BOOZY CHERRY-CHOCOLATE PIES

- Whisk the sugar, rum, vanilla, orange zest and 1/4 teaspoon salt in a large bowl until the sugar dissolves. Add the cherries and cornstarch and toss; set aside until juicy, about 30 minutes. Line a baking sheet with foil and coat with cooking spray. Place six 5-to-6-inch ceramic tart dishes on the prepared pan. Add 3/4 cup cherries to each dish using a slotted spoon; top each with 1 tablespoon butter and 2 teaspoons chocolate. Transfer the remaining cherry mixture to a saucepan; add 1/2 cup water and simmer over medium heat, stirring occasionally, until thickened, 5 to 7 minutes. Divide among the dishes; cool completely.
- Dust a surface with flour. Using a paring knife, cut out 6 circles from the piecrust, 1/2 inch bigger than the tart dishes (use the dishes as a guide). Place on another baking sheet; chill until ready to bake. Position a rack in the lower third of the oven and preheat to 375 degrees F. Top each dish with a piece of dough, pressing the edge against the dish to seal; pierce several times with a knife. Bake 45 minutes, then brush each pie with heavy cream and sprinkle with sugar. Continue baking until golden, about 15 more minutes. Serve with ice cream.

I've been making this almost 30 years. It's my all time family favorite. This will be a recipe that you will want to make over and over. Please note: this recipe contains raw eggs. We recommend that pregnant women, young children, the elderly and the infirm do not consume raw eggs. Important: be sure to use only fresh eggs for this recipe.

- Preheat oven to 375 degrees F (190 degrees C.) In a medium bowl, combine crumbs, and 1/4 cup softened butter. Press onto the bottom and sides of an 8 inch pie pan. Bake in preheated oven for 8 minutes. Cool.
- In a microwave-safe bowl, microwave chocolate until melted. Stir occasionally until chocolate is smooth. Set aside. In a large bowl, cream 1/2 cup butter and sugar until light and fluffy. Blend in melted chocolate, salt and vanilla. Add eggs, one at a time, beating 5 minutes for each egg. Stir in chopped cherries. Spread into cooled crust. Chill 4 hours.
- Before serving, garnish pie with whipped cream and maraschino cherries.

FRIED CHOCOLATE-CHERRY HAND PIES
Steps:
- For the pie dough: Pulse the flour, cocoa powder, sugar, baking powder and salt in a food processor until combined. Add the butter and shortening and pulse until the mixture looks like coarse meal. Drizzle in 6 tablespoons ice water and pulse until the dough starts coming together, adding 1 tablespoon of ice water if needed.
- Turn the dough out onto a piece of plastic wrap and lightly knead to bring together. The dough might be a little crumbly, but it will hydrate as it chills and comes together. Form into a disk, wrap in the plastic wrap and refrigerate until firm, about 1 1/2 hours. It should feel like very firm modeling clay.
- For the filling: Melt the butter in a medium saucepan over medium heat. Add the cherries and sprinkle with the sugar, cornstarch and salt and stir to combine. Cook, stirring constantly, until some of the cherries begin to break down and a jelly-like film begins to form at the bottom of the pan, 4 to 5 minutes. Use the back of a wooden spoon or rubber spatula to smash half of the cherries against the side of the pan. Remove from the heat and stir in the sour cherry jam and almond extract, if using. Transfer the filling to a medium bowl and let cool at room temperature for 15 minutes. Then transfer to the refrigerator until fully chilled, about 1 hour. Fold in the chocolate chips once chilled.
- To assemble and fry: Remove the dough from the refrigerator and divide into 8 even pieces, then roll each piece into a ball. On a lightly floured work surface, roll out each ball into a 6 1/2-inch round. If the dough starts to crack in places as you roll it out, pinch and press it together with your fingers and re-roll until the dough is smooth again. Stack the rounds between pieces of parchment paper and refrigerate until firm, about 30 minutes.
- Remove the dough from the refrigerator and let sit for 5 minutes. Beat the egg in a small bowl with 1 tablespoon of water.
- Heat 1 inch of vegetable oil in a Dutch oven or deep high-sided skillet until a deep-fry thermometer registers 375 degrees F.
- Scoop about 3 tablespoons of the cherry filling into the center of each dough round. Brush the edge on one side of the dough round with some egg wash and fold the dough over to make a half-moon shape. Press out the air and seal the edges with your fingers. Use a knife to trim any of the rough edges away, leaving 1/2 inch of the dough around the filling. Crimp the edges with a fork. Keep the formed hand pies on their individual pieces of parchment as you form them to make them easier to handle when adding to the hot oil.
- One at a time, peel away the parchment paper and add 4 of the pies to the hot oil, turning once, until the dough is bubbling in spots and crispy, about 4 minutes. Transfer the pies to a wire rack set over a baking sheet and immediately sprinkle generously on all sides with sugar.
- Repeat with the remaining pies. Allow the pies to cool for 10 minutes, then serve warm.
CHOCOLATE-COVERED CHERRY PIE
If you really want to impress your guests or family with a dessert then this is it! This is a never-fail pie that I have made on many occasions, it's absolutely fantastic! --- plan ahead the pie needs to chill for a minimum of 8 hours before serving --- it's also wonderful even without the chocolate-dipped cherries, the first time I made it I did use the cherries, the second time I made this I just drizzled the melted chocolate on the cold pie, then dolluped whipped cream around the edge of the pie :)

- Microwave the semi-sweet baking chips with 1/2 cup whipping cream until the chocolate begins to melt (about 1 minute) remove and whisk in 1/4 cup butter until smooth; let cool, whisking occasionally for about 10 minutes, or until the mixture reaches a spreading consistency.
- Spoon half of the mixture over the ready-made pie crust.
- Cover and chill remaining chocolate mixture.
- Spoon the cherry pie filling evenly over the chocolate mixture in the pie crust; place the crust on a baking sheet.
- In a bowl beat softened cream cheese with powdered sugar, egg and almond extract at medium speed using an electric mixer until smooth.
- Pour the cream cheese mixture evenly over the cherry filling (the pie will be very full but shouldn't overflow when baked, but place the pie on a baking sheet anyway!).
- Set oven to 350 degrees.
- Bake for 25-30 minutes or until the center is set; remove from oven and cool to about room temperature.
- Refrigerate for a minimum of 8 hours.
- This next step with the cherries is optional, you can just drizzle the top of the cooled pie with melted chocolate and then dollop with whipped cream.
- Place 16 maraschino cherries with the stems on paper towels; pat them dry.
- Microwave the reserved chocolate mixture at MEDIUM for about 1 minute or until spreading consistency, stir until smooth.
- Dip the cherries into the warmed chocolate mixture, then place on a baking sheet.
- Chill the cherries for about 20 minutes (or longer).
- Spread any remaining chocolate over the pie, then spoon 8 dollops of whipped cream (or Cool Whip topping) around the outer edges of the pie.
- Place 2 chocolate-covered cherries on top of each dollop.
- Delicious!
