Adapted from "Take Big Bites" by Linda Ellerbee. This is a crustless pie- something like a brownie. Top it with a scoop of ice-cream and some berries- sinful.

Number Of Ingredients 7

2 ounces unsweetened chocolate (or 2 ounces of high-cocoa-content bittersweet chocolate)
1/2 cup butter
1 cup sugar
1/4 cup flour
2 eggs
1 teaspoon vanilla
1/4 teaspoon salt

Steps:

  • Preheat oven to 375 degrees. Place chocolate and butter in a 4 cup Pyrex measure or microwave-safe bowl. Place in microwave and heat on high, for 1 minute, stir, and heat for 30 seconds more. Let sit for a minute or so and stir until chocolate dissolves completely.
  • Add sugar, flour, eggs, vanilla, and salt. Stir until well combined.
  • Pour into lightly oiled 9 inch pie pan.
  • Bake for 25 minutes. Let cool for as long as you can wait. If you can't wait, vanilla ice cream helps cool a slice of pie on your plate.

MOCHA FUDGE PIE

I originally got this recipe from Cooking Light, but made the full-fat version last night for the first time, and it was great!

1/3 cup hot water
4 teaspoons instant coffee granules, divided
10 ounces boxes fudge brownie mix (about 2 cups)
2 teaspoons vanilla extract, divided
2 egg whites
vegetable oil cooking spray
3/4 cup milk
3 tablespoons Kahlua, divided
1 package chocolate flavor instant pudding and pie filling mix
3 cups whipped cream, divided
chocolate curls (optional)

Steps:

  • Combine hot water and 2 teaspoons coffee granules in a medium bowl; stir well.
  • Add brownie mix, 1 teaspoon vanilla, and egg whites; stir until well blended.
  • Pour mixture into a 9-inch pieplate coated with cooking spray.
  • Bake at 325 degrees for 22 minutes.
  • Let crust cool completely.
  • Combine milk, 2 tablespoons Kahlúa, 1 teaspoon coffee granules, remaining 1 teaspoon vanilla, and pudding mix in a bowl; beat at medium speed of an electric mixer 1 minute.
  • Gently fold in 1 1/2 cups whipped cream.
  • Spread pudding mixture evenly over brownie crust.
  • Combine remaining 1 teaspoon coffee granules and remaining 1 tablespoon Kahlúa in a bowl; stir well.
  • Gently fold in remaining 1 1/2 cups whipped cream.
  • Spread whipped cream mixture over pudding mixture.
  • Garnish with chocolate curls, if desired.
  • Serve immediately, or store loosely covered in refrigerator.
  • Nonalcoholic Mocha Version-------------------------Ю.
  • When making the pudding mixture, substitute 2 tablespoons milk for the Kahlúa.
  • In the topping, omit the Kahlúa, and dissolve the instant coffee granules in 1 tablespoon water.
  • Note: Store remaining brownie mix in a heavy-duty, zip-top plastic bag in refrigerator; use mix to make another pie or a small pan of brownies.

This is a more fudge-y version of a chocolate pie! It has been passed down in my family forever and I have no idea where it came from. Even those who do not like chocolate pie, love this pie. It is foolproof and was the very first thing I ever baked. Always requested on family birthdays and holidays! I serve it with a generous dollop of fresh whipped cream! Also, sometimes I use a pre-made pie crust and sometimes I make my own! NOTE: Yes, this has a lot of calories and fat, you can use margarine instead of butter. Other than that, I would not mess with it too much! I tried it using Splenda and it was less than desirable. UPDATE: 09/16/2009 Per review: I NEVER prebake my pie-crust and it comes out perfectly -- neither have the generations of women who have made this before me. That might be a personal preference, but the recipe is intended to be made with an unbaked pie shell.

