Steps:
- Sprinkle each chicken thigh with salt and pepper then dredge in flour. Heat oil over medium-high heat in a large skillet and cook for about 4 to 5 minutes on each side or until chicken is golden-brown (it doesn't need to be completely cooked through). Transfer chicken to a plate and set aside. In the same skillet, sauté peppers, onion, and garlic until onions become soft and transparent. Reduce heat and slowly add marinara/spaghetti sauce to the skillet. Add chicken back to the skillet and bring sauce to a simmer over medium-low heat. Simmer for about 25 minutes or until chicken thighs are cooked through. Before serving, top with mozzarella (optional) and fresh basil.
EASY CHICKEN CACCIATORE

- In a large skillet, heat italian dressing. Add onion, bell pepper, and chicken. Mix well to combine, and cook over moderate heat for approximately 6 minutes, stirring occasionally.
- In a small bowl, combine italian seasoning, sugar, and undrained stewed tomatoes. Spoon this over the chicken evenly, and lower heat so chicken is just simmering. Simmer for about 12-14 minutes, stirring occasionally. When chicken is fork-tender, it is ready to be served over hot noodles.

Steps:
- Season the chicken breasts on both sides with salt and pepper.
- Heat 1 tablespoon of the oil in a large nonstick skillet over medium high heat.
- Place 4 pieces of the chicken in the skillet and sear until until golden-brown, about 1-3 minutes on each side. Transfer the chicken to a plate and repeat searing with the remaining chicken pieces. Set aside.
- Heat 1 tablespoon of oil in the empty skillet.
- Add the mushrooms and stir occasionally until most of the moisture has evaporated from the pan, about 8 minutes.
- Transfer the mushrooms to a plate and set aside.
- Heat the remaining 1 tablespoon of oil in the pan.
- Add the onions and bell peppers and season with salt and pepper. Stir occasionally until the onions and peppers have softened, about 2 minutes.
- Add in the garlic and rosemary and stir until the garlic is fragrant.
- Add in the tomatoes, red wine, and broth and stir until the sauce has thickened slightly.
- Add the mushrooms and chicken back into the sauce and bring to a low simmer.
- Cover and let cook until the chicken registers 165°F (74°C), about 5-8 minutes.
- Serve topped with basil.

Not sure where I found this recipe, but it's tasty and easy! Note: if you use canned tomatoes (instead of tomato sauce), I'd recommend adding a little more flavoring - personally I like extra garlic, bay leaf, and/or basil. Also, I used tenderloins (which are smaller than breasts), so the cooking time would be shorter to avoid drying out the chicken.

- In a large skillet, heat oil; add the chicken and mushrooms. Cook over medium-low heat until golden, about 3 minutes per side.
- Add the garlic, salt and pepper to taste; stir until blended. Transfer the chicken and mushrooms to a side dish.
- Add the wine to the skillet. Increase the heat to high and boil the wine, scraping up any browned pieces from the bottom of the skillet, until reduced to a thin film.
- Add the tomatoes and heat to boiling, breaking the whole tomatoes into pieces with the side of a wooden spoon or spatula.
- Return the chicken, mushrooms, and any juices to the skillet. Add the dried oregano (if using fresh, add later). Bring to a gentle simmer over medium-low heat, stirring occasionally; cover and cook until the chicken is cooked through, about 8 minutes. Add salt and pepper to taste.
- If chicken is done, but sauce is too thin for your liking: Transfer the chicken to a side dish. Boil the tomato sauce over high heat, stirring occasionally, until slightly thickened. Then return chicken to skillet.
- Sprinkle with parsley and serve immediately.

I found this recipe on the back of a Del Monte Spaghetti Sauce can and it turned out delicious. The kids enjoyed theirs over spaghetti noodles while my DH and I ate it over brown rice. I also sprinkled some red pepper flakes on top of ours for an extra kick. It is very simple to make. Enjoy!

- Place eggs in a shallow bowl.
