BASIC FLAXSEED BREAD (FLAX SEED BREAD)
From Fleischmann's Yeast "Bake for the Cure" recipes. What I like about this recipe is that it can be made into a French Bread-like loaf. Should you want to use regular active dry yeast, proof first and adjust rise times. (Note: I found with the fast rising yeast it took an exhorbitant amount of time to achieve the correct amount of rise. I prefer using regular active dry yeast with the proofing method in warm water and a normal rise time.)

- In a large bowl, mix dry ingredients. Stir in the warm water, honey and olive oil until it forms soft dough. Turn out dough onto a floured surface, add more flour if dough is too sticky and knead dough for 5 minutes until smooth and elastic. Cover and let rise for 20 minutes in a warm place.
- On a floured surface cut dough in half. Roll dough to form a French bread like loaf. Place on a baking sheet lined with nonstick liner. Lightly flour the bottom of loaf and place on liner. Cover again with clean towel and let rise for about 30 minutes. I found this took much longer for me.
- Preheat oven to 375 degrees F. Bake loaves for 30 minutes or until sounds hollow when tapped on bottom.

FLAX POPPY SEED BREAD RECIPE

- In a large bowl, in the bowl of a stand mixer fitted with a dough hook whisk together with flour, instant yeast, granulated sugar, salt and baking powder. With the mixer on medium-low speed, slowly pour in the warm water. Once all the water has been added, increase speed to medium and knead until a smooth, soft dough forms and begins to pull away for the sides of the bowl, about 6 minutes. Form the dough into a round and place into a large, lightly oiled bowl and turn to lightly coat on all sides. Cover with plastic wrap and set at warm room temperature to rise until doubled in size, about 1 hour. Using a bit of the melted butter, brush the inside and sides of a ring mold or an 8-inch cake pan. Gently deflate the risen dough and form into a 7-inch round. If making a ring, make a hole in the center and fit into a ring pan. To make a boule, shape the dough into a 7-inch round and place in cake pan. Brush top and sides of dough with butter, you may not use all the remaining butter. Sprinkles with seed mixture and set the dough aside to rise at warm room temperature until the dough fills the pan and has risen over the top of the pan 1-2 inches, about 30-45 minutes. Preheat oven to 375°F. Bake bread in preheated oven for 40 minutes and well browned. Remove loaf from oven and from pan. Cool completely on a wire rack.

HEARTY MULTIGRAIN SEEDED BREAD
This is a very nice, light textured multigrain bread that uses many different grains and seeds and very easy to make if you have a food processor. I used my Ninja® with the plastic blade attachment.

Steps:
- Mix warm water and sugar together in a bowl until sugar is dissolved; stir in yeast. Set aside until a creamy foam starts to form, about 5 minutes.
- Combine bread flour, whole wheat flour, coconut oil, and salt in a food processor; pulse 4 times. Add chia seeds, wheat germ, flax seeds, millet, 1 tablespoon hemp seeds, 1 tablespoon sunflower seeds, and 1 tablespoon oats; pulse until incorporated.
- Pour yeast mixture over flour mixture in the food processor; process until a dough ball forms, about 1 minute.
- Turn dough into a well-oiled large bowl and cover with a damp towel; allow to rise in a warm area until doubled in size, about 1 hour.
- Punch dough down and knead a few times. Form dough into an oblong shape and place in a greased bread pan. Lightly press the remaining hemp seeds, sunflower seeds, and oats onto the loaf. Cover with a damp towel and let rise in a warm area for 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake in the preheated oven until cooked through and crust is lightly browned, about 30 minutes. Cool bread in the pan for 5 minutes before transferring to a wire rack to cool completely.

- In a large bowl, combine the whole wheat flour, 1 cup all-purpose flour, yeast and salt. In a large saucepan, heat the milk, brown sugar, honey and 2 tablespoons butter to 120°-130°. FLAX SEED CRACKER BREAD

- Heat oven to 375°F.
- Combine whole wheat flour, flour, sugar, baking powder, baking soda and salt in large bowl.
- Mix in butter or margarine with fork until mixture resembles coarse crumbs.
- Add buttermilk; stir just until flour is moistened.
- Stir in flax seed.
- Place dough on lightly floured surface; knead 3 to 5 times until smooth.
- Divide dough in half.
- Roll out each half with floured rolling pin or pat each half with floured fingers into 13x11" rectangle on greased baking sheets.
- Prick all over with fork.
- Bake for 12-15 minutes or until golden brown.
- Cool completely.
- Break into pieces.
- *Tip: Flax seeds, when used as whole seeds, add texture to foods. Ground seeds give the most nutritional benefit and are a primary source or omega-3 and omega-6 fatty acids.

I saw flax seed at the grocery and bought it without any idea of what to do with it. I found out that flax seed contributes fiber and omega-3s to the diet. Even better, it made this delightful, speckled loaf with a nutty flavor. Wonderful as is or toasted.

- Place ingredients in your bread machine as directed by your manufacturer.
- Set to dough cycle. Check the consistency after about 10 minutes - if it looks dry, add a little more water.
- After initial rise, remove, shape in a large round loaf (or whatever you like), let rise again on a cornmeal dusted baking pan.
- Preheat oven to 400 deg. If desired, brush loaf with an egg wash (one egg beaten with 1 tbl. cold water). Slash loaf with sharp knife. Place in oven. After 15 min., reduce temperature to 350 deg.
- Bake for an additional 25 minutes or until loaf is done - an instant thermometer should read 205 deg.
- Turn onto cooling rack and let cool.
- Note: If using flax seed, 2/3 cups seed will grind into 1 cup flax meal.
- Note2: If using egg wash, you may also sprinkle loaf with whole flax or poppy seeds.
MULTI-GRAIN BREAD WITH SESAME, FLAX AND POPPY SEEDS

- Place cereal in large bowl. Pour 2 cups boiling water over. Let stand until mixture cools to between 105°F. and 115°F., about 20 minutes.
- Sprinkle yeast over cereal. Add 1 cup bread flour, oil, sugar and salt and stir until smooth. Gradually mix in enough remaining bread flour to form dough. Cover dough; let rest 15 minutes.
- Turn out dough onto floured surface. Knead until smooth and elastic, adding more flour if sticky, about 10 minutes. Oil large bowl. Add dough to bowl; turn to coat. Cover bowl with clean kitchen towel. Let dough rise in warm area until doubled, about 1 hour.
- Mix all seeds in bowl. Punch down dough. Turn out onto lightly oiled surface. Knead briefly. Shape into 12x4-inch loaf.Sprinkle baking sheet with 2 teaspoons seeds. Place loaf atop seeds. Cover with towel. Let rise in warm area until almost doubled, about 30 minutes.
- Position 1 oven rack in center and 1 just below center in oven. Place baking pan on lower rack and preheat oven to 425°F. Brush loaf with water. Sprinkle with remaining seed mixture. Using sharp knife, cut 3 diagonal slashes in surface of loaf. Place baking sheet with loaf in oven. Immediately pour 2 cups water into hot pan on lower rack in oven (water will steam).
- Bake loaf until golden and crusty and tester inserted into center comes out clean, about 35 minutes. Transfer to rack and cool.(Can be made 1 day ahead. Wrap in plastic; store at room temperature.)

SESAME-SUNFLOWER-POPPY-FLAX SEED BUTTERMILK BREAD!

- In a small bowl, dissolve the yeast and sugar in the warm water.

- Bake at 375 degrees F for about 30 minutes or until the tops are brown and the bottom of a loaf sounds hollow when tapped.
- Makes 2 loaves.
