My Homemade chipotle BBQ sauce is easy and delicious. Ready in 30 minutes, you won't want a store bought sauce again. I have made this sauce with a bit of spice using chipotles in adobo sauce. Freezes really well too

Steps:
- In a medium saucepan, over medium heat add the olive oil. Add in the onions.
- Saute about 3 minutes, onions will get translucent, add the garlic and saute another 1 minute.
- Stir in the remaining ingredients chipotle peppers in adobo sauce, ketchup, tomato sauce, apple cider vinegar, chili powder, ground mustard, pepper, and salt.
- Cover pot and reduce heat to low. Let simmer, stirring occasionally for about 20 minutes.
- Check seasonings and make any adjustments, if needed.
- BBQ sauce can be kept tightly covered in the fridge for about 3-4 days. Can be frozen for 3 months. Use on ribs, beef, poultry, turkey, and veggies.

- In a wide deep sauce pan (that can hold 5 cup liquid) add de-stemmed chipotle dried pepper followed by all ingredients listed in the ingredient list - vinegar, oregano, garlic, onion, salt, *ketchup, bay leaf and other **spices (optional, **read notes). Mix with 3 cups of water.
- Place on stove and bring to boil. Reduce heat of to medium low and simmer for 1 hour or until the liquid has reduced to about 1 cup or 1 cup and 1/4.
- Chipotle will be very soft by this time. Transfer the contents to seal-able jar. Pick and discard any whole spices - bay leaf etc. Let it come to room temperature, then refrigerate. Taste best when used after a day. It gets better with time. Stays god in refrigerator for a 3-4 weeks.

- Prep Time: 10 minutes Cook Time: 80 minutes Yield: 6-8 servings Place 4 whole dried chipotle peppers in a bowl. Add a cup of boiled water to the bowl, and let sit for about 20-30 minutes. Add olive oil to a large pot over medium high heat. Heat until a flick of water sizzles upon contact, then add the cumin seeds and the chicken. Cook the chicken pieces on one side until they brown, about 5-7 minutes, and then flip the pieces and cook on the other side, about 5 minutes. Add onions and garlic, and cook until they become soft, fragrant, and translucent, about 10 minutes. Add celery, carrots, and corn niblets, stir, and cook for another 5 minutes. Then, add the oregano and the broth, stir, and bring soup to a simmer. In the meantime, return to your chipotle peppers that have been soaking in hot water for 20-30 minutes. Drain the water, and then chop the coarse stems off the peppers. Then, slice them in half lengthwise, and rinse out the seeds. Mince the peppers and add them to the soup. - In a large saucepan, bring 8 cups water to a boil. Add tomatoes, a few at a time; boil 30 seconds. Drain and immediately place tomatoes in ice water.
