Chocolate Chip Cupcakes with Cookie Dough Frosting image

Decadent cupcakes topped with indulgent frosting - this is an extra special sweet treat the whole family will love!

2½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
¼ teaspoon kosher salt
1 cup unsalted butter, softened to room temperature ((2 sticks))
1½ cups packed light brown sugar
3 large eggs
1 cup milk
1 ½ teaspoons vanilla extract
1 cup semisweet chocolate chips
1 cup unsalted butter, softened to room temperature ((2 sticks))
¾ cup packed light brown sugar
3 cups powdered sugar
½ cup all-purpose flour
½ teaspoon kosher salt
2 Tablespoons milk
2 teaspoons vanilla extract
handful mini chocolate chips (for frosting decoration)

Steps:

  • Preheat oven to 350°. Prepare muffin/cupcake tins with cupcake liners and set aside.
  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a stand mixer with the paddle attachment, or in a large bowl using a hand mixer, cream the butter and brown sugar until creamy and well blended, about 3 to 4 minutes.
  • Slowly add the eggs, one at a time, to the butter sugar mixture, beating well after each addition. Scrape down the sides of the bowl with a spatula as needed.
  • Add in the vanilla, and mix on low or medium-low for about 30 seconds.
  • With the mixer on low speed, alternate adding the dry ingredients and milk. First, add half of the dry ingredients to the wet ingredients. Then slowly pour in half of the milk. Add in the remaining half of the dry ingredients, then slowly add the remaining milk, and continue mixing just until all ingredients are well-incorporated.
  • Using a spatula, gently fold in the chocolate chips.
  • Divide the batter evenly between 15 cupcake liners.
  • Bake for 17-20 minutes at 350°F, until a toothpick inserted in the center comes out almost clean. Allow to cool in the pan for 5-10 minutes, then transfer to a wire rack to cool completely.
  • In a stand mixer with the paddle attachment or in a large bowl using a hand mixer, beat the butter and brown sugar on medium-high speed until smooth, creamy and fluffy. This takes about 3 to 4 minutes.
  • Add in the powdered sugar one cup at a time, and then the flour and salt.
  • Pour in the milk and vanilla extract until smooth and combined.
  • Spoon the frosting into a pastry bag fitted with a star tip.
  • Decorate your cupcakes with the cookie dough frosting, then sprinkle with mini chocolate chips.

Steps:

  • Beat brown sugar and butter together in a bowl using an electric mixer on medium speed until smooth and creamy. Beat flour, vanilla extract, and salt into creamed butter until combined. Slowly mix cream into butter mixture until desired consistency is reached; fold in chocolate chips.

2 teaspoons vanilla extract
1 cup chocolate chips (semisweet or bittersweet)
4 tablespoons unsalted butter, at room temperature
6 tablespoons light brown sugar, packed
1 cup all-purpose flour
2 tablespoons all-purpose flour
7 ounces sweetened condensed milk
1/2 teaspoon vanilla extract
1/4 cup miniature semisweet chocolate chips
1 1/2 cups unsalted butter, at room temperature
3/4 cup light brown sugar, packed
3 1/2 cups confectioners' sugar
1 cup all-purpose flour
3/4 teaspoon salt
3 tablespoons milk
2 1/2 teaspoons vanilla extract

Steps:

  • To make the cupcakes, preheat the oven to 350°F Line two cupcake pans with paper liners (24 total). In the bowl of a stand mixer fitted with the paddle attachment, combine the butter and brown sugar. Beat together on medium-high speed until light and fluffy, about 3 minutes. Mix in the eggs one at a time, beating well after each addition and scraping down the sides of the bowl as needed.
  • Combine the flour, baking powder, baking soda, and salt in a medium bowl. Stir together to blend. Add the dry ingredients to the mixer bowl on low speed, alternating with the milk, beginning and ending with the dry ingredients, mixing each addition just until incorporated. Blend in the vanilla. Fold in the chocolate chips with a spatula.
  • Divide the batter evenly between the prepared cupcake liners. Bake for 18-20 minutes, until a toothpick inserted in the center comes out clean. Allow to cool in the pan 5-10 minutes, then transfer to a wire rack to cool completely.
  • To make the cookie dough filling, combine the butter and sugar in a mixing bowl and cream on medium-high speed until light and fluffy, about 2 minutes. Beat in the flour, sweetened condensed milk and vanilla until incorporated and smooth. Stir in the chocolate chips. Cover with plastic wrap and refrigerate until the mixture has firmed up a bit, about an hour.
  • To fill the cupcakes, cut a cone-shaped portion out of the center of each cupcake. Fill each hole with a chunk of the chilled cookie dough mixture.
  • To make the frosting, beat together the butter and brown sugar in the bowl of a stand mixer fitted with the paddle attachment until creamy. Mix in the confectioners' sugar until smooth. Beat in the flour and salt. Mix in the milk and vanilla extract until smooth and well blended.
  • Frost the filled cupcakes as desired, sprinkling with mini chocolate chips for decoration.

1 (18 1/4 ounce) package yellow cake mix
1 (3 1/2 ounce) package vanilla instant pudding mix
1 cup whole milk
1 cup vegetable oil
4 large eggs, at room temperature
1 teaspoon vanilla extract
1 (1 lb) package frozen refrigerated chocolate chip cookie dough
frosting, of choice for decorating

Steps:

  • Heat oven to 350*F. Grease 24 muffin pan molds or line with paper liners.
  • Combine the cake mix, pudding mix, milk, oil, eggs, and vanilla in a large bowl; blend with an electric mixer on low speed for 30 seconds. Scrape down sides of bowl.
  • Increase mixer speed to medium and blend another 2 minutes, scraping down bowl as needed.
  • Scoop a heaping 1/4 cup batter into each cupcake well, filling at least 2/3 full. (you should get between 22 and 24 cupcakes; remove any empty paper liners).
  • Cut the frozen cookie dough pieces in half to make 24 pieces (or enough for how many cupcakes you wind up with); place a dough chunk on top of each cupcake.
  • Bake until cakes are golden and spring back when lightly touched, 23-37 minutes.
  • Cool on wire racks for 5 minutes, then carefully remove cupcakes from pans and cool another 15 minutes before frosting (they may sink a bit in the center). Serve warm.
  • Store cupcakes in a cake server at room temperature for up to 3 days or up to 1 week in the refrigerator. Bring to room temperature and then microwave for about 8 seconds to "re-goo" the texture.
