This recipe has been in my family for years, and in my opinion is the best Italian Cream Cake! It's very moist and always gets lots of compliments!

1/4 lb butter, softened
1/2 cup shortening
2 cups sugar
5 eggs, separated
1 cup buttermilk
1 teaspoon baking soda
2 cups all-purpose flour
1 teaspoon vanilla
1 cup shredded coconut
1/2 cup chopped pecans
1 (8 ounce) package cream cheese, softened
1/4 lb butter, softened
1 teaspoon vanilla
1 box powdered sugar
1/2 cup chopped pecans

Steps:

  • Preheat oven to 325 degrees F.
  • For cake: Cream butter, shortening and sugar.
  • Add egg yolk one at a time, beating after each addition (this is an important step!) Stir in baking soda and buttermilk.
  • Add sifted flour into batter, alternating with the buttermilk mixture.
  • Add vanilla, coconut and chopped pecans.
  • Beat egg whites and fold into batter.
  • Pour into a greased and floured 9X 13-inch cake pan for a sheet cake, or two 9-inch round cake pans for a round layered cake.
  • Bake for 45 minutes, or until cake tests done.
  • Remove from oven, cool completely before frosting.
  • For frosting: Beat cream cheese and butter.
  • Add vanilla, powdered sugar, and pecans.
  • Continue to beat until you get a spreading consistency.

1 cup buttermilk, at room temperature
2 cups shredded coconut
1 cup finely chopped pecans or walnuts

1 (8-ounce) package cream cheese, at room temperature
1/4 cup butter, softened at room temperature
1 teaspoon vanilla
1 (16-ounce) box powdered sugar, sifted
3/4 cup finely chopped pecans or walnuts
1/2 cup shortening, room temperature
1 stick butter, room temperature
2 cups sugar
5 eggs, separated and at room temperature
2 cups flour
1 teaspoon baking soda

Steps:

  • Preheat the oven to 325 degrees F and grease and flour 3 (9-inch) cake pans.
  • In the bowl of an electric mixer cream the shortening, butter and sugar until light and fluffy. Add the egg yolks 1 at a time, beating well after each addition. Sift the flour, baking soda and salt together onto a sheet of waxed or parchment paper. With the mixer on low speed, add the sifted ingredients in batches alternately with the buttermilk, beginning and ending with the dry ingredients.
  • In a separate bowl, beat the egg whites until stiff, and gently fold into the prepared batter. Add the coconut, pecans and vanilla and fold into the batter. Divide the batter among the 3 prepared cake pans and bake for about 25 minutes, or until golden brown and a tester comes out clean when inserted into the middle of each cake. Allow the cakes to cool in the pans for about 10 minutes before turning them out onto a wire rack to finish cooling. When the cakes are completely cool, stack the layers with the frosting and frost the sides and top.
  • While the cake is baking, prepare the frosting. In a large bowl combine the cream cheese, butter and vanilla and, using an electric mixer, beat until smooth and creamy. Add the sifted powdered sugar and mix until thoroughly combined. Add the nuts and fold together. Keep refrigerated until you are ready to frost the cake.

Cake Batter
2 cups of sifted all purpose flour (I like to use Farino Tipo 00 - An Italian Flour, note: you can also use Cake Flour)
2 cups of sugar
1 stick of butter unsalted
1/2 cup of dry shredded coconut
1 cup of finely chopped walnuts
5 egg whites (beat until stiff peaks)
5 egg yolks
1/2 cup of olive oil
1 cup of buttermilk
1 1/2 teaspoon of vanilla extract
1 teaspoon of baking soda
Cake Icing
8 oz of cream cheese
1/2 stick of butter for humid climates OR 1. to 1.5 sticks in dryer climates
1 teaspoon of buttermilk
1 teaspoon of vanilla extract
1 teaspoon of creme de cacao (optional but I like it, so if you can't find it no worries)
8 oz of powdered sugar
1 teaspoon of the white chocolate flavoring (again optional, if you can't find it then double up on the vanilla extract
Note for Dryer Climates use 1 to 1.5 sticks of butter

Steps:

