CHOCOLATE LOVER'S ECLAIRS
I recently won the grand prize with this eclair recipe at a "Chocolate Lovers Cook-Off" contest in our town. This is one of my favorite desserts. -Janet Davis, Murfreesboro, Tennessee

- In a large saucepan, combine butter and water. Bring to a rapid boil, stirring until the butter melts. Reduce heat to low; add flour and salt. Stir vigorously until mixture leaves the sides of the pan and forms a stiff ball. Remove from the heat. Add eggs, one at a time, beating well after each addition. , With a tablespoon or a pastry tube fitting with a no. 10 or larger tip, spoon or pipe dough into 4-in.-long x 1-1/2-in.-wide strips on a greased baking sheet. , Bake at 450° for 15 minutes. Reduce heat to 325° bake 20 minutes longer. Cool on a wire rack. , For filling, in a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. In another large bowl, whip cream until soft peaks form. Beat in sugar and vanilla; fold into pudding. Fill cooled shells. (Chill remaining pudding mixture for another use.) , For icing, melt chocolate and butter in a small saucepan over low heat. Stir in sugar. Add hot water until icing is smooth and reaches desired consistency. Cool slightly. Spread over eclairs. Chill until serving.

CHOCOLATE LOVERS' BUTTERSCOTCH CHIFFON TART

- Make bittersweet chocolate dough:
- Blend together the flour, cocoa powder, and salt in a bowl. Using the metal blade in a food processor, pulse the butter and the powdered sugar together until combined. Add the flour and cocoa mixture to the food processor bowl and pulse until the mixture resembles coarse meal. Add the egg and pulse until incorporated. Dump the dough onto a piece of plastic wrap or into a plastic bag and gently knead until the dough holds together. Flatten into a 6-inch disk, cover with plastic wrap (or close plastic bag), and refrigerate for 30 minutes (until just firm enough to roll). Roll out dough into a 1/8-inch-thick circle between 2 lightly floured sheets of plastic wrap. Fit dough into ungreased tart pan. Patch any holes or rips by pressing in scraps of extra dough with your fingers. Trim excess dough so that there's 1/8 inch of dough above the top edge of the tart pan (to account for shrinkage while baking). Chill for 1 hour before baking.
- Put oven rack in middle position and preheat oven to 375°F. Lightly prick shell all over with a fork. If using pie weights: Line shell with parchment and fill with pie weights. Bake until pastry deepens in color (but does not brown), about 12 minutes. Remove parchment and bake for another 2 to 3 minutes more. If not using pie weights: Bake until pastry deepens in color (but does not brown), about 12 minutes. Check after the first 5 minutes; if center of tart puffs up, gently push down with the back of a spoon. Cool completely in the tart pan on a rack, about 20 minutes.
- Make butterscotch filling:
- Bring corn syrup, 3/4 cup sugar, and 2 tablespoons water to a boil in a 1 1/2- to 2-quart heavy saucepan over moderate heat, stirring until sugar is dissolved. Boil mixture, without stirring, swirling pan occasionally, until it melts into a deep golden caramel, 7 to 9 minutes. Remove saucepan from heat and add butter, vinegar, and a pinch of salt, swirling pan until butter is melted. Add 1/3 cup cream and vanilla and simmer, stirring, 1 minute (sauce will be golden brown). Cool sauce to warm.
- While sauce is cooling, sprinkle gelatin over remaining 2 tablespoons water in a small saucepan and let stand 1 minute to soften, then heat over low heat until dissolved. Stir into butterscotch sauce and cool to room temperature.
- Beat egg whites with a pinch of salt in a large bowl with an electric mixer until they hold soft peaks, then add remaining tablespoon sugar and continue to beat until whites just hold stiff glossy peaks. Fold in butterscotch sauce gently but thoroughly. Beat remaining cream with cleaned beaters until it just holds stiff peaks, then fold into butterscotch mixture gently but thoroughly. Gently pour chiffon into cooled pastry shell, letting it mound, and chill, uncovered, until set, at least 2 hours.
- Make pecan topping:
- Cook pecans in butter with salt in a small heavy skillet over moderate heat, stirring frequently, until golden, about 5 minutes. Remove from heat and cool nuts completely.
- Let tart stand at room temperature, about 30 minutes. Just before serving, sprinkle cooled nuts over top of tart.
KAF CHOCOLATE CASSATA CAKE
This came in my latest King Arthur Flour magazine and descriped as "version of the traditional Sicilian desert changed up to a dense chocolate cake, filled with sweetened ricotta cheese and chocolate chips, and iced with creamy fudge frosting. Besides sounding awesome to us chocolate lovers it looks pretty too.

