Steps:
- Dice chicken and coat lightly with flour which has been seasoned with salt.
- Fry chicken in batches in hot oil until golden brown or until chicken is cooked through.
- Remove from oil, drain on paper towels.
- Repeat with remaining chicken.
- Pour off excess oil leaving one tablespoon of oil in pan.
- Add ginger to pan, saute gently one minute.
- Add honey, stir for one minute.
- Add combined cornflour, water, chilli sauce, lemon juice and soy sauce.
- Stir until sauce boils and thickens.
- Add chicken pieces, toss in sauce for three minutes or until chicken is heated through.
- Add sliced shallots, cook for a further minute.
- Serve with rice or chinese noodles.

- Heat the vegetable oil in a medium saucepan over high heat. Add the garlic, ginger, and chilis. Cook, stirring constantly until fragrant, about 15 seconds.
- Stir in the soy sauce, chicken broth, vinegar, brown sugar, sesame oil, red pepper flakes. Bring to a boil then reduce heat to medium and cook for 1 minute.
- Stir the water and cornstarch together until fully dissolved and pour it into the sauce. Cook, stirring constantly until the sauce thickens.

- In a small bowl, stir together the honey, soy sauce, rice vinegar, 1/4 cup water, and cornstarch.
- Put the oil in a medium saucepan over medium heat. Let it warm up for about 30 seconds, then add the garlic and cook until fragrant and just starting to color, 15-30 seconds.
- Add the red pepper flakes and cook until fragrant and the garlic is lightly browned, 15-30 seconds more.
- Quickly re-stir the honey mixture and pour it into the saucepan. Bring to a simmer, stirring frequently, reduce the heat to low, and simmer for about 5 minutes. Add more water if needed to achieve desired consistency.

I've always love crustacean dishes...especially prawns. In my hometown in Davao City, Philippines, there's one famous seafood resto that offers the best garlic prawns. I improved the dish by making it more spicy by adding...red and green chili peppers for that "kick".

- Remove legs and antennaes from prawns.
- In a bowl, mix sprite, rock salt, pepper -- add prawns in the marinade, refrigerate for 30 minutes.
- For the sauce, heat olive oil in a non-stick pan, saute garlic red and green peppers.
- Add oyster sauce, red pepper sauce, honey, vinegar, liquid seasoning, sesame oil, 1 tbsp minced parsley, peppercorn, oregano, curry powder and basil. Whisk until well mixed. Put in a bowl and set aside.
- In another non-stick pan, heat olive oil. Stir fry prawns for a minute, then pour 1/2 cup of the marinade.
- Let marinade boil and simmer for 5 minutes.
- Then pour in garlic & chili sauce -- mix well.
- Serve hot!

This sticky, crunchy, just spicy enough Chinese-style honey chilli chicken is quicker, tastier and healthier than anything you could order from the takeaway.

- Make the sauce by whisking together all the ingredients along with 4 tablespoons cold water. Set aside.
- In a medium bowl, toss the chicken pieces with the vegetable oil and sea salt. Stir the egg into the chicken, then add the flour and the cornflour and stir with a metal spoon until the chicken is well coated.
- Heat enough oil to just cover the bottom of a large wok or frying pan over a medium-high heat. Once the oil is shimmering, add the chicken pieces in batches and fry for a few minutes on each side until golden. Set the chicken aside to drain on a plate lined with kitchen paper.
- Discard all the oil in the pan and carefully wipe it clean with another piece of kitchen paper. Return the pan to a medium heat and gently fry the garlic, ginger and chilli in a teaspoon of oil for about a minute until fragrant. Return the chicken to the pan and stir in the sauce. Bring the sauce to a simmer and allow it to bubble away for a minute or so until it has thickened slightly and is coating the chicken.
- Serve immediately, with the chopped spring onions sprinkled over the top.

- Remove giblets from chicken and discard.
- Rinse chicken and cut into small serving-size pieces.
- Combine flour and salt.
- Coat chicken pieces with flour mixture.
- Heat oil in wok to 375ºF.
- Add chicken pieces, one at a time, to hot oil (cook only 1/3 of the pieces at a time).
- Cook until golden, about 5 minutes.
- Drain on paper towels.
