The heartiest bowl of poblano beef stew! This stew is simple but loaded with oh so much goodness. It's warm, it's cozy, it's perfect for chili evenings!

3 large poblano peppers
1 ½ pounds beef chuck roast (cut into 1- inch cubes) (see notes)
1 tablespoon oil
1 medium onion, chopped
1 tablespoon garlic, minced
1 ½ teaspoon ground cumin
1 teaspoon dried oregano
4 cups beef or chicken broth
1 chipotle pepper (plus 1-2 tablespoons adobo sauce (omit to make it less spicy)
1 (15 ounce) can fire-roasted tomatoes
2 medium potatoes, cut into 1 inch cubes
2 -3 tablespoons chopped cilantro

Steps:

  • POBLANOS: Char the poblano peppers over an open flame for about 5 minutes, turning as necessary to char evenly. You can also broil them under the broiler in the oven for about 5-7 minutes turning a couple times until all the sides are charred. Place the peppers in a bowl and cover the bowl with foil or plastic wrap for 10-15 minutes. You can brown the meat for the stew while you wait. When the peppers are done, use a spoon to help scrape off the charred skin. Remove the stem, seeds, and ribs and discard. Dice the chilis into 1 inch pieces, set aside until ready to use in the stew.
  • STEW: Heat the oil in a large dutch oven or stock pot over medium high heat. Sprinkle the beef with salt and pepper and brown in batches. Do not overcrowd the pot as the meat will steam rather than sear. Remove the browned beef to a plate.
  • Add the onions and scrape the brown bits on the bottom of the pan with a wooden spoon. Cook the onions for 3-5 minutes or until the start to turn translucent. Add the garlic, and cook for another 30 seconds before adding in the seared beef, poblano peppers, cumin, oregano, broth, chipotle pepper, adobo sauce, and fire roasted tomatoes.
  • Bring the stew to a boil before covering, lowering the heat, and allowing it to simmer for 1- 1 ½hours or until the beef is tender. Add the diced potatoes at this point and allow to cook for another 10-20 minutes or until the potatoes are cooked all the way through. Top with cilantro and serve with crusty bread.

1 1/4 pounds skinless, boneless chicken thighs, cut into 2-inch pieces
2 teaspoons ground cumin
Kosher salt and freshly ground pepper
1 onion, chopped
1 15-ounce can diced fire-roasted tomatoes with green chiles
1 chipotle chile in adobo sauce, seeded and chopped, plus 1 tablespoon sauce from the can
1/2 teaspoon dried oregano
1 cup frozen corn (preferably fire-roasted), thawed
8 corn tortillas
1/4 cup crumbled Cotija cheese
1 avocado, diced
1/2 cup fresh cilantro, torn

Steps:

  • Put the chicken in a 6- to 8-quart slow cooker and sprinkle with 1 teaspoon cumin, 1/2 teaspoon salt and a few grinds of pepper. Add the onion, tomatoes, chipotle and adobo sauce, oregano, the remaining 1 teaspoon cumin and 1/2 teaspoon salt. Cover and cook on low until the chicken is tender and the sauce is slightly thickened, about 7 1/2 hours. Add the corn and stir until warmed through.
  • Warm the tortillas in a dry skillet or in the microwave. Top each serving of stew with cheese, avocado and cilantro. Serve with the warm tortillas.

3 cloves garlic, chopped

  • Spray 4- to 5-quart slow cooker with cooking spray. In small microwavable bowl, microwave corn uncovered on High 2 minutes or until thawed. In slow cooker, place corn and all remaining stew ingredients; mix well. Cover and cook on Low heat setting 8 to 10 hours (or High heat setting 4 to 5 hours.)
  • Divide stew evenly among 6 bowls. To serve, top with avocado, tortilla chips, cilantro and sour cream.

1 cup tomatoes, chopped
1 1/4 cups sliced onions
1/2 chopped green bell pepper
3 -4 sprigs fresh cilantro

1 tablespoon bouillon, powder tomatoe and chicken flavor (preffer Knorr)

Steps:

  • Season the beef stew meat with the cumin, salt and pepper. Set aside.
  • In a large frying pan, heat oil and add the onions, bell pepper and tomatoes on medium high heat. Saute for about 5-7 mins or until translucent. Add the seasoned meat and brown (on High heat) for about 7-10 minutes.
  • Add 2 cups of hot water to the pan. Add the bullion, chipotle sauce/pepper Sazon Goya and stir.
  • Cover and cook on medium high heat for about 45 mins or until most of the liquid is absorbed then uncover and add 1 more cup of water. Cover and simmer for another 30 mins or until liquid is almost absorbed. Uncover and add another 1 cup of water and cilantro. Cover and simmer for 20-30 mins more. Turn heat off and let stand, covered, for another 10-15 mins for liquid to thicken. Serve with rice.

