One-Pot Lemon-Basil Orzo and Vegetables image

Lemon and fresh basil give this light-yet-satisfying dish its bright flavor, while the orzo, chick peas, zucchini and tomatoes complete the meal.

2 medium zucchini, cut into 1/4-inch slices
1 medium onion, chopped
2 cloves garlic, finely chopped
8 oz uncooked orzo pasta (1 cup)
1 1/2 cups Progresso™ vegetable broth (from 32-oz container)
1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
1 can (19 oz) Progresso™ chick peas, drained, rinsed
2 teaspoons grated lemon peel
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon lemon juice
1/4 cup julienned fresh basil leaves

Steps:

  • In 12-inch nonstick skillet, heat 1 tablespoon oil over medium-high heat. Add zucchini; cook 2 to 3 minutes, stirring occasionally, until zucchini is lightly browned. Transfer zucchini to plate.
  • Add remaining 2 tablespoons oil, the onion and garlic to skillet. Cook and stir 2 to 3 minutes or until softened. Add orzo; cook and stir 2 to 3 minutes or until orzo is lightly toasted. Stir in broth, tomatoes, chick peas, lemon peel, salt and pepper. Heat to boiling; cover, and reduce heat to low. Cook 8 to 10 minutes or until most of liquid has absorbed and orzo is almost tender.
  • Add zucchini and lemon juice to orzo mixture; stir to combine. Remove from heat, cover and let stand 3 to 5 minutes or until all the liquid is absorbed. Stir in basil, and serve.

8-10 oz. bag frozen asparagus or broccoli
1 lb. raw frozen, 16-20 jumbo shrimp
juice of one lemon
1/4 c. fresh parsley, chopped

Steps:

  • Turn your 5 or 6 quart electric pressure cooker to saute and add the butter. Heat until melted and add the onion and garlic. Saute for 2-3 minutes until translucent.
  • Add the orzo and stir in with the butter and onion. Top with the frozen vegetables, frozen shrimp and chicken stock.
  • Cook on high pressure for 3 minutes. When the cooking time is done, turn the valve to vent and quick release the pressure.
  • The shrimp can be served with the shells on or, If desired, gently remove cooked shrimp from the rice and peel. Add peeled shrimp back into the rice along with the lemon juice and parsley and serve.

4 cloves garlic, minced
1 large onion, diced
2 14-ounce cans diced tomatoes
3 cups chicken broth
1 teaspoon dried oregano
1 teaspoon dried basil
1 pound orzo (whole wheat, if you can find it)
1/2 cup crumbled feta cheese
Juice and zest of 2 lemons
1 pound medium raw shrimp, peeled and deveined
1/3 cup grated Parmesan cheese
2 tablespoons minced fresh parsley

Steps:

  • Preheat oven to 450°.
  • In a large, deep, oven-proof skillet or a Dutch oven, heat the olive oil over medium-high heat. Add in the garlic and onion, and cook until just tender and fragrant, about 3 minutes.
  • Add in the diced tomatoes, broth, oregano, basil, and orzo. Bring to a boil, reduce heat, cover, and simmer until the orzo is cooked through and most of the liquid is absorbed-about 15 minutes. Make sure to stir frequently to keep from sticking.
  • Once the orzo is cooked, remove from heat and stir in the feta, lemon zest and lemon juice. Place the shrimp on top. Place the pot into the preheated oven and cook until the shrimp are opaque cooked through, about 10 minutes.
  • Remove from oven, sprinkle with Parmesan cheese and parsley, and serve.

3 tablespoons olive oil
1 lemon, (juiced and freshly zested)

Steps:

  • In a large bowl, combine the shrimp with the olive oil, lemon juice, zest, garlic, red pepper flakes and a big pinch of salt and pepper. Stir and let sit for 10 minutes.
  • Heat the butter in a large skillet (I like a 12 inch) over medium heat. Once melted, stir in the orzo. Cook, stirring often, until the orzo is slightly golden and toasty. Stir in the garlic and cook for 30 seconds.
  • Pour in the chicken stock and bring it to a boil. Reduce it to a simmer and cover the pot. Cook until the orzo absorbs the water and is fluffed up, about 12 to 15 minutes.
  • Add in the shrimp to the orzo and stir. Cover the pot again and cook for another 5 to 8 minutes, or until the shrimp is pink, opaque and cooked through.
  • Sprinkle with fresh parsley and a spritz of lemon. I like to stir in another 1 to 2 tablespoons of melted butter for optimal flavor, but this is up to you. Serve immediately!