2 eggs, slightly beaten
1 cup sugar
3 tablespoons cocoa powder (heaping tablespoons)
3/4 cup evaporated milk
1/2 cup butter, melted
1 pie crust
2 tablespoons flour

Steps:

  • Preheat your oven to 350°F.
  • Dust pie crust lightly on both sides with the flour, so that it feels kind of dusty.
  • Put pie crust in a pie plate and crimp edges (optional).
  • Combine the first five ingredients and whisk together.
  • Some cocoa lumps are normal.
  • It will be VERY runny and look like chocolate juice.
  • Pour mixture into prepared pie plate.
  • Bake for 35-45 minutes in preheated oven.
  • NOTE: At the end of thirty minutes if it is still liquid in the middle put the pie back in the oven in 3 minute increments. It should be a LITTLE jiggly, NOT LIQUIDY (just a slight wobble, I mean very slight) like jello, in the middle when it is done. Let it cool and it will set up perfectly! Cook time will vary with your oven. My mom's oven takes 30 minutes exactly. Mine takes closer to 45.

1 ½ cups white sugar
4 large eggs
3 tablespoons light corn syrup (such as Karo®)
1 teaspoon vanilla extract
1 (9 inch) ready-to-use refrigerated pie crust

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter and chocolate in a pan over low heat.
  • Remove from the heat. Add sugar, eggs, corn syrup, and vanilla; stir until well combined. Pour into the pie crust.
  • Bake in the preheated oven until mostly set but slightly jiggly, 40 to 45 minutes.
  • Remove from the oven and cool to room temperature before serving; filling will thicken as it cools.

I discovered this pie when it was only a single chocolate fudge pie. I have made a few changes to it, and now it is a super-easy dessert of triple chocolatey deliciousness.

9 inches pie crusts
1/3 cup chocolate chips (i use mini semi-sweet morsels)
1 1/2 cups sugar
5 tablespoons cocoa powder
2 tablespoons flour
1/4 teaspoon salt
1/2 cup evaporated milk
3 eggs
1/3 cup unsalted butter, melted
1 teaspoon vanilla
3/4 cup hershey's hot fudge

Steps:

  • Bake pie shell for 1/2 the baking time directed on package instructions. Remove from oven and allow to cool to room temperature as you prepare the rest of the pie.
  • Blend sugar, cocoa powder, flour, and salt together in a medium bowl until well mixed.
  • Stir in evaporated milk, then eggs.
  • Add melted butter and vanilla and stir until completely combined.
  • Sprinkle chocolate chips evenly into the bottom of the pie crust. Stir chocolate pie mixture and pour on top of chocolate chips.
  • Bake at 325F for 55-60 minutes. Remove from oven and let sit 15 minutes.
  • Spoon hot fudge over pie and carefully spread until even.
  • Refrigerate several hours before serving. Keep refrigerated.
  • Serve topped with a dollop of fresh whipped cream. Yum!

2 cups semisweet chocolate morsels
1/4 cup butter, softened
3/4 cup brown sugar, firmly packed
3 large eggs
2 teaspoons coffee, strongly brewed
1 teaspoon vanilla extract
1 1/2 cups pecans, chopped, divided
1/4 cup all-purpose flour
9 inches pastry shells (or use your favorite pie crust)
1 cup whipping cream, whipped

Steps:

  • Place the chocolate morsels in the top of a double boiler. Bring the water to a boil. Reduce heat to low; cook until the chocolate melts, stirring occasionally. Set aside, and let cool slightly.
  • Beat the butter at medium speed of an electric mixer until creamy; gradually add sugar, beating well.
  • Add eggs, one at a time, beating after each addition.
  • Stir in melted chocolate, coffee, and vanilla. Gradually add 1 cup pecans and flour stirring well.
  • Spoon the chocolate mixture into the pastry shell (or your own pie crust). Sprinkle with the remaining 1/2 cup pecans. Bake at 375 degrees for 30 minutes or until a knife inserted in the center comes out almost clean. Cool completely on a pie rack. Serve with whipped cream.