Return potatoes and reserved cooking liquid to saucepan; add butter, if desired, chipotle pepper, adobo sauce, salt and ancho chile pepper. Mash potatoes until just blended and slightly chunky.
  • Serve stew over sweet potatoes.

1/2 cup thinly sliced red onion

1 1/2 lbs boneless chuck roast, trimmed and cut into 1 inch cubes
salt (to taste)
fresh ground black pepper (to taste)
2 -3 tablespoons vegetable oil

1 (14 1/2 ounce) can tomato puree
1 -2 canned chipotle chile

Steps:

  • Season beef to taste with salt and pepper.
  • Brown beef on all sides in oil in a large skillet, but do not overcrowd pan.

  • Cook, stirring, until onion is tender, about 5 minutes.
  • Add tomato puree, chipotles, adobo sauce, and stock or water to meat, mixing well.
  • Simmer, stirring occasionally, over low heat, until meat is tender, about 1 1/2 hours (if stew starts to dry out just add some beef stock or water).

2 tbsp olive or rapeseed oil
500g braising beef (skirt, chuck or brisket all work well)
2 onions, chopped
4 garlic cloves, crushed
1 tbsp ground cumin
2 tsp ground coriander
2 tsp smoked paprika
1 tsp ground cinnamon
2 tbsp tomato purée
400g can chopped tomatoes
1-2 tbsp chipotle paste (optional)
2 beef stock cubes
100g brown lentils
400g can black beans, drained
400g can kidney beans, drained
1-2 tsp light brown soft sugar (optional)
4 corn tortilla wraps
vegetable oil, for frying
100g feta, crumbled
50g soured cream or natural yogurt
small bunch of coriander, leaves picked
1 avocado, stoned, peeled, halved and sliced
1 large red chilli, thinly sliced
1 lime, cut into wedges

Steps:

  • Heat half the oil in a large flameproof casserole over a medium-high heat. Tip in enough beef to cover the base of the pan in a single layer, being careful not to overcrowd the pan. Brown the beef on each side, turning until it has a deep brown crust all over - this will give the stew a deep, beefy flavour. Remove to a plate using a slotted spoon and continue cooking until all the beef is browned. Set aside.
  • Heat the remaining oil in the same pan, then tip in the onions, reduce the heat to low-medium and sizzle for 8-10 mins until soft, stirring and scraping the base of the pan to lift any browned bits.
  • Add the garlic, cumin, coriander, paprika, cinnamon and tomato purée. Stir for 1-2 mins until the spices are sizzling and aromatic, then tip in the chopped tomatoes and chipotle paste, if using, and crumble in the stock cubes. Return the beef to the pan with any resting juices, pour in 1.2 litres water, season and bring to a simmer.
  • Once bubbling, reduce the heat to low, cover with a lid and simmer for 1 hr 45 mins, stirring occasionally. Meanwhile, tip the lentils into a bowl, cover with cold water and leave to soak. Drain, then add to the stew, cover again and continue to cook for 45 mins more, or until the beef and lentils are tender.
  • Tip in all the beans, return to a simmer and bubble for 5 mins until the beans are warmed through. If your stew is soupy and you prefer it thicker, boil, uncovered, for a few minutes more until reduced to your liking. Taste for seasoning and add more salt or chipotle paste, if you like; it may also need some sugar depending on the tomatoes you've used (add up to 2 tsp). Will keep chilled for two days or frozen for two months. Leave to cool completely first.
  • If making the tortilla croutons, cut the wraps into small triangles and heat enough oil to cover the base of a deep frying pan. Fry over a medium heat for 2-3 mins, tossing in the pan until crisp. Or, simply crumble tortilla chips to make a quick, crunchy topping.
  • Serve the stew in bowls topped with your choice of feta, soured cream or yogurt, coriander, avocado and sliced chilli, lime wedges on the side for squeezing over and the tortilla croutons. Grind over some black pepper, if you like, before serving.
