Our Tomato Basil Squares recipe is one of the tastiest finger foods you'll ever eat, and it's easy to make. Bring this to a barbecue or picnic and watch it fly off the serving tray!

Number Of Ingredients 7

1 (12 oz.) pkg. refrigerated pizza dough
2 C. shredded mozzarella cheese, divided
1/4 C. grated Parmesan cheese
2 T. fresh chopped basil or 2 tsp dried basil
2/3 C. mayonnaise
1 clove garlic, crushed
4 plum tomatoes, thinly sliced

Steps:

  • Preheat oven to 375 degrees.
  • Place 1 (12 oz.) package refrigerated pizza dough on a greased cookie sheet and spread into a square. Add 1 C. shredded mozzarella cheese to dough square.
  • Chop 2 tablespoons fresh basil, or 2 teaspoons dried basil. Then mince 1 clove garlic.
  • Into bowl place chopped basil, 2/3 cup mayonnaise, 1/4 cup grated Parmesan cheese, 1 cup mozzarella cheese. and minced garlic. Mix well.
  • Thinly slice 4 plum tomatoes.
  • Place sliced tomatoes evenly across pizza dough.
  • Place mixture on top of tomatoes. Mixture will be thick, so placing in patches is fine.
  • Place in oven for 15 to 20 minutes or until topping is golden brown.
  • Remove from heat. Best if served warm. Enjoy!

This is one of my favorite Pampered Chef Recipes! I made this for my Aunt's Opera Reception (which was a fancy party), yet it was sooo easy and tasted wonderful! Everyone raved about how good it was... little did they know it just took minutes to throw together! Delicious!!!

1 (10 ounce) package prepared pizza crust
2 cups shredded mozzarella cheese, divided
1/4 cup fresh parmesan cheese, grated
2 tablespoons fresh basil or 2 teaspoons dried basil leaves
2/3 cup mayonnaise
1 garlic clove, pressed
4 plum tomatoes, thinly sliced

Steps:

  • Preheat oven to 375 degrees F.
  • Roll out pizza crust onto a rectangle baking stone (or cookie sheet if you don't have a stone).
  • Sprinkle crust with one cup Mozzarella cheese.
  • In a bowl, combine remaining Mozzarella cheese, basil, garlic and mayonnaise.
  • Mix well.
  • Place sliced tomatoes on top of pizza crust.
  • Spread mayonnaise mixture on top of tomatoes.
  • Top with grated Parmesan cheese.
  • Bake for 15-20 minutes or until top is golden brown and bubbly.

Stir-Fried Beef with Tomato and Basil image

10 ounces flank steak
4 teaspoons cornstarch, divided
5 teaspoons vegetable oil, divided
1/4 teaspoon salt
Dash white pepper
1 small white onion
2 medium tomatoes
12 leaves fresh basil
1 teaspoon minced garlic
2 tablespoons hoisin sauce

Steps:

  • Cut the beef lengthwise into thin 2-inch long strips. Toss the beef with 2 teaspoons cornstarch, 1 teaspoon vegetable oil, the salt, and pepper. Cover and refrigerate for 30 minutes.
  • Cut the onion into 1-inch squares. Cut the tomatoes into 8 wedges. Wash the basil and pat dry. In a small bowl, combine the remaining 2 teaspoons cornstarch and 1 tablespoon water and set aside.
  • Heat a nonstick skillet over high heat. Add the remaining 4 teaspoons vegetable oil, the beef, garlic, and onion and stir-fry for 1 minute, or until the meat browns. Continue stirring for about 2 minutes over high heat. Stir in the hoisin sauce and cornstarch mixture. As the mixture begins to thicken, after about 1 minute, add the tomatoes and basil, stir for 1 minute. Divide among plates and serve.

