2½ cups all-purpose/plain flour
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda/bicarbonate of soda
1¼ cups salted butter (melted)
1½ cups packed light-brown sugar
½ cup granulated sugar
2 large eggs (at room temperature)
2 teaspoons vanilla extract
½ teaspoon cinnamon
⅛ teaspoon nutmeg
2 cups rolled oats
1¼ cup chocolate chips

Steps:

  • Preheat the oven to 375 degrees F/190C. Grease and flour a 9 x 12 baking pan
  • Sift the flour, salt, baking soda, baking powder, cinnamon, and nutmeg together into a large mixing bowl.
  • Add the butter, brown sugar, granulated sugar, eggs, vanilla, and rolled oats. Mix until combined. Fold in 1 cup of chocolate chips and spread evenly into the pan. Sprinkle with remaining chocolate chips.
  • Bake 30 minutes. After 30 minutes, give the pan a little shake. If it jiggles in the middle, put the pan back in and try again every 5 minutes until there is no longer any jiggle.
  • Remove from the oven and let cool 10 minutes before cutting. Best served warm, but great cooled as well.

1/2 cup gluten-free oat flour
1/2 cup brown rice flour
2 tablespoons tapioca flour
1 teaspoon gluten-free baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 cup butter, softened
1/2 cup packed brown sugar
1/4 cup granulated sugar
1 egg
1 teaspoon pure vanilla
1 cup miniature semisweet chocolate chips
1/2 cup chopped walnuts

Steps:

  • In small bowl, mix oats, flours, baking powder, baking soda and salt with whisk; set aside. In large bowl, beat butter, brown sugar and granulated sugar with electric mixer on medium speed until fluffy. Beat in egg and vanilla. Gradually add oat mixture, beating on low speed just until combined. Stir in chocolate chips and nuts.
  • Shape dough into 16x1 1/2x1 1/2-inch log; wrap in plastic wrap. Refrigerate 1 hour or until firm.
  • Heat oven to 350°F. Unwrap dough. Using serrated knife, cut dough into 1/2-inch slices. Place 2 inches apart on ungreased cookie sheet.
  • Bake 9 to 11 minutes or just until edges are golden. Cool 2 minutes; remove from cookie sheet to cooling rack.

2 cups old-fashioned rolled oats
2 cups chocolate chips (semi-sweet, milk chocolate, or a little of both!)

Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 9 x 13 inch pan with cooking spray or line with parchment paper.
  • In a large mixing bowl beat together the butter, brown sugar, and white sugar until smooth and light.
  • Add the eggs one at a time, mixing after each addition. Add the vanilla.

1/3 cup maple syrup
1 tsp vanilla extract
1 tsp baking powder
1/2 tsp baking soda

1.5 cups oat flour
1/2 cup rolled oats
1/2 cup chocolate chips + more to top

Steps:

  • Preheat the oven to 350F and line a loaf pan with parchment paper or grease with oil
  • Mash ripe bananas in a large bowl with a potato mashed or the back of a fork
  • Whisk in the eggs, oil, maple syrup and vanilla extract
  • In a separate bowl combine oat flour, rolled oats, baking soda, baking powder, and salt
  • Fold dry ingredients into wet ingredients
  • Fold in chocolate chips
  • Pour into the loaf pan and top with additional chocolate chips, oats, and a sprinkle of sugar to get a glistening top

85g Brown Sugar
125g White Sugar
150g Plain Flour (sifted)
170g Porridge Oats
1/2 tsp Baking Powder
1/2 tsp Bicarbonate of Soda
100g Choc Chips
1 tsp Vanilla Essence
1 egg

Steps:

  • pre heat oven 160 C
  • cream butter and both sugars together
  • add egg and vanilla essence and mix until well combined
  • fold in sifted flour, baking powder and bicarbonate of soda
  • add choc chips and porridge oats and mix well with a wooden spoon
  • take a spoonful of the mixture and place on a grease proof or lined baking tray, reapeat unil all the mixture is used about 20 - 24 cookies depending on how big you like them!
  • place in a preheated oven at 160 C for about 15 - 20 mins, they should be light brown in colour and slightly soft in the middle
  • leave to cool for 5 mins on the tray and then transfer to cooling rack
  • enjoy!
