MUSHROOM BUNS
We concentrated the mushroom flavor in these savory buns by cooking the vegetables down with shallots and herbs into a paste known in French as duxelles. Make them for a special brunch or holiday dinner.

Steps:
- For the dough: Warm the milk and 1/2 cup water in a medium saucepan over low heat to about 100 degrees F (but no more than 110 degrees F). Remove the saucepan from the heat, and sprinkle the yeast over the liquid. Sprinkle a pinch of the sugar over the top, and set aside without stirring until foamy, about 5 minutes. Then whisk in the butter and egg yolk.
- Whisk the flour, remaining sugar and salt in a large bowl. Make a well in the center, and stir in the yeast mixture with a wooden spoon until you have a thick, sticky dough. Turn the dough onto a floured work surface, and knead until soft and elastic, about 6 minutes. Shape the dough into a ball.
- Brush the inside of a large bowl with butter. Add the dough ball, turning to coat lightly. Cover the bowl with plastic wrap, trace a circle the size of the dough ball on the plastic and note the time. Let the dough rise in a warm place until doubled in size, about 1 hour 30 minutes.
- Turn the dough out of the bowl, and knead briefly to release excess air. Re-form the dough into a ball, and return it to the bowl. Lightly butter a large piece of plastic wrap, and lay it on the dough. Cover the entire bowl tightly with the rest of the plastic, and refrigerate it for 4 hours or overnight to let the dough proof.
- For the filling: Process the garlic, shallots and thyme in a food processor until combined. Add the cremini and shiitake mushrooms, and pulse until nearly pureed (a few small chunks here and there are fine), stopping to scrape down the side of the bowl as necessary. Heat a medium nonstick skillet over medium heat, and melt 4 tablespoons of the butter. Add the mushroom mixture, and cook, stirring frequently, until it releases liquid and begins to bubble and brown, 5 to 7 minutes. Reduce the heat to low, stir in the wine and cream and bring the mushroom-cream mixture to a low boil. After 1 minute, remove the skillet from the heat, and stir in 1 teaspoon salt and a few grinds of pepper. Transfer the filling to a medium bowl, and let it cool completely. (The filling will firm up a bit, but if it's too warm, it will be difficult to form the buns.)
- To fill and form the rolls: Butter a 9-by-13-inch baking pan with the 2 tablespoons softened butter. Turn the dough onto a floured work surface, and press it flat. Roll it into a 10-by-18-inch rectangle, with 1 long side facing you. Spread the filling evenly over the dough, leaving a 1-inch border on the long side opposite you. Sprinkle the Parmesan evenly over the filling. Starting from the side facing you, roll the dough up into a tight roll. Lightly brush the 1-inch border with water, and continue rolling to seal the roll. Fold the ends in just a bit, and if any spots look thicker than others, even out the roll with your hands.
- Cut the roll every 1 1/2 inches with a serrated knife, to make 12 buns. Place the buns cut-side down (except for the end pieces) in the prepared pan, spacing them 1 inch apart. Cover them loosely with plastic wrap, and set in a warm place to rise until they double in size with no gaps in between, 1 hour 30 minutes to 2 hours.
- For the topping: Stir together the butter, parsley and Parmesan in a small bowl; set aside.
- Position an oven rack in the center of the oven, and preheat to 350 degrees F. Bake the buns until they're golden brown and the tops spring back when pressed lightly, 25 to 30 minutes. Spread the topping evenly over the buns, sprinkle with 1 teaspoon salt and return them to the oven until the butter is melted and the topping is fragrant, 5 minutes more. Let them cool in the pan for 10 minutes before serving.
MUSHROOM AND HERB CROSTINI
Steps:
- Preheat the oven to 400 degrees F.
- Brush both sides of each baguette slice lightly with olive oil. Bake for 4 minutes per side. Remove from the oven and sprinkle the Gruyere evenly over the bread. Turn the oven to broil. Place the crostini back in the oven under the broiler until the cheese is melted.
- Melt the butter in a large skillet over medium heat. Add the mushrooms, white wine and tamari. Cook until the mushrooms are soft and the liquid has evaporated. Finish with a small pinch of sea salt.
- Spoon the mushrooms out of the pan directly onto the crostini. Garnish with the chopped chives and flat-leaf parsley.
MUSHROOM AND HERB ROLLS
Based on a recipe from Michelle Garner's cookbook, Quick French Cuisine. I've been making these appetizers for years and they are always a smash hit. I hope they are for you, too!

Steps:
- Preheat the oven to 425 degrees F.
- In large skillet, sauté shallot or onion in butter until soft, about 5 minutes.
- Add mushrooms and lemon juice to skillet and cook until mushrooms are soft and juices have absorbed.
- Add herbs, mix well and set aside to cool.
- Add cream cheese to cooled mushrooms and mix well. Adjust seasonings to taste.
- Roll out puff pastry to 10x12-inch rectangle.
- Spread filling over pastry.
- Cut pastry into fifteen 2x4-inch rectangles.
- Roll up each rectangle and brush with egg wash.
- Place seam side down on ungreased baking sheet.
- Bake until golden, about 15 minutes.
- Serve immediately.

