1 ⅛ cups all-purpose flour
½ teaspoon baking soda
½ cup butter, softened
½ cup turbinado sugar
½ cup packed brown sugar
1 egg, lightly beaten
1 ½ teaspoons vanilla extract
¼ teaspoon salt
1 cup chocolate chips
1 cup chopped dried apricots

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a cookie sheet.
  • Mix the flour and baking soda in a bowl. In a separate bowl, beat together the butter, turbinado sugar, and brown sugar until fluffy, then beat in the egg, vanilla, and salt. Stir the flour and baking soda into the butter mixture. Fold in the chocolate chips and apricots. Drop by rounded teaspoonfuls onto the cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Good old-fashioned chocolate chunk cookies are always a hit. Kids love these, and they make a great treat to pop in school lunchboxes or to munch on a road trip.

125 g butter (cubed and softened (but not melted))
⅓ cup soft brown sugar (lightly packed)
⅓ cup caster sugar
1 egg
2 teaspoons vanilla essence or extract
1 cup plain flour
¾ teaspoon baking powder
¼ teaspoon salt
1 cup wholegrain oats
½ cup threaded coconut
⅓ cup dried apricots (roughly chopped)
100 g good-quality milk or dark chocolate (I used Whittaker's 50% cocoa solids, roughly chopped)

Steps:

  • Preheat the oven to 180°C. Line two trays with baking paper.
  • Beat butter, brown sugar and caster sugar in a large bowl until pale and fluffy (if you have a handheld electric beater or cake mixer, this will make it easier).
  • Add the egg and vanilla and continue to beat until well combined.
  • Sift in the flour, baking powder and salt and mix lightly, then add the oats and coconut. Fold through apricots and chocolate until evenly combined.
  • Roll balls of mixture (just smaller than a golf ball) and place 3cm apart on baking trays. Press down slightly.
  • Bake for 18-20 minutes until the edges are golden but the inside is still slightly soft. Swap trays over halfway through baking to ensure even cooking. Remove cookies from oven and allow to cool for about 5 minutes before transferring to a wire rack to cool completely.

½ cup brown sugar
2 eggs (or equiv. egg replacer)
1 teaspoon vanilla essence
1 ½ cups plain flour
½ teaspoon baking powder
½ cup rolled oats
½ cup milk or dark choc bits
½ cup dried apricots (diced)

Steps:

  • Pre-heat oven to 180ºC.
  • Cream butter and sugar in a mixing bowl until light and fluffy. Add egg and vanilla essence and beat well.
  • Sift in flour and baking powder. Add rolled oats and combine with a wooden spoon. Once combined, stir in choc bits and apricots.
  • Divide dough equally into small balls (roughly teaspoon-sized balls make around 24 small cookies, roughly tablespoon-sized balls will make around 16). Place onto a baking tray lined with baking paper and press down lightly with a fork to flatten.
  • Bake for 15 minutes, until just turning golden. Leave to cool on a wire rack.

1/2 cup butter or margarine, softened
1/4 teaspoon orange extract
1 egg

1 package (12 oz) dark chocolate chips

Steps:

  • Heat oven to 375°F. Line cookie sheet with Reynolds Parchment Paper; set aside. In large bowl, stir cookie mix, butter, orange extract and egg until soft dough forms. Stir in apricots until blended.
  • Drop dough by rounded teaspoonfuls 2 inches apart on lined cookie sheet.
  • Bake 8 to 10 minutes or until edges are light golden brown. Cool 3 minutes; remove from cookie sheet to wire rack. Cool completely, about 15 minutes.

150g butter, at room temperature
100g golden caster sugar
50g light muscovado sugar
1 egg
1 tsp vanilla extract
1 tbsp milk
220g self-raising flour
150g white chocolate, roughly chopped
100g dried apricots, snipped into pieces

Steps:

  • Heat the oven to 190C/fan 170C/gas 5. Beat the butter and sugars together until the mixture is light and creamy, then beat in the egg and add the vanilla extract and the milk. Mix the flour into the mixture to make a stiff dough, then add 100g of the chocolate and apricots and work them in.
  • Line a baking sheet with baking paper or a silicone baking mat, scoop out the cookie dough in tablespoons and roll each into a ball. Sit these about 8cm apart as they will spread out as they cook. Press a fork onto each ball to flatten it out slightly. Bake for 10 minutes, or until the cookies are golden but not brown, rest them for a couple of minutes before lifting them off the tray onto a rack to cool. Repeat with the remaining mixture.
  • Melt the remaining chocolate and drizzle it back and forth over the cookies.

  • Whisk together the flour, baking soda and salt in a medium bowl. Add the flour mixture to the butter mixture and beat until just combined. Stir in the chocolate chips and dried apricots.
  • Line 2 baking sheets with parchment paper. Scoop slightly mounded tablespoons of the dough and roll into balls. Arrange the balls about 2 inches apart on the prepared baking sheets and refrigerate for 30 minutes.

Steps:

  • Make apricot filling:
  • In a 1 1/2-quart heavy saucepan combine apricots, granulated sugar, and water and simmer, covered, 15 minutes. Remove lid and simmer mixture, stirring and mashing apricots, until excess liquid is evaporated and filling is thickened. Stir in vanilla.
  • Preheat oven to 350°F. and grease and flour an 8-inch-square baking pan, knocking out excess flour.
  • Make chocolate chip mixture:
  • In a shallow baking pan toast pecans in middle of oven until golden brown, 8 to 10 minutes, and cool. In a food processor pulse pecans, flour, brown sugar, and salt until pecans are coarsely chopped. Add chocolate chips and butter and pulse until pecan mixture resembles coarse crumbs.
  • Press about half of chocolate chip mixture onto bottom of prepared baking pan and spread evenly with apricot filling. Crumble remaining chocolate chip mixture evenly over apricot filling, pressing it down slightly, and bake confection in middle of oven 1 hour, or until golden. Cool confection completely in pan on a rack. Sprinkle confection with confectioners' sugar and cut into 16 bars.