12 tablespoons unsalted butter, divided
3 cups peeled and 1/2-inch-diced boiling potatoes (4 potatoes)
12 extra-large eggs
22 ounces ricotta cheese
1 pound 2 ounces Gruyere cheese, grated
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 1/4 cups chopped fresh basil leaves
1/2 cup all-purpose flour
1 teaspoon baking powder

Steps:

  • Preheat the oven to 350 degrees F. Butter and flour a 12-by-18-by-1 1/2-inch half sheet pan.
  • Melt 4 tablespoons of the butter in a 12-inch saute pan over medium-low heat. Add the potatoes and fry them until cooked through, turning often, 10 to 15 minutes. Melt the remaining 8 tablespoons of butter in a small saute pan and set aside.
  • Meanwhile, whisk the eggs in a large bowl, then stir in the ricotta, Gruyere, melted butter, salt, pepper, and basil. Sprinkle on the flour and baking powder and stir into the egg mixture.
  • Distribute the potatoes over the bottom of the sheet pan. Pour the egg mixture over the potatoes and spread evenly. Bake the frittata until it is browned and puffed, 30 to 35 minutes. Allow the frittata to cool and cut into 20 single-serving squares.

¼ cup mayonnaise
¼ cup freshly grated Parmesan cheese
2 tablespoons chopped fresh basil
1 clove garlic, minced
3 roma (plum) tomatoes, sliced
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Roll out pizza dough, and place on a baking sheet. Mix mayonnaise, Parmesan, basil, and garlic in a small bowl. Spread mayonnaise mixture on pizza crust; top with sliced tomatoes. Sprinkle with mozzarella cheese.
  • Bake in preheated oven until crust is golden brown and cheese is bubbly, 15 to 20 minutes. Cut into squares to serve.

6 slices bacon, cooked,drained,crumbled
4 medium plum tomatoes, seeded and diced
1/3 cup diced green bell pepper
1/3 cup chopped onion
1 teaspoon dried basil or 1 tablespoon minced fresh basil
10 ounces homemade pizza dough or 10 ounces store-bought pizza dough
2 tablespoons mayonnaise
1 clove garlic, pressed
3/4 cup shredded swiss cheese
1 tablespoon cornmeal

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • Grease a 9x13" baking pan, then distribute the corn meal evenly over the bottom.
  • Combine bacon, tomatoes, bell pepper, onion, and basil in bowl and mix lightly.
  • Press the pizza crust into the greased pan so that it's an even thickness all around.
  • Mix mayonnaise with garlic, and spread over the crust.
  • Top evenly with bacon mixture, and then cover with the shredded cheese.
  • Bake 18-20 minutes or until the top is bubbly and crust is a deep golden brown.
  • Cut into 24 squares and serve.

1/2 lb. spaghetti, uncooked
1 lb. lean ground beef
1/2 cup each chopped green peppers and onions
1-3/4 cups CLASSICO Tomato and Basil Pasta Sauce, divided
6 oz. (3/4 of 8 oz. pkg.) PHILADELPHIA 1/3 Less Fat than Cream Cheese, softened
2 Tbsp. KRAFT Grated Parmesan Cheese
1 cup KRAFT Shredded Mozzarella Cheese with a TOUCH OF PHILADELPHIA
2 Tbsp. milk

Steps:

  • Heat oven to 350ºF.
  • Cook spaghetti in large saucepan as directed on package, omitting salt. Meanwhile, brown meat with peppers and onions in large nonstick skillet; drain. Stir in 1-1/2 cups pasta sauce.
  • Whisk Neufchatel, remaining pasta sauce and milk until smooth; set aside. Drain spaghetti; return to pan. Add half the Neufchatel mixture and Parmesan; toss to coat. Place in 8-inch square baking dish sprayed with cooking spray; press onto bottom of dish with back of spatula. Cover with layers of remaining Neufchatel mixture and meat sauce.
  • Bake 25 min. or until heated through. Top with mozzarella; bake 5 to 10 min. or until melted.

1/3 cup pitted Kalamata olives, slivered
1/4 cup drained oil-packed sun-dried tomatoes, chopped
1 tablespoon chopped fresh parsley

Steps:

  • Put oven rack in middle position and preheat oven to 400°F.
  • Spread 2 teaspoons pesto evenly on each slice of bread, then quarter each slice.
  • Toast bread squares on a baking sheet until undersides are golden, about 10 minutes.
  • Soak olives and tomatoes in warm water to cover 5 minutes, then drain well and toss with parsley. Mound on toasts.