  • Pre-heat oven to 350 degrees. If your oven browns quickly then take it down 15 to 20 degrees. Grease and flour 3 round cake pans. 1. Cream (mix) butter with sugar and add vanilla 2. Next add 5 separated egg yolks and 1/2 cup of olive oil - mix and beat until fluffy. 3. In a separate bowl combine dry ingredients: Sifted flour and the baking soda. 4. Add the dry ingredients to the mixture a little at a time alternating with the buttermilk (about 1/4 cup at a time). 5. Next, mix in walnuts and coconut. 6. In another bowl beat the egg whites until you have stiff peaks. 7. With a spatula, gently fold the egg whites into the batter by making the figure 8 pattern. 8. Spoon the batter into your 3 pans and make them as even as you can. 9. Bake until light brown for 30 to 60 minutes (use a toothpick in the center and make sure no batter is on the stick). 10. Once the cakes are done pull them out and let them cool. 11. After they cool, place the cakes on parchment and use a brush to dust off the crumbs (easier to ice). 12. Next Cream all of the ingredients together for the icing in this order: Cream Cheese, Butter, Buttermilk, Vanilla extract, Creme de Cacao, and Powdered Sugar. Note: If your not using Creme de Cacao just double up on the Vanilla extract. 13. After the icing is mixed start to assemble the cake by taking one of the layers of cake and making it your base. Stick strips of parchment paper around the bottom of the cake. Ice the top of it and add the next layer of cake and ice the top of it adding your final layer of cake. 14. Now start to ice the sides and the top of the cake until covered. Use chopped walnuts or coconut to decorate the sides. 15. Refrigerate the cake until you are going to slice and serve!

1 tsp. baking soda

CREAM CHEESE FROSTING:
12 oz. cream cheese or 1 1/2 (8 oz.) pkgs., softened

Steps:

  • For Cake: HEAT oven to 350 degrees F. Spray three 9-inch round cake pans with no-stick cooking spray with flour. Beat shortening in large bowl at medium speed of electric mixer until light and fluffy. Gradually add sugar. Add egg yolks, one at a time; beat until blended after each addition. Add vanilla; beat until blended.
  • COMBINE flour, baking soda and salt; stir well. Add to shortening mixture alternately with buttermilk, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Stir in coconut and pecans.

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Butter and flour the bottom and sides of a 9-inch springform pan. Sift together the flour and baking powder in a bowl.
  • Whisk the eggs in a mixer fitted with the whisk attachment on high speed until very light and fluffy, about 5 to 6 minutes. With the mixer on medium, slowly pour in the sugar, and mix until thick and glossy, about 1 to 2 minutes, then stir in the orange zest. Fold in the sifted flour with a spatula just until incorporated-don't overmix. Pour the batter into the prepared pan, and bake until a cake tester inserted in the center comes out clean, about 20 minutes. Let the cake cool on a wire rack, then run a knife around the sides of the pan to loosen and unmold.
  • For the filling: Dissolve the gelatin in 2 tablespoons hot water in a small bowl. Beat the ricotta and confectioners' sugar in a mixer fitted with the paddle attachment on medium speed until smooth, about 2 minutes. Scrape in the dissolved gelatin and mix to distribute. Stir in the chocolate and lemon peel with a spatula.
  • For the syrup: Bring the sugar to a boil with 1 cup water in a small pot. Boil until reduced by about a quarter, about 2 to 3 minutes. Remove from heat, and stir in the Grand Marnier. Let cool slightly.
  • To assemble: Line the inside of a 9-inch-diameter bowl with plastic wrap, letting several inches of excess wrap drape down the outside.
  • Cut the cake into three circular layers of equal thickness, using a serrated knife. Line the bottom of bowl with one cake slice, pressing to fit, and brush with some of the syrup to soak it evenly. Fill half of the cavity of the bowl lined with the cake with some of the filling. Fit another cake layer on top of the filling, pressing to fit snugly to the sides of the bowl, then brush with more syrup. Continue to fill the cavity with the remaining filling, and fit the final layer flat on top. Soak the last layer with the remaining syrup. Fold the excess plastic wrap over the top, and weight top with a heavy plate. Chill overnight, or until the filling is set; if filled with ice cream, set in the freezer.
  • For the glaze: Sift the confectioners' sugar into a large bowl, and whisk in the lemon juice to make a smooth, spreadable glaze. If necessary, add a little more confectioners' sugar or some water to get the correct consistency.
  • Remove the cake from the bowl and unwrap. Invert with dome up on a cake plate or stand. Spread the glaze over the top of cake, and let it slide down the sides, guiding it with a spatula to cover the cake completely. Let the glaze set at room temperature before serving.

