1 package (16 ounces) angel food cake mix
1/2 cup finely chopped maraschino cherries
1 cup semisweet chocolate chips
1 tablespoon maraschino cherry juice
2 teaspoons strong brewed coffee
1/2 teaspoon vanilla extract
1 cup sour cream
1 container (8 ounces) frozen whipped topping, thawed
Chopped walnuts, grated chocolate and additional maraschino cherries

Steps:

  • Prepare cake mix batter according to package directions; fold in chopped cherries. Gently spoon into an ungreased 10-in. tube pan. Cut through batter with a knife to remove air pockets., Bake on the lowest oven rack at 350° for 45-55 minutes or until lightly browned and entire top appears dry. Immediately invert pan; cool completely, about 1 hour. Run a knife around side and center tube of pan. Cut cake horizontally into three layers., For filling, in a small heavy saucepan, cook and stir the chocolate chips, cherry juice, coffee and vanilla over medium-low heat until melted. Remove from the heat; stir in sour cream., To assemble, place one cake layer on a serving plate; spread with one half of the filling. Repeat layers. Top with remaining cake layer. Spread whipped topping over top and sides of cake. Garnish with walnuts, chocolate and cherries. Refrigerate until serving.

½ cup unsweetened cocoa powder
1 ½ teaspoon baking powder
1 ½ teaspoon baking soda

2 eggs
½ cup oil, vegetable or canola
1 cup buttermilk
1 teaspoon vanilla extract
1 cup boiling water
1 cup butter, room temperature
5-6 cups powdered sugar
1 teaspoon almond extract
5 tablespoons maraschino cherry juice
½ cup chopped cherries
1 cup unsalted butter, softened
½ cup cocoa powder
4 cups powdered sugar
1 teaspoon vanilla extract
3-4 tablespoons heavy cream
4 ounces, bittersweet chocolate chips, or chopped chocolate
½ cup heavy cream
Maraschino cherries, optional
Almonds, thinly sliced, optional

Steps:

  • Preheat oven to 375 degrees
  • Grease two 9-inch round baking pans, line with parchment paper or waxed paper, set aside
  • In a large bowl, stir together granulated sugar, cocoa powder, baking powder, baking soda, salt and all-purpose flour
  • In a separate bowl, combine the eggs, buttermilk, oil and vanilla extract, mix well
  • Add wet ingredients to the dry ingredients and mix to combine
  • Stir in boiling water and mix
  • Pour batter into prepared pans
  • Bake for 25-30 minutes or until a toothpick inserted in center comes out clean
  • Let cool in the pans for 10 minutes, then remove the cakes to wire racks and let cool completely
  • In a large mixer bowl, beat softened butter until completely smooth and fluffy
  • Slowly add half of the powdered sugar and mix until smooth
  • Add 5 tablespoons of cherry juice and almond extract and mix until smooth
  • Slowly add the remaining powdered sugar and mix until smooth
  • Add chopped cherries and mix until completely combined
  • In a the bowl of an electric stand mixer, fitted with paddle attachment, whip butter on high speed until fluffy, about 5 minutes, occasionally scraping down sides of the bowl
  • Sift in cocoa powder then add in powdered sugar, 3 tablespoons heavy cream and vanilla and mix on low speed until combine, scrapping down the sides of the bowls as needed and adding up to 1 tablespoon additional cream to thin if desired
  • Place chocolate chips into a bowl, bring heavy cream just barely to a simmer and pour over chocolate chips
  • Stir with a spatula until combined and smooth
  • Allow to cool and thicken slightly before using on cake
  • Place one of the chocolate cake rounds on a serving platter
  • Spread maraschino cherry buttercream filling over the cake
  • Set another cake layer on top of the filling and spread chocolate frosting over the entire cake
  • Drizzle the chocolate glaze around the edge of the cake then pour the remainder of the glaze on top of the cake and spread evenly
  • Allow the glaze to firm then pipe chocolate frosting around the edge of the cake and top with cherries, sprinkle with sliced almonds if desired
  • Serve

One 15.25-ounce box devil's food cake mix, such as Duncan Hines
One 3.9-ounce package instant chocolate pudding mix
4 large egg whites
3/4 cup cherry cola, such as Cherry Coke ®
1/2 cup vegetable oil
1/2 cups finely chopped maraschino cherries
5 1/4 cups confectioners' sugar
6 sticks (1 1/2 pounds) unsalted butter, at room temperature
1/4 teaspoon kosher salt
5 tablespoons maraschino cherry liquid plus 1 cup finely chopped maraschino cherries
8 ounces semisweet chocolate, chopped
3/4 cup heavy cream
1 1/2 cups whole maraschino cherries with stems

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Coat two 8-inch round cake pans with cooking spray, then line with parchment and spray the parchment.
  • Combine the cake mix and pudding mix in a stand mixer fitted with the paddle attachment and mix on low speed to blend. With the mixer still running, add the egg whites, cherry cola and vegetable oil and mix until combined. Raise the speed to medium and mix until increased in volume, lighter in color and smooth, about 5 minutes. Fold in the maraschino cherries. Divide the batter between the prepared baking pans; smooth into even layers using an offset spatula.
  • Bake until a skewer inserted in the center comes out clean and the edges pull away from the sides of the pan, about 15 minutes. Transfer to a rack and let cool in the pans, about 10 minutes, then turn out onto racks and let cool completely, about 1 hour.??
  • For the frosting: Mix the confectioners' sugar, butter and salt together in a stand mixer fitted with the whisk attachment. Mix on low speed until well blended, then increase the speed to high and whip until light and fluffy, 3 to 5 minutes. Add the maraschino cherry liquid and continue to whip until bright pink and spreadable. Add the chopped cherries and mix on low speed until evenly distributed.
  • Using a serrated knife and sawing in long, even strokes, carefully halve the cake layers horizontally. Place 1 layer, cut-side up, on a platter or cake stand; spread 1 1/2 cups frosting on top. Stack another cake layer on top and spread another 1 1/2 cups frosting on top. Repeat with the remaining 2 cake layers, then cover the top and sides with a thin layer of frosting (this is the crumb coat) and use a bench scraper or large offset spatula to smooth out the sides and top (it's okay if some cake shows through). Refrigerate 15 minutes, then add another 1/2-inch layer of frosting to the top of the cake and smooth out to make a perfectly flat top. Refrigerate until ready to cover with ganache.
  • For the ganache: Meanwhile, place the chocolate in a heatproof bowl and heat the cream in a small saucepan over medium-high heat until beginning to boil. Pour the cream over the chocolate and let sit, stirring occasionally, until the mixture is completely smooth and the chocolate is melted, about 5 minutes. Let cool 30 minutes, then pour over the chilled cake so that the top is completely coated and chocolate drips decoratively down the sides. Let set at room temperature 30 minutes, then top with the whole cherries in the center of the cake and serve.

1 package (6 ounces; 1 cup) semisweet chocolate chips

Steps:

  • Place a rack in the center of the oven and preheat the oven to 350 degrees F. Lightly mist a 13- by 9-inch baking pan with vegetable oil spray. Set the pan aside.
  • Place the cake mix, cherry pie filling, eggs, and almond extract in a large mixing bowl. Blend with an electric mixer on low speed for 1 minute. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2 minutes more, scraping the sides down again if needed.   • Store this cake, covered in aluminum foil, at room temperature for up to 5 days or in the refrigerator for up to 1 week. Or freeze the cake, wrapped in foil, for up to 6months. Thaw the cake overnight on the counter before serving.
