1 chocolate cake mix
3 eggs
1 cup water
1/3 cup vegetable oil
1 - 1 1/2 cups chocolate chips
1 1/2 cup chopped nuts

Steps:

  • Preheat oven to 350 degrees
  • Grease sides and bottom of a 9 x 13 glass baking dish. Flour lightly.
  • Blend cake mix, water, oil, and eggs in a large bowl at low speed until moistened. (about 30 seconds). Beat at medium speed for 2 minutes or until well blended.
  • Pour batter into pans.
  • Sprinkle cake top evenly with chocolate chips.
  • Sprinkle walnuts over entire cake.
  • Bake for 26-31 minutes. Cake is done when toothpick inserted in center comes out clean.
  • Cool in pan. Serve when cool. Cover to keep moist.

Steps:

  • Preheat oven to 190degrees celsius.
  • Cream butter and first batch of sugar. Add egg yolks in one by one and mix well.
  • In another bowl, whisk egg whites till foamy. Gradually add in the rest of the sugar and beat till stiff. Mix this into your butter mix.
  • Sift in flour, milk powder and baking powder.

There is a special little bakery in New York City called Levain Bakery that makes seriously decadent and massively huge cookies, which are the inspiration for these giant treats. These oversized cookies are chewy on the inside and crispy on the outside with chunks of chocolate and slightly sweet walnuts studded throughout. The key to making them so chewy is using only dark brown sugar and skipping the granulated stuff altogether. The molasses in brown sugar gives the cookies the most ideal chewiness and just the right amount of sweetness.

2 3/4 cups all-purpose flour
1 1/2 teaspoons kosher salt
1 teaspoon baking powder
1 teaspoon baking soda
2 1/2 sticks (1 1/4 cups) unsalted butter, at room temperature
1 3/4 cups packed dark brown sugar
2 large eggs
2 teaspoons pure vanilla extract
One 12-ounce bag semisweet chocolate chunks or chips
2 cups walnut halves, roughly chopped
1 tablespoon flaky sea salt

Steps:

  • Sift the flour, kosher salt, baking powder and baking soda together into a large bowl.
  • Beat the butter and brown sugar in another large bowl with an electric mixer on medium-high speed, scraping down the sides of the bowl as needed, until pale and fluffy, about 4 minutes. (Use the paddle attachment for a stand mixer.) Beat in the eggs one at a time, then beat in the vanilla. Reduce the mixer speed to low. Add the dry ingredients and beat until combined. Fold in the chocolate chunks and walnuts by hand.
  • Press plastic wrap directly onto the surface of the dough and refrigerate for at least 1 hour or up to overnight.
  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment.
  • Use a 2-ounce ice cream scoop to scoop half the dough onto the prepared baking sheets, spacing about 2 inches apart (you should have about 8 cookies, roughly 3 1/2-ounces each, per baking sheet). Sprinkle the flaky sea salt on top of the dough balls.
  • Bake, rotating the pans from top to bottom and front to back halfway through, until the cookies are golden around the edges but still soft in the middle, 18 to 20 minutes. Let them cool for 10 minutes on the baking sheets, then transfer to a wire rack to cool completely, about 30 minutes.
  • Store the cookies in a tightly sealed container at room temperature for up to 5 days.

Steps:

  • Preheat oven to 350°F. and butter and flour a 3-quart bundt pan, knocking out excess flour.
  • In a bowl whisk together flour, salt, and baking soda.
  • In another bowl with an electric mixer beat together butter and sugar until light and fluffy. Add eggs, 1 at a time, beating well after each addition, and beat in sour cream and vanilla until combined well. With mixer on low speed gradually beat in flour mixture until just combined.
  • Pour about half of batter into prepared pan and sprinkle about half of chocolate chips and walnuts over batter. Pour remaining batter over walnut mixture, spreading evenly, and sprinkle with remaining chocolate chips and walnuts. Bake cake in middle of oven 1 hour and 20 minutes, or until a tester comes out clean, and cool in pan on a rack 1 hour. Invert cake onto rack and cool completely.

4 bananas (organic, which tend t be smaller)
2 eggs
3/4 cup sugar (try turbinado, which has molasses)
1/2 cup applesauce (flavored OK)
1 teaspoon vanilla
1/2 teaspoon salt
1 1/3 cups whole wheat pastry flour (all-purpose OK)
1 teaspoon baking soda
1/4 cup mini chocolate chip
2/3 cup walnuts, chopped

Steps:

  • Mash bananas; push to side, leaving a space along bowl's side.
  • Beat eggs along empty side of bowl, then combine with bananas.
  • Stir in sugar, applesauce, vanilla and salt.
  • Shake lightly and evenly across surface of batter, the flour and soda; mix just enough to incorporate.
  • Stir in chocolate chips and walnuts. Go easy on chocolate chips because they can overwhelm the cake.
  • Pour into greased and floured 7"x11" pyrex glass baking dish (or muffin tins, bundt rounds, etc).
  • Bake 40 minutes at 350-degrees (less for muffins, etc.).
  • Frosting is unnecessary but cream cheese (8 oz) & butter (4 Tb) with any flavoring (any syrup, orange concentrate) is yummy.

Hmmmmmmmmmmm......I DO love cake, and this one in particular as you can vary the amount of chocolate or nuts, or even the type of nuts - go on - make your OWN version of this recipe. It's also rather unusual as it uses the 'rubbed in' method more usually associated with pastries. As written, this is a lovely 'English Tea Loaf' - you know, slice thin and serve with afternoon tea; but add more chocolate and nuts and it becomes an 'afternoon delight' that you'd be lucky to divide into 8 servings!

4 ripe bananas, peeled
250g caster sugar
2 eggs
140g softened butter
250g plain flour
2 tsp baking powder
100g walnut piece
100g chocolate chip

Steps:

  • Heat oven to 190C/170C fan/gas 5. Line a 900g/2lb loaf tin with baking parchment. In a large bowl, mash together the bananas and the sugar with the back of a fork. Add the eggs and mix well with an electric hand whisk until fully incorporated, then add the butter and mix for a couple mins more to blend everything together. Sieve in the flour and baking powder and fold together with a spatula, then add the walnuts and chocolate chips. Give everything one final mix before tipping into the lined loaf tin.
  • Bake for 1 hr 5 mins or until a skewer inserted into the middle comes out clean. Leave to cool slightly in the tin, then turn out and serve cut into thick slices, either warm or at room temperature. Any uneaten cake will keep in an airtight container for up to 3 days.