Italian Cream Cake recipes are basically the same, and true to form. Traditional Italian cream cake recipes often call for shortening in the batter. However, I prefer using all butter in my cream cake. I also like the depth of flavor you gain by adding brown sugar to the batter and a touch of almond extract. Take the time to toast the coconut to use as a garnish for the sides of the cake not only making it pretty, but adding spectacular flavor as well. It's a special cake for a special occasion.I baked the cake last night finished decorating this morning!!!

  • To make the frosting:.
  • Cream together the cream cheese and butter until light, fluffy and pale yellow in color. Add the vanilla. Gradually add the powdered sugar, beating until creamy and smooth.
  • Line the edge of the cake plate with wax paper strips. [Tip: If storing the cake, place onto a cake round to make it easier to move from fridge to cake plate for serving] Frost the cake between the layers sprinkling each with reserved toasted pecan pieces.
  • Add the final layer and frost the top and sides. Finish the sides with toasted coconut. Decorate the top as desired with the remaining chopped pecans. Store chilled.

FILLING:
2-1/3 cups plain whole milk yogurt
1-2/3 cups sour cream
1/3 cup all-purpose flour
2 teaspoons vanilla extract
4 large egg whites, room temperature
3/4 cup sugar
Confectioners' sugar, optional

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. Beat in zest and vanilla. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture., Divide dough in half. Shape each into a disk; wrap. Refrigerate 1 portion and freeze 1 portion for 30 minutes., Preheat oven to 350°. On a lightly floured surface, roll refrigerated portion of dough to fit a greased 15x10x1-in. baking pan. Refrigerate while making filling., Meanwhile, for filling, in a large bowl, combine yogurt, sour cream, flour and vanilla. With clean beaters, beat egg whites on medium speed until soft peaks form. Gradually add granulated sugar, 1 tablespoon at a time, beating on high after each addition until sugar is dissolved. Continue beating until stiff glossy peaks form. Fold into yogurt mixture. Spread evenly over crust., Using a box grater, grate frozen dough portion over filling. Press lightly into filling. Bake until puffed and edges are light brown, 30-35 minutes. Cool completely on a wire rack. Cut into bars; if desired, sprinkle with confectioners' sugar. Refrigerate leftovers.

1 (8 ounce) package cream cheese, at room temperature
1/4 cup butter, softened at room temperature
1 tablespoon sour cream
1 teaspoon vanilla
1 (16 ounce) box powdered sugar, sifted

Steps:

  • Preheat the oven to 325 degrees F and grease and flour 3 (9-inch) cake pans.
  • In the bowl of an electric mixer cream the shortening, butter and sugar until light and fluffy. Add the egg yolks 1 at a time, beating well after each addition. Sift the flour and salt together onto a sheet of waxed or parchment paper. In a separate bowl, mix the buttermilk and baking soda together. With the mixer on low speed, add the sifted ingredients in batches alternately with the buttermilk mixture, beginning and ending with the dry ingredients.
  • In a separate bowl, beat the egg whites until stiff, and gently fold into the prepared batter. Add the vanilla. Divide the batter among the 3 prepared cake pans and bake for about 25 minutes, or until golden brown and a tester comes out clean when inserted into the middle of each cake. Allow the cakes to cool in the pans for about 10 minutes before turning them out onto a wire rack to finish cooling. When the cakes are completely cool, stack the layers with the frosting and frost the sides and top.
  • While the cake is baking, prepare the frosting. In a large bowl combine the cream cheese, butter, vanilla and sour cream, and, using an electric mixer, beat until smooth and creamy. Add the sifted powdered sugar and mix until thoroughly combined. Keep refrigerated until you are ready to frost the cake.

Steps:

  • Cake: Cream butter and shortening.

  • Add egg yolks and beat.

  • Fold in stiffly beaten egg whites.
  • Pour batter into well greased 13 x 9 x 2-inch baking pan.
