EASY MEXICAN PORK BURRITOS
Pork butt roast and taco or burrito seasoning are a combination to die for! This recipe originally came from my Aunt Pennie. I've tweaked it to our liking though. My whole family loves these! When we have friends over for dinner, this is the perfect meal to prepare. I usually make about 20-24 burritos from one batch of filling. Serve with lettuce, tomato, green onion, sour cream, salsa, avocado, black olives, and Cheddar cheese, if desired.

Steps:
- Bring pork shoulder roast, onion, garlic, and 1 package taco seasoning to a boil in a large pot with enough water to cover. Reduce heat to medium-low and simmer until tender and no longer pink in the center, 2 to 3 hours. Check water level every 45 minutes, adding more as needed. Reserve about 1 cup cooking liquid.
- Shred pork with a fork, discarding excess fat and bone. Stir in tomatoes, refried beans, green chiles, and remaining package of taco seasoning. If the mixture is too dry, add reserved cooking liquid.
- Spread pork mixture evenly down the center of each tortilla; sprinkle with Cheddar cheese. Fold bottom and top edges of each tortilla over filling; roll sides up to enclose filling completely.
- Heat 2 tablespoons vegetable oil a large skillet over medium heat; fry burritos in batches, seam sides down, until tortillas are golden, about 2 minutes per side. Drain fried burritos on a paper towel-lined plate.

- Prepare pork carnitas according to directions HERE.
- To make pico de gallo, combine tomatoes, jalapeño, green onions, cilantro, lime juice, and salt in a small bowl. Refrigerate until ready to use.
- To serve, place 2/3 cup rice in each bowl, then top with 3/4 cup cooked pork carnitas. Spoon homemade pico de gallo over the top, then finally add any additional desired toppings.

- Heat oven to 160C/140C fan/gas 3. Rub the pork generously with salt. Whisk the chipotle with the tomato purée and sugar, then rub 2 tbsp of this over the underside of the pork. Whisk the rest with 300ml water to make a marinade. Lay the pork in a roasting tin and pour in the marinade - don't pour it over the skin. Cover with foil and roast for 3 hrs or until tender. About 30 mins before it's ready, scatter the pineapple round it, baste in the juices, re-cover and put back in the oven for the remaining 30 mins.
- Set the grill to high. Move the pork to another tin or baking tray, skin-up, and grill for 10 mins or until the skin blisters and crisps - keep a close eye, it can burn quickly. When the crackling is crisp, take out and rest for 20 mins, cut into eight slices and return to the tin with the pineapple and marinade and coat well.
- Serve with warmed tortillas and our curtido or our tomatillo salsa.

- Heat the oil in a medium pot over medium-high heat. Add 1/2 cup pico de gallo, the chopped chipotle and adobo sauce to taste; cook until the mixture starts to sizzle, about 2 minutes. Add the beans and 3/4 cup water; bring to a low boil, then stir in the chicken and cook until the mixture is slightly thickened, about 2 minutes. Stir in the cilantro and season with salt.
- Heat the tortillas as the label directs. Arrange the rice horizontally in the lower half of each tortilla, leaving a 1 1/2-inch border on all sides. Top evenly with the cheese, chicken mixture, lettuce and the remaining pico de gallo.
- Fold the bottom edge of each tortilla snugly over the filling, tuck in the sides and roll up tightly. Cut the burritos in half and serve with guacamole if using.

- In large skillet, heat half of the oil over medium heat; fry pork, breaking up with fork, until no longer pink, about 8 minutes. Drain off fat; remove pork and set aside.
- In same skillet, heat remaining oil; fry onion, garlic, cumin, ground coriander, salt and pepper, stirring occasionally, until onion is softened, about 5 minutes. Return pork to pan. I found this on the back of a can of mild Ro*Tel; I have used the regular Ro*Tel also, it just depends on your heat preference. This is so quick and easy and makes a nice change to ground beef burritos.

- In large skillet, brown pork in hot oil.
- Add both cans of mild diced tomatoes and green chilies.
- Cook 10 minutes.
- Stir in refried beans, heat through.

- Combine oregano, cumin, garlic powder, onion powder, crushed red pepper, salt and pepper. Rub spice mixture over both sides of steak, along with the vegetable oil. Refrigerate while preparing your other ingredients.
- In a small bowl, combine the tomatoes, red onion, jalapeño, and 2 tablespoons of chopped cilantro.
- Drizzle the lime juice and oil over the top of warm rice, sprinkle with 2 tablespoons chopped cilantro and salt; fluff with a fork.
- Heat a grill to medium-high. Coat grill grates with oil or nonstick spray. Cook steak for about 4 minutes per side, or to your liking. Transfer to a cutting board and let rest for 5 minutes. Slice thinly against the grain.
- Warm tortillas over a gas burner or in the microwave for about 15 seconds. Place on a flat surface, evenly distribute the rice, then steak, topped with beans, the pico de gallo and sour cream. Fold the flap nearest you over the filling, then fold in the sides. Roll burrito away from you, keeping it tight to form a log. Rest, seam side down.
- Serve with tortilla chips!

- Cut slits in the pork roasts and stuff the slices of garlic cloves in the holes. Do this with all the garlic slices all around the roast.
- Mix all the dry spices (salt, pepper, onion powder, garlic powder, cumin, chili powder, oregano and ground coriander) and rub liberally into the pork roast.
- Add the olive oil to a large pan and heat to medium high.
- Brown the roast on all sides. About 2-3 minutes on each side. Then set aside.
- To the slow cooker add your onion, bell peppers, chipotle peppers and apple cider vinegar and stir well.
- Place the roast on top of the vegetables and cook for 6-8 hours until the meat can fall apart with a fork.
- When down, shred the pork in the crock pot and mix well into the vegetables and sauce.
- Serve with the limes so that everyone can sqeeze some lime juice over their dishes before eating.
- Eat over rice or in tacos or burritos. Garnish with avocados, cilantro, sour cream, cheese or whatever you like.
