CHOCOLATE-COCONUT BARS

Chocolate-Coconut Bars image

Inspired by a much-loved chocolate-coconut candy bar, these are the perfect spur-of-the-moment treats for the event that almost slipped your mind: Premade sugar cookie dough does half the work for you!

Provided by Food Network Kitchen

Categories     dessert

Yield sixteen 2-inch squares

Number Of Ingredients 13

Butter, for greasing pan
Topping:
1/3 cup coconut cream
1 large egg white
1/2 teaspoon vanilla extract
1 1/2 cups sweetened shredded coconut
2 teaspoons all-purpose flour
One 4-ounce bar bittersweet or semisweet chocolate, coarsely chopped
Base:
1/4 cup all-purpose flour, plus more for rolling dough
1/3 cup natural unsweetened cocoa powder (not Dutch process)
1/4 teaspoon fine sea salt
One 1-pound package prepared refrigerated sugar cookie dough

Steps:

  • Preheat the oven to 350 degrees F. Cut a piece of foil 9- by 23-inches. Butter the corners and sides of a 9- by 9-inch baking pan. Line the pan with the foil, leaving an overhang on two sides. Fold the overhanging foil to make them doubly thick. (This will make it easier to lift the bar out of the pan.)
  • For the topping: Whisk the coconut cream with the egg white and vanilla in a medium bowl. Toss the shredded coconut with the flour in another medium bowl. Stir the shredded coconut mixture into the coconut cream mixture. Set aside.
  • For the base: Whisk the flour with the cocoa powder and salt in a small bowl. Put the cookie dough on a clean work surface and dump the flour mixture on top. Knead the flour mixture and dough together until it is dark and homogenous. Sprinkle a little extra flour on the work surface, and use a rolling pin to gently press and roll the dough into a 7- or 8-inch square; don't worry if it cracks a bit. Put the dough in the prepared pan, using your fingers to press it evenly into the sides and corners.
  • Scatter the coconut topping evenly over the base, making sure you cover the edges well and being sure not to press down so that the coconut mixture lies on top of the dough. Scatter the chocolate on top and press it lightly into the coconut. Bake until the coconut is a toasted golden brown, the topping seems dry and a toothpick inserted in the center comes out clean, about 30 minutes. Cool completely on a rack before gently lifting out of the pan by the overhanging foil, about 20 minutes. Slice into 16 square bars.

OATMEAL CHOCOLATE CHIP COCONUT COOKIE BARS

Oatmeal Chocolate Chip Coconut Cookie Bars image

Provided by Mel

Time 40m

Number Of Ingredients 11

3/4 cup old-fashioned rolled oats
1 2/3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup salted butter, melted (see note)
1 1/3 cups packed light or dark brown sugar (or a combo)
1 large egg
1 large egg yolk
1 teaspoon vanilla
3/4 cup sweetened or unsweetened coconut flakes
1 1/2 to 2 cups semisweet or bittersweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F. Line a metal 9X13-inch pan with parchment and lightly grease with cooking spray (see note for other types of pans).
  • Add the oats, flour, baking soda, and salt to a blender and pulse until coarsely blended. The texture of the oats should be finer than quick oats but not as fine as flour. Set aside.
  • To a large bowl, add the melted butter, brown sugar, egg, egg yolk, and vanilla and stir with a wooden spoon or rubber spatula until the ingredients are well combined and the batter lightens a bit in color.
  • Add the dry ingredients, coconut, and chocolate chips and mix.
  • Press the batter evenly into the prepared pan. Bake for 20 minutes until set around the edges but still slightly soft in the center. It's ok if you need to add additional baking time, just keep an eye on the bars - they are better just slightly under baked.

  • Preheat the oven to 325 degrees (F). Line a 9x13-inch baking pan with parchment paper - letting the excess hang over the edges of the pan by about 1 inch so that removing the baked bars is easy once baked. Spray the parchment paper and any exposed pan with nonstick cooking spray. Set aside.
  • Whisk the melted oil and sugars in a large bowl until combined. You can do this by hand, but I recommend using a handheld mixer if you own one, as it the by hand method takes a lot of elbow grease. Once the oil and sugar are well combined, add the cinnamon and eggs and mix well.
  • Add in the flours and salt, and using a rubber spatula, fold the dry ingredients into the egg mixture until just combined; do not overmix.
  • Fold in the chocolate chunks and then pour the batter into the prepared pan, smoothing the top with the spatula. *The batter will be very thick; this is normal ;) You can use a piece of plastic wrap to press it into the pan if you don't have a strong enough spatula.

Place the mixing bowl in the freezer for 15 minutes. Do not skip this step. Chilled dough spreads less during the baking process and this dough must be chilled before baking.
  • Using a cookie scoop or spoon, drop 1-inch domed balls on a parchment paper-lined, or cookie sheet that has been sprayed with cooking spray, allowing for adequate spacing.