- CAKE:.
- Preheat the oven to 325°F Lightly grease an 8 1/2" x 4 1/2" loaf pan.
- In a medium-sized mixing bowl, beat together the butter, sugar, salt, vanilla, baking powder, espresso powder, and cocoa to make a sandy, somewhat clumpy mixture. Don't worry; the eggs will smooth things out.
- Add the eggs one at a time, beating well after each addition. Scrape down the sides and bottom of the bowl midway through this process.
- Add half the flour to the bowl, beating at low speed to combine.
- Add all of the milk, beating at low speed to combine.
- Add the remaining flour, beating gently just until the batter is smooth.
- Pour the batter into the prepared pan.
- Bake the cake for about 70 minutes, or until a toothpick inserted into the center comes out clean. The top may look a tiny bit damp; that's OK. If you have an instant-read thermometer, the center will register 210°F to 215°F, while just under the top will register about 198°F to 200°F.
- Remove the cake from the oven, loosen the edges, wait 10 minutes, and turn it out of the pan onto a rack to cool.
- Store completely cooled cake well wrapped, at room temperature, until ready to fill and frost.
- FILLING:.
- Stir together the ricotta, sugar, vanilla, and chocolate chips. Cover and refrigerate until ready to use.
- Frosting:.
- Sift the cocoa, confectioners' sugar, and espresso powder into a bowl.
- Bring the cream to a simmer on the stove or in the microwave, and whisk into the cocoa mixture. At first the mixture will look grainy; continue whisking for a minute. You'll see the lumps disappear as the sugar dissolves and the cocoa hydrates.
- Set aside to cool to room temperature.
- Place the butter, salt, and sifted confectioners' sugar in a large mixing bowl.
- Beat until the mixture is smooth and fluffy. Beat in the vanilla.
- With the mixer running on low speed, add the cocoa mixture a spoonful at a time until it's all incorporated. Scrape the bowl, then beat at medium speed for 1 minute.
- Assemble Cake:.
- Split the cake in thirds lengthwise, to make 3 layers. Brush the cut side of each layer with simple syrup or vanilla syrup; this will help keep the cake moist.
- Place the bottom layer on a serving plate. Spread with half the ricotta filling. Top with the second layer, and spread with the remaining filling. Place the third layer on top.
- Ice the cake - top and sides - with the frosting.
- Serve immediately; or refrigerate, well-wrapped, until ready to serve, preferably not longer than 24 hours. Cut in crosswise slices to serve.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 10 inch Bundt pan.
- In a large bowl, stir together cake mix and pudding mix. Make a well in the center and pour in sour cream, melted butter, eggs and almond extract. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Blend in chocolate chips. Pour batter into prepared pan.
- Bake in preheated oven for 50 to 55 minutes. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

Steps:
- Preheat oven to 425 degrees with the rack in the upper third of the oven.
- Combine the flour, cocoa, and salt in a bowl and make a well in the center.
- Add the eggs and oil in the center of the well and mix with a fork to form a thick dough.
- Knead the dough for 15 minutes until it is smooth and shiny, adding more flour if necessary to keep the dough from sticking.
- Wrap in plastic wrap and let rest for half an hour.
- Roll the pasta out by hand or with a machine and cut into eight 4 1/2 x 11 inch strips.
- Cook two strips at a time in boiling salted water.
- Cook just 20 seconds after the water returns to a boil.
- Plunge the noodles into cold water to stop the cooking.
- When cooled, place on towels in a single layer to drain.
- Combine all filling ingredients (except chocolate) and mix until smooth.
- To assemble: generously butter an 8 x 11 x 2 inch pan.
- Alternate layers of noodles, cheese filling, and chocolate, ending with a cheese layer.
- Bake for 20-25 minutes until the top is lightly colored.
- Let the lasagna stand for 10 minutes to solidify, then serve warm.
