Keep your cool this summer by turning off the oven. This delicious green salad topped with cubes of Havarti cheese and slices of hard-cooked eggs is easy to make, and hearty enough to serve as a main course.

1 large head romaine lettuce (1 pound)
1 pint halved grape tomatoes
3 stalks thinly sliced celery
6 ounces cubed dill-flavored Havarti cheese (about 1 1/2 cups)
1 tablespoon Dijon mustard
3 tablespoons fresh lemon juice
1/4 cup olive oil
Coarse salt and ground pepper for seasoning
Hard-Cooked Eggs

Steps:

  • Cut romaine lettuce into bite-size pieces; place in a large bowl. Add grape tomatoes, celery, and cubed dill-flavored Havarti cheese.
  • In a small bowl, whisk together Dijon mustard and fresh lemon juice; whisk in olive oil in a steady stream until emulsified. Season with coarse salt and ground pepper.
  • Pour dressing over salad, and toss to combine. Serve topped with hard-cooked eggs. (See cook's note.)

1 large shallot, very thinly sliced

1 package soft herb-flavored cheese, crumbled (recommended: Boursin)
1 cup green peas

Steps:

  • Melt butter in a medium skillet over medium heat. Add shallots and cook 3 to 4 minutes. Whisk eggs with salt and pepper and combine with shallots then stir in the cheese and peas, cook 3 to 4 minutes until eggs are firming up but not yet dry. Serve immediately.

6 slices rustic bread
2 tablespoons extra-virgin olive oil, plus more for brushing and drizzling
Kosher salt and freshly ground black pepper

One 10-ounce container mushrooms, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
Red pepper flakes, as needed
One 28-ounce can crushed tomatoes
6 large eggs

Steps:

  • Heat a grill pan over medium-high heat. Brush the bread with some olive oil and season with salt and pepper. Grill until nicely toasted on both sides.
  • Meanwhile, heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the mushrooms, peppers and red pepper flakes. Season with salt and pepper and cook until the vegetables are just starting to brown, a few minutes. Add the tomatoes and bring to a simmer. Add some water if it is too thick.
  • Using a large metal spoon or ladle, form 6 evenly spaced divots in the sauce. Crack an egg into each divot and season with salt and pepper. Cover and simmer until the eggs are cooked to your liking.
  • Spoon some sauce over each slice of bread and top with an egg. Drizzle with olive oil.

1 lb smoked fish fillet
2 cups water
1 bay leaf (optional)
2 tablespoons butter
1 tablespoon vegetable oil
2 large onions, sliced thin
2 tablespoons chopped green onion tops, for garnish (green part only)
black pepper, to taste,for garnish
4 tablespoons butter
4 tablespoons flour
2 cups milk
3 hard-boiled eggs, chopped
1 dash salt
1 dash pepper

Steps:

  • Fish and onions should be cooked at the same time: Keep both warm while making egg sauce.
  • This dish is served with hot mashed potatoes…enough for four servings.
  • Fish: Cut the fish into strips and place it in a saucepan with water, bay leaf, enough to cover the fish.
  • Bring the mixture to a simmer and cook for 20 minutes.
  • Set aside, discard bay leaf, and use a fork to flake the fish into pieces.
  • Place over low heat.
  • Onions: In a large skillet, melt the butter with the oil over medium heat.
  • Add the onion and cook, stirring, until the onions are golden brown and cooked through.
  • Set aside warming and start egg sauce.
  • Egg sauce: In heavy saucepan over low heat, melt butter.
  • Stir in flour with a wire whisk.
  • Cook over low heat for three minutes, stirring constantly.
  • Do not allow the mixture to brown.
  • Gradually stir in milk, whisking constantly.
  • Cook over low heat for 3-5 more minutes until sauce begins to thicken.
  • Season to taste then add chopped egg.
  • Drain fish.
  • To serve: Place a serving of onions on mashed potatoes, top w/ a serving of smoked fish.
  • Pour egg sauce over fish/potatoes and garnish with green onion tops and pepper.
  • Serve immediately.
