CHOCOLATE AND DULCE DE LECHE CARAMEL SWIRLED COOKIES

- Center a rack in the oven and preheat the oven to 350 (F). Prepare your cookie trays by lining with parchment paper or a Silpat mat.
- Place 10 ounces finely chopped semisweet chocolate in a double boiler over medium heat (or, in a heatproof bowl over a saucepan of very hot water, with the bottom of the bowl NOT touching the water). Use a rubber spatula to stir the chocolate occasionally until it is melted and smooth. Once the chocolate is completely melted, remove heat and allow to cool for 5 to 10 minutes as you go through the other recipe steps.
- In a medium bowl, whisk together 1/2 cup plus 2 tablespoons all-purpose flour, 1/2 tablespoon plus 1/2 teaspoon unsweetened cocoa powder, 1/4 teaspoon baking powder and 1/4 teaspoon kosher salt.
- In the bowl of a freestanding electric mixer fitted with a paddle attachment, combine 5 tablespoons unsalted butter and 1 cup plus 2 tablespoons granulated sugar. Beat together on medium-high speed until well combined and the mixture has turned light and fluffy, around 5 minutes.
- Once the mixture is light and fluffy, slow the mixer to its lowest setting and add 3 eggs, one at a time, only adding the next egg until the previous egg before it has been fully incorporated into the batter. Once all the eggs have been added, scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium-high and beat for another 2 to 3 minutes until the mixture is very light, creamy, and pale in color.
- Once the mixture is light and cream, lower the mixer to its lowest setting and add the slightly cooled melted chocolate (from the 2nd step) and 1/2 tablespoon vanilla extract and mix until just combined and the batter is a uniform chocolate color.
- Remove the bowl from the mixer and sprinkle the dry ingredients (from the 3rd step) evenly over the surface of the chocolate mixture, before folding them in using a rubber spatula. BE CAREFUL NOT TO OVERWORK THE BATTER AFTER YOU ADD THE FLOUR, or your cookies will be tough and I will cry for you. Simply fold until the dry ingredients have just been incorporated - it's okay to have one or two flour streaks left.
- Once the flour mixture has been incorporated, fold in 1 cup milk chocolate chips and stir until just evenly dispersed.
- Once the chocolate chips have been folded in, drizzle some of the 1/2 cup of dulce de leche caramel on top of the batter - DO NOT MIX IN. Unmixed dulce de leche drizzle is what gives the cookies their interesting swirls. Use a 2-tablespoon sized cookie dough scoop to portion out the cookies as soon as you finish making the batter. The batter will be very soft at first, but it firms up quickly as it sits so act fast. Scoop each portion onto the parchment lined baking sheets, placing them about 2 inches apart. Continue drizzling dulce de leche over the batter before scooping until all the dulce de leche is used.
- Bake the cookies in the preheated oven until they are cracked all over the tops and softly set, about 14 to 16 minutes. Remove the pans from the oven and cool on a wire rack. Allow the cookies to cool completely before removing them from the baking sheets with a metal spatula.
DULCE DE LECHE BROWNIES
These heavenly caramel-swirled brownies are the perfect wrap-up to your Cinco de Mayo celebration.

- Preheat the oven to 325°F. Generously spray an 8-inch square baking pan or an 8x10-inch baking pan with nonstick baking spray.
- Place the chocolate in a microwave-safe bowl and nuke it in about 45-second intervals, stirring each time, until it's completely melted. Set it aside to cool for 20 minutes or so.
- Add the butter and the sugar to the bowl of an electric mixer fitted with the paddle attachment and cream them together until they're light and fluffy.
- Add the eggs, one at a time, beating well after each addition.
- With the mixer on low, slowly drizzle in the chocolate until it's all combined. Add the flour and the vanilla. And mix until it's all combined, scraping the sides of the bowl halfway through.
- Spread the batter into the greased pan.
- Next, crack open the can of dulce de leche and place half of it in a glass bowl. Warm it in the microwave for 30 to 45 seconds, just to make it a little more stirrable.
- Drop large dollops of dulce de leche on the surface of the batter then use a knife to slowly swirl it through the brownie batter. Don't drag the knife sideways through the batter; hold it so the thin side of the knife leads the way.
- Bake the brownies for 45 to 50 minutes, or until the center is almost totally set.
- Let the brownies cool in the pan for 15 minutes then use a very sharp serrated knife to cut the brownies into squares and place them on a pretty cake stand.
DULCE DE LECHE BROWNIES

- Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking pan with cooking spray.
- Place butter in the top of a double boiler over simmering water. Stir until melted. Add chocolate and stir until melted and combined. Remove from heat.
- Stir white sugar, brown sugar, flour, cocoa powder, vanilla extract, and salt into the melted chocolate mixture. Stir in eggs with a spoon or spatula until just combined; try not to use more than 30 or 40 strokes.
- Pour a little over 1/2 of the brownie batter into the prepared pan. Drop small spoonfuls of the dulce de leche evenly over the top. Gently drag a knife through the dulce de leche to create swirls. Cover with remaining brownie batter. Drizzle caramel on top in a swirling pattern.
- Bake in the preheated oven until edges start pulling away from the sides of the pan, 25 to 30 minutes. Let the brownies cool completely before cutting them into squares.

