This bright pink applesauce is simple enough for a weeknight supper and festive enough for special occasions. It's a favorite with my family and friends and looks fabulous at a Christmas dinner! You can substitute Splenda® for the sugar.

2 pounds apples - peeled, cored, and cut into 1-inch chunks
1 cup fresh cranberries
¼ cup white sugar
3 tablespoons water
½ teaspoon ground cinnamon
1 pinch salt
1 ½ teaspoons lemon juice

Steps:

  • Stir apples, cranberries, sugar, water, cinnamon, and salt together in a saucepan. Bring to a boil, reduce heat to low, and cook until apples and cranberries are tender, about 20 minutes. Remove from heat.
  • Stir lemon juice into cranberry mixture.
  • Mash cranberry mixture with a wooden spoon or fork to make a chunky sauce.

1 cup tart apples (peeled and diced (see note 2))

Steps:

  • In a medium saucepan, bring sugar, water, cinnamon, and salt. to boil. Stir occasionally to dissolve the sugar.
  • Stir in cranberries and apples. Simmer until slightly thickened and the berries begin to pop, about 10 minutes. Remove from heat and cool to room temperature or chill.

1 cup apple cider (can substitute water)
1 medium apple (peeled, cored, and diced) (I recommend a tart variety like Granny Smith or McIntosh)
3 cups 12 ounces fresh cranberries, washed
1/3 - 2/3 cup sugar (plus possibly a little more, to taste)
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
Zest of one small lemon (about 1 teaspoon)

Steps:

  • Add all ingredients to a medium saucepan.
  • Bring to a boil over high heat, then reduce the temp to medium-low and simmer until the berries have burst and the mixture has thickened, about 10-15 minutes.
  • Let cool and serve.
  • May be refrigerated for two days or frozen for up to two months.

3/4 cup apple cider (NOT apple cider vinegar)
2 cups small-diced apples (about two medium apples)
1 1/2 cups tightly packed brown sugar (light or dark, either is fine)
1/2 teaspoon allspice
1/2 teaspoon cinnamon

Steps:

  • Combine all ingredients in a large pot (choose an extra big one to prevent yourself from being a splatter-victim).
  • Bring to a boil and reduce heat to medium.
  • Stir frequently and simmer for 15 minute or until apples and cranberries are soft and sauce is thickened.
  • Cool before serving.

1/2 cup plus 2 tablespoons water
1/2 cup plus 2 tablespoons sugar
5 medium Golden Delicious apples (about 2-1/2 pounds), peeled and chopped
1-1/4 cups fresh or frozen cranberries
1/2 teaspoon grated lemon zest
1 teaspoon minced fresh gingerroot
1/4 teaspoon ground cinnamon

Steps:

  • In a large saucepan over medium heat, cook and stir water and sugar until sugar is dissolved. Add apples; cover and cook for 5 minutes, stirring often. Add cranberries; cover and cook until apples are tender and berries pop, about 15 minutes. , Mash until sauce reaches desired consistency. Stir in zest, ginger and cinnamon. Cook, uncovered, 5 minutes longer. Serve warm or refrigerate until serving.

2 cups cranberry juice
1 (6 ounce) bag dried sweetened cranberries
1 cinnamon stick, broken in half
1 cup sugar
2 gala apples, peeled, cored and diced
2 teaspoons cornstarch

Steps:

  • In a medium saucepan, add the cranberry juice, cranberries, cinnamon and sugar.
  • Bring to a boil over medium heat and cook for 5 minutes.
  • Add the apples and continue cooking, stirring occassionaly until the cranberries have softened and apples are tender (5 minutes).
  • Remove 8 ounces of the liquid to a small bowl and whisk in the cornstarch (to make slurry).
  • Slowly add the slurry to the cranberry mixture. Continue cooking, stirring constantly for an additional 5 minutes.
  • Remove from heat and pour into serving bowl.
  • Refrigerate until thickened (30 minutes).
  • Remove cinnamon sticks and serve.
