Gooey Gouda Puff-Pastry Bites image

These cheesy and easy four-ingredient appetizers will remind you of brie baked 'en croûte'-which is the French term for anything baked in pastry. Here, the delicious handheld parcels are made from storebought puff pastry and filled with nutty Gouda cheese. Topped off with a dollop of lingonberry jam for sweetness, they'll be the first to go on the buffet table!

Unbleached all-purpose flour, for dusting
1 sheet (about 14 ounces) all-butter puff pastry, thawed
2 tablespoons Dijon mustard
1/2 pound Gouda, rind removed, cut into 24 approximately 3/4-inch cubes
Lingonberry jam and freshly ground black pepper, for serving

Steps:

  • Preheat oven to 425°F. On a lightly floured surface, roll out pastry to an approximately 11-by-16-inch rectangle. Trim edges straight to a 10-by-15-inch rectangle. With the tines of a fork, prick pastry all over at 1/2-inch intervals. Cut into twenty-four 2 1/2-inch squares (a 4-by-6 grid). Press each square into the cup of a mini muffin tin. Spoon 1/4 teaspoon Dijon into bottom of each pastry shell. Refrigerate until pastry is firm, at least 15 minutes.
  • Bake until pastry cups are puffed, golden along edges, and beginning to set, about 15 minutes. Working quickly, remove from oven and press a cube of cheese into center of each pastry with the handle of a wooden spoon. (Cheese should depress pastry to reach bottom of cup.)
  • Continue baking until pastry is golden brown and cheese is melted, 8 to 10 minutes more. Let cool in tins a few minutes. Transfer to a serving tray, top with jam, and sprinkle with pepper. Serve warm.

Puff Pastry Bites with Caramelized Onions and Gouda image

Sweet, savory and perfectly bite-sized for entertaining, these puff pastry squares are filled with caramelized onions, Gouda cheese and fruit spread. Great for a holiday celebration....or for any regular old Saturday night.

Number Of Ingredients 8

1 sheet Puff Pastry ((about 10"x10" and 8 oz))
1 Tbsp Cooking Oil
1 medium Onion, halved and sliced
1 Tbsp Butter
1 tsp Brown Sugar
1/2 tsp Salt
1/4 cup Fruit Spread, jam or jelly ((any kind will work, but I used a triple berry fruit spread))
3 oz Gouda Cheese, grated

Steps:

  • Defrost puff pastry according to package directions. (Most need to defrost at room temperature for 40 minutes, until they can be easily rolled out.)
  • While puff pastry defrosts, caramelize onions (you can also do this up to a week ahead). Heat oil in a large saute pan over high heat. Add onions and stir to coat in oil. Cook onions over high heat until they start to soften and break down, ~5 minutes. Reduce heat to medium and continue to cook onions, stirring every few minutes, until deep golden brown, ~30 minutes more. (If onions appear dry while cooking, add an extra splash of oil.) Stir in butter, sugar and salt and continue cooking until sugar is fully dissolved.
  • Heat oven to 400 degrees F.
  • Spray a mini muffin tin (this makes 24 pastry bites, so bake in rounds if your mini muffin tin only has 12 spaces) with nonstick cooking spray. Slice puff pastry into 24 even squares.
  • Place one puff pastry square into each space in the mini muffin tin.
  • Fill each pastry square with 1/2 tsp fruit spread, 2 tsp of grated cheese and then 1 tsp caramelized onions (no need to be super precise about these measurements, just don't overfill the puff pastry because it will expand as it cooks).
  • Bake until pastry is golden brown and cheese is melted, 15 to 17 minutes.
  • Let pastry bites cool completely before serving. Enjoy!

Steps:

  • Unroll crescent dough into one long rectangle; seal seams and perforations. Sprinkle with garlic powder. Cut into 24 pieces; lightly press onto the bottom and up the sides of ungreased miniature muffin cups. , Bake at 375° for 3 minutes. Place a piece of cheese in each cup. Bake 8-10 minutes longer or until golden brown and cheese is melted. Serve warm.

Here's what you need: puff pastry, large goat cheese log, maple syrup, honey crystal, pecan, egg, water, turbinado sugar

1 package puff pastry, thawed
1 large goat cheese log, softened
¼ cup maple syrup
honey crystal, optional
pecan, or walnut, in pieces
1 egg
1 tablespoon water
turbinado sugar, for topping

Steps:

  • Remove 1 sheet of puff pastry from the package from the freezer and goat cheese log from the refrigerator. Allow to thaw for 25 minutes.
  • Preheat your oven to 400°F. Line your baking sheet with parchment paper. Set aside.
  • Unwrap pastry dough, place between two sheets of parchment paper and roll with a rolling pin until it is a 12" by 12" square.
  • Lather on goat cheese as you see above, then drizzle your honey, sprinkle on your crystals, and finish with your pecans or walnut pieces.
  • Cut into 8 1" strips, then, fold each strip in half, stretch it out slightly then twist to make your sticks.
  • Repeat 7 more times.
  • Combine your egg and water to make a wash. Using a brush, lightly coat the pastry dough then sprinkle over with the turbinado sugar.
  • Bake for 20 minutes.
  • Remove from the oven, allow to set for 3 minutes.
  • Serve warm.
