1/2 cup bittersweet chocolate chips
6 tablespoons heavy whipping cream, divided
3/4 cup mascarpone cheese
3 tablespoons amaretto
2 tablespoons sugar
8 1/2-inch-thick angel food cake slices
24 1/3-inch-thick diagonal banana slices (from about 3 bananas)
1/3 cup (about) sliced almonds, toasted

Steps:

Heat chocolate chips and 4 tablespoons cream in microwave in 1-cup glass measuring cup at 50 percent power just until chocolate is melted, about 30 to 35 seconds. Stir to blend; cool chocolate sauce to lukewarm. Whisk mascarpone, amaretto, sugar, and remaining 2 tablespoons cream in medium bowl until blended and mixture just starts to thicken.
Using 2 1/2-inch-diameter cookie cutter, cut out round from each angel food cake slice. Place 1 cake round in each of 4 wine goblets or old-fashioned glasses. Top each cake round with 3 banana slices, 1 heaping tablespoon mascarpone mixture, bittersweet chocolate sauce, and sprinkling of almonds. Repeat parfait layering 1 more time and serve.

¾ cup chocolate chips
1 teaspoon coconut oil
8 ounces honey-roasted almonds

Steps:

Set a pot of water over medium heat and bring to a boil. Add a double boiler to the top of the pot and lower heat to a simmer.
Add chocolate and coconut oil to the double boiler. Stir until chocolate is melted.
Place a drip rack over a parchment-lined pan. Place almonds on top of the drip rack. Pour chocolate over the almonds. Allow chocolate to dry.
Once dry, store almonds in a resealable container.

25 g chocolate
1 egg
25 g icing sugar
75 ml double cream
3 drops vanilla extract
8 almonds
biscuit
chocolate syrup
raspberries

Steps:

Line 2 ramekins with clingfilm. Melt the chocolate and set aside.
Whisk the egg white until stiff. Add the icing sugar a teaspoon at a time (whisking between each addition, until stiff again).
Whisk the cream and vanilla until the cream starts to hold its shape. Stir in the yolk, chocolate, and nuts, until evenly blended.
Fold in the egg white and divide between the ramekins. If you have any mixture left over, make an extra one. Freeze the ramekins for at least 3 hours.
Turn out and serve with almond thins, chocolate sauce, and raspberries.
