What an easy idea. From the New Better Homes and Gardens Jr. Cookbook, 1989. It's not so new anymore but I like the simple idea of using chocolate milk to flavor this. You can use cherry pie filling or assorted syrups like strawberry or raspberry too. I streamlined the directions.

2 eggs
1/2 cup chocolate milk
2 tablespoons margarine or 2 tablespoons butter
4 slices bread
powdered sugar (optional)

Steps:

  • Beat the eggs in a mixing bowl and add the chocolate milk to it.
  • Beat until well mixed.
  • Pour this into a pie plate.
  • Put half the butter or margarine (1 tbsp.) in a skillet and heat over medium-high heat.
  • Dip one slice of the bread into the egg mixture and turn the bread over to coat the other side.
  • Place the coated bread in the skillet and repeat with antoher slice.
  • Cook until the bottoms are browned and then turn the slices with a spatula and cook until the other side is browned; remove to a serving plate.
  • Put the remaining butter or margarine in and repeat the cooking process.
  • Sprinkle with powdered sugar and top with cherry pie filling or syrup if you like. (I like whipped cream)!

DECADENT CHOCOLATE FRENCH TOAST

1 chocolate pound cake
1 cup heavy cream
1/3 cup white chocolate chips
1 pint strawberries, washed, tops removed
2 tablespoons sugar
4 tablespoons butter
1/2 cup chocolate milk
2 teaspoons vanilla extract
1/4 teaspoon ground cinnamon
3 eggs
1/4 cup chocolate chips or shaved chocolate
4 sprigs fresh mint, for garnish

Steps:

  • Preheat the oven to 350 degrees F. Fit a baking sheet with a wire rack.
  • Slice the pound cake into 8 slices. Place the prepared baking sheet. Toast in the oven for 12 minutes.
  • In a small pot, heat 1/4 cup heavy cream over low heat. When hot, whisk in the white chocolate chips until melted and fully incorporated into the cream. Remove from the heat and chill in the fridge until cool but still a pourable consistency, about 30 minutes.
  • In a blender, combine three-quarters of the strawberries with the sugar. Reserve the remaining strawberries for garnish. Blend until smooth. Strain the puree through a strainer into a bowl. Cover and place in the fridge until ready to serve. Strawberry sauce can be made the day before and keep in the refrigerator in an airtight container.
  • In a large chilled bowl, combined the remaining 3/4 cup heavy cream and the cooled white chocolate cream mixture. Whip with a hand mixer until medium peaks form. Cover and place in the fridge while you make the French toast.
  • Heat 2 tablespoons butter in a large skillet over medium-low heat.
  • In a baking dish. whisk together the chocolate milk, vanilla, cinnamon and eggs until well blended. Place 4 pieces of the pound cake into the egg mixture and let soak for 15 seconds. Flip and soak the other side for 15 seconds. Remove the cake from the egg mixture, allowing any excess to drip off, and place in the heated skillet with the butter. Cook for 3 to 4 minutes per side. Remove to a platter. Add the remaining 2 tablespoons butter to the skillet and repeat with the remaining 4 pound cake slices.
  • To assemble: Place a small pool of the strawberry sauce onto 4 plates, 2 to 3 tablespoons per plate. Place 2 pieces of French toast onto each plate. Top each with a large dollop of the white chocolate whipped cream, sprinkle with the some chocolate chips and garnish with a fresh strawberry and mint sprig.

Steps:

  • Beat together milk, eggs, sugar, cocoa powder, baking powder, and salt.
  • Heat a lightly buttered skillet or griddle over medium heat.
  • Dip each slice of bread into egg mixture until well soaked, about 20 seconds per side. Place in pan, and cook on both sides until they are no longer gooey or shiny in the middle when cut in half, about 3 to 4 minutes per side.

  • Warm the milk in a small saucepan.

  • Place the toasted bread onto a plate and spread on the butter.

Making chocolate milk from scratch is fast, easy and delivers a deep chocolate flavor. The base syrup here doubles down on chocolate, combining unsweetened cocoa powder with chocolate containing 100 percent cacao. Their bitter edge balance the sweetness nicely. The syrup is also quite versatile: Feel free to use it in coffee, cocktails and even soda water if that's your thing.

3/4 cup sugar
1/4 teaspoon kosher salt
1/2 cup unsweetened cocoa powder, preferably Dutch-processed
3 tablespoons unsweetened chocolate, chopped (1 ounce)
1 teaspoon pure vanilla extract
8 cups cold milk, or unsweetened dairy-free alternative (see note)

Steps:

  • Combine sugar, salt and 1/2 cup water in a small saucepan. Bring to a boil over medium heat, whisking to dissolve the sugar and salt, then add the cocoa powder while whisking. Whisk until smooth. Remove from the heat and add the chocolate. Whisk until melted, then whisk in the vanilla. Transfer to a jar and refrigerate until room temperature. If you're in a rush, you can transfer the syrup to a heatproof bowl set in a larger bowl filled with ice and water. Stir until room temperature.
  • Stir or whisk 2 tablespoons syrup into 1 cup whole milk. Add more syrup to taste. Repeat with remaining cups.

These French toast roll ups are filled with Nutella®, chocolate chips, and peanut butter - a classic flavor combination with a bonus of double chocolate!

8 slices white bread
½ cup peanut butter
¼ cup chocolate-hazelnut spread (such as Nutella®)
4 teaspoons miniature semisweet chocolate chips
2 large eggs
3 tablespoons milk
2 tablespoons unsalted butter, or more as needed
2 tablespoons cinnamon sugar

Steps:

  • Trim the bread crusts and use a rolling pin to flatten each slice into a square.
  • Spread about 1 tablespoon peanut butter, followed by 1/2 tablespoon hazelnut spread onto each bread square. Sprinkle about 1/2 teaspoon mini chocolate chips on each bread square, and roll up.
  • Whisk eggs and milk together in a small bowl. Coat each roll with the egg mixture.
  • Melt butter in a skillet over medium heat. Place roll ups seam side down into the skillet and cook until golden brown on all sides, 4 to 5 minutes. Add more butter to the skillet, if necessary.
  • Sprinkle cinnamon sugar onto a plate, and as soon as roll ups come out of the skillet, roll them in the sugar, shaking off excess. Serve warm.

1 cup whole milk
1 teaspoon sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
12 slices day-old bread, crusts removed
3 milk chocolate candy bars (1.55 ounces each), halved
2 tablespoons butter
Confectioners' sugar

Steps:

  • In a large bowl, whisk the eggs, milk, sugar, vanilla and salt. Pour half into an ungreased 13x9-in. baking dish. Arrange 6 slices of bread in a single layer over egg mixture. Place 1 piece of chocolate in the center of each piece of bread. Top with remaining bread; pour remaining egg mixture over all.
