigerate or freeze for faster setting time. Sprinkle chocolate shavings over the top, **Optional.