WILD MUSHROOM SOUP WITH ARUGULA AND WALNUTS AND PARMESAN-CRUSTED ROLLS WITH HERB BUTTER

- Preheat oven to 450 degrees F. Coat a large baking sheet with cooking spray.
- Break dough into 8 equal pieces and roll each piece into a thick rope shape. Twist each 'rope' piece into a knot. Place balls on prepared baking sheet and spray with cooking spray. Sprinkle with Parmesan to coat surface. Bake 8 minutes, until golden brown.
- Meanwhile, melt butter in a large stock pot over medium heat. Add mushrooms, onion and garlic and cook 5 minutes. Add thyme and cook 1 minute. Add chicken broth and wine and bring to a simmer, about 1 minute. Simmer 5 minutes.
- While soup is simmering, blend softened butter with chopped fresh parsley and salt and pepper. Remove Parmesan knots from the oven.
- Remove soup from the heat and, using an immersion or stand blender, puree until smooth Return the soup to low heat, add milk and andouille sausage and simmer 1 minute to heat through.
- Ladle soup into bowls and top with arugula and walnuts. Serve rolls on the side with parsley butter.
SIMPLE MUSHROOM ROLLS
My grandmother made these in the '60s whenever she entertained; imagine my surprise when I found this in a cookbook as an actual recipe! This brought back a ton of memories -- one of them that these were delicious!

- Preheat oven to 400F (200C).
- Remove crusts from a few bread slices; set crusts aside for another use.
- Flatten bread slices lightly, with a rolling pin.
- Spread with undiluted soup, then roll up jelly-roll style and secure with a couple of toothpicks.
- Keep making slices until you run out of soup.
- Place rolls on an ungreased baking sheet and brush with melted butter.
- Bake until bread is toasted, about 10 to 15 minutes-- keep an eye on them.
VEGAN MUSHROOM AND LEEK ROLLS
Classic sausage rolls are filled with a meat-based sausage mixture, but this hearty vegan version substitutes mushrooms, fennel and plenty of leeks, along with almond butter for creaminess and farro for a delightfully chewy texture. These are best served warm from the oven, or reheated if they cool down. Ketchup is a traditional sausage roll accompaniment, but these are so flavorful on their own they don't need it.

- Bring a small pot of salted water to a boil, then add farro. Cook until tender, 20 to 30 minutes. Drain well and drizzle with 1 tablespoon olive oil and the vinegar while still warm, tossing to combine. Let the farro cool.
- Heat oven to 375 degrees and line rimmed baking sheet with parchment paper.
- While the farro cooks, prepare the filling: In a large skillet, heat 3 tablespoons olive oil over high heat. Add mushrooms and cook until just tender and golden brown, stirring infrequently so the mushrooms have a chance to sear, 8 to 12 minutes. Lower heat to medium and add remaining 1 tablespoon olive oil, leeks and fennel. Cook until leeks and fennel soften, 8 to 12 minutes. Add thyme, garlic, tomato paste, 1/2 teaspoon salt and pinch of red-pepper flakes, if using, and cook for another minute or until fragrant.
- Add soy sauce to deglaze pan, scraping up the browned bits on the bottom. Transfer mushroom mixture to large mixing bowl and set aside to cool.
- Add cooled farro, almond butter and herbs to mushrooms, and mix well.
- Place the puff pastry dough between two sheets of parchment paper, and roll to about 1/8-inch thick. Cut pastry into 4 equal rectangles. In the center of each pastry, dollop a quarter of the mushroom mixture, forming it into a long "sausage" running lengthwise on the pastry strip.
- Lightly brush one long edge of the pastry with water (to help seal the dough). Starting with the unbrushed sides of the pastry, firmly fold the pastry over the filling to make long rolls, pinching dough to seal. Place on prepared baking sheet, seam-sides down.
- Bake until the pastry is golden brown, about 35 to 40 minutes. Serve warm.
SPRING ROLLS WITH SPINACH, MUSHROOMS, SESAME, RICE AND HERBS
I steam the spinach just until it collapses for these rolls and combine it with rice instead of the more traditional noodles. You can use brown, regular basmati or jasmine rice

- Toss the rice with 1 tablespoon of the rice vinegar and the soy sauce
- Wash the spinach and steam 1 to 2 minutes, tossing halfway through. It should wilt but still have some texture. Rinse with cold water, squeeze dry and coarsely chop. Season with salt to taste
- Spread each tofu domino with about 1/4 teaspoon peanut sauce
- Place the shredded carrots, slivered mushrooms and chopped herbs in a large bowl and toss with the remaining rice vinegar and salt to taste
- Fill a bowl with warm water and place a spring roll in it just until it is pliable, about 30 seconds. Remove from the water and drain briefly on a kitchen towel. Place the wrapper on your work surface in front of you and arrange several cilantro sprigs, whole mint leaves and basil leaves, vein side up, on the wrapper. Leaving a 2-inch margin on the sides, place a handful of the carrot mixture on the wrapper, slightly nearer to the edge closest to you. Top with a handful of rice, then a handful of spinach. Place 3 tofu dominoes down the length of the spinach. Fold the sides in, then roll up the spring rolls tightly, squeezing the filling to get a tight roll. Refrigerate until ready to serve. Serve with a dipping sauce of your choice

- Place racks in the upper and lower thirds of your oven and preheat oven to 400 degrees F. Line two large baking sheets with silicone baking mats or parchment paper. Set side.