- Make shortbread crust:
- Preheat oven to 375°F with rack in middle. Butter a shallow 9- to 9 1/2-inch square baking pan (1 to 1 1/2 inches deep). Line bottom and 2 sides with parchment paper, leaving an overhang. Butter parchment.
- Blend together butter, brown sugar, vanilla, and salt in a bowl with a fork. Sift in flour and blend with fork until a soft dough forms.
- Spread dough evenly in baking pan using an offset spatula or back of a spoon, then prick all over with fork.
- Bake until golden, 15 to 20 minutes, then cool completely in pan on a rack, about 30 minutes.
- Make chocolate dulce de leche:
- Bring cream and dulce de leche to a simmer in a small heavy saucepan, stirring with a wooden spoon until dulce de leche has dissolved.
- Whisk together yolks in a bowl, then slowly whisk in hot cream mixture. Return to pan and cook over medium heat, stirring constantly, until pan is visible in tracks of spoon and mixture registers 170°F on an instant-read thermometer. Remove from heat and whisk in chocolate until melted.
- Make bars:
- Pour chocolate mixture over cooled shortbread and chill, uncovered, until cold and set, about 2 hours.
- Run a small knife around edges to loosen, then transfer to a cutting board using parchment. Cut with a hot clean knife (dip in hot water and wipe clean between cuts) into 24 bars. Chill until ready to serve.

- Preheat the oven to 350 degrees F. Finely grind the hazelnuts in a food processor. Spread on a baking sheet; bake until golden, 12 minutes.
- Whisk the flour, cornstarch, 1/3 cup of the ground hazelnuts, the baking powder, baking soda and salt in a bowl; set aside. Beat the butter and granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 3 minutes. Add the egg yolks, liqueur and vanilla; beat until incorporated. Reduce the mixer speed to low; add the flour mixture and beat until just combined. Turn onto a sheet of plastic wrap; shape into a disk. Wrap and refrigerate until firm, at least 1 hour.
- Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Dust the dough with flour and roll out into a 6-by-12-inch rectangle (1/4 inch thick) on a floured surface. Cut into 1 1/2-inch squares; arrange 1/2 inch apart on the baking sheets. Cut out circles from the middle of half of the squares using a small cutter. Refrigerate until firm, 15 minutes.
- Bake, switching the pans halfway through, until the cookies are golden on the bottom, 12 to 14 minutes. Let cool 5 minutes, then transfer to racks to cool completely. Stir together the dulce de leche and the remaining ground hazelnuts. Sandwich between the plain and cut-out cookies. Dust with confectioners' sugar.

- Lightly grease a 26 x 36cm baking tray with a substantial rim and line with baking parchment. Heat oven to 180C/160C fan/gas 4.
- To make the filling, put all the ingredients in a small saucepan and bring to the boil over a medium heat, whisking to dissolve the sugar and prevent lumps. Pour into a small container, cover with cling film and place in the fridge for a few hrs or until fully chilled.
- Put the eggs and caster sugar in a large bowl and use an electric whisk to whisk for 5-8 mins or until the mixture has tripled in volume and holds a ribbon on the surface when the beaters are lifted from the bowl. In a separate bowl, mix together the cocoa powder, oat flour and a pinch of salt. Working in three additions, carefully sieve the dry ingredients over the egg mixture and carefully fold in, keeping the mixture light and airy. Carefully pour the batter onto the prepared tray and gently level out to an even layer.
- Bake for 12-14 mins or until the cake springs back when lightly pressed. Remove from the oven and carefully slip the cake and parchment onto a wire rack to cool (unlike other roll cakes, this one isn't pre-rolled as it is more likely to crack).
- Once the cake is at room temperature, confidently turn over in one motion onto a piece of parchment sprinkled lightly with caster sugar, then peel off the lining parchment.
- Whisk the spiced cream filling until it holds soft peaks, then spread to an even layer, leaving 2cm along the short edge clear. Spoon the dulce de leche randomly all over the filling and use a knife or a spoon to swirl together.
- Carefully roll the cake, using the parchment underneath to help, making sure the uncovered sponge edge is at the end of the roll. Don't worry if the cake splits a little, this is to be expected. Dust the cake with a thin layer of icing sugar and carefully lift onto a serving plate. To finish, drizzle the cake with the white chocolate. As this cake is made with very little fat, it is best served on the day it is made, as it will dry out more quickly.
