A spicy vegetarian dish which is great for feeding friends in a hurry. Try it with smoked mackerel, too

140g basmati rice
2 eggs
1 tbsp olive oil
1 onion , chopped
1 red chilli , chopped
2 tbsp medium curry powder
1 tsp brown or black mustard seeds
2-3 pinches cayenne pepper
100g marinated tofu (we used Cauldron)
½ bunch spring onions , sliced
handful flat-leaf parsley , chopped

Steps:

  • Cook the rice and boil the eggs in the same pan for 8-9 mins. Meanwhile, heat oil in a non-stick frying pan and soften the onion and chilli for 5 mins. Add all the spices and fry for 1-2 mins more.
  • Drain the rice and stir into the spicy onion with a splash of water and the tofu. Season well, then heat through gently for a few mins until piping hot. Peel and quarter the boiled eggs. Stir the spring onions and parsley into the rice, divide between 2 bowls and top with the eggs.

Try our veggie twist on kedgeree for a healthy supper. Like the traditional version, it's served with boiled eggs and has a lovely mild curry flavour

350g long grain brown rice
150g green beans , trimmed and halved
4 medium eggs
2 tbsp olive oil
2 onions , sliced
2 garlic cloves , crushed
2 heaped tbsp medium curry powder
1 tsp ground turmeric
2 bay leaves
200g spinach
100g cherry tomatoes , halved
½ small bunch coriander , chopped
1 green chilli , sliced
1 lemon , cut into wedges

Steps:

  • Rinse the rice under cold running water, rubbing with your fingers to remove any excess starch. Cook following pack instructions, then drain well.
  • Bring another pan of water to a simmer. Cook the green beans for 2 mins, then transfer to a bowl with a slotted spoon and set aside. Boil the eggs in the pan for 7 mins, then drain and transfer to a bowl of cold water to cool.
  • Meanwhile, heat the oil in a large frying pan over a medium heat. Fry the onions for 10-15 mins until golden. Add the garlic, curry powder, turmeric and bay leaves and cook for 1 min more. Stir in the spinach, tomatoes and a splash of water and cook for another 5 mins until the spinach has wilted.
  • Fold the cooked rice and green beans through the spinach mixture and cook for a few minutes until the rice is warmed through. Drain and gently peel the eggs, then slice in half.
  • Top the rice mixture with the eggs, coriander and chilli. Serve the vedgeree with the lemon wedges on the side for squeezing over.

2 tsp rapeseed oil
1 large onion , halved and sliced
thumb-sized piece of ginger , finely chopped
½ tsp cumin seeds
½ tsp ground cinnamon
6-8 cardamom pods , seeds crushed
1½ tsp ground turmeric
1½ tsp ground coriander
1 red chilli , deseeded and sliced
1 garlic clove , finely chopped
1 large red pepper , deseeded and roughly chopped
70g brown basmati rice
375ml vegetable stock , made with 2 tsp bouillon powder
160g baby spinach leaves , roughly chopped
3 tbsp fat-free natural yogurt
1 tbsp finely chopped mint or coriander
2 skinless wild salmon fillets
1 tbsp toasted almonds , to serve

Steps:

  • Heat the oil in a large frying pan and fry the onion and ginger for 5 mins or until soft. Add the cumin, cinnamon, crushed cardamom seeds, and 1 tsp each of the turmeric and coriander. Cook for 30 secs until fragrant. Add the chilli, garlic, pepper and rice, stir briefly, then pour in the stock. Cover and simmer for 35 mins or until the rice is tender and the stock has been absorbed. If the rice is cooked but some liquid remains, remove the lid and simmer uncovered to allow the liquid to evaporate. Add the spinach, cover and cook for 3 mins to wilt.
  • Meanwhile, prepare the salmon. Heat the grill to medium and line a baking sheet with foil. Mix the yogurt with the mint or coriander and the remaining turmeric and ground coriander. Spread the yogurt mixture over the salmon, then transfer to the prepared baking sheet and grill for 8-10 mins until the fish can be flaked easily with a fork. Top the kedgeree with the salmon fillets or flake the fish into it, and scatter over the almonds to serve.

Easy spiced salmon kedgeree image

Smoked salmon adds a new twist to this kedgeree - it's perfect for Saturday brunch

300g basmati rice
100g unsalted butter
2 tbsp olive oil
1 tbsp hot curry paste (Madras)
1 small red onion , finely chopped
225g hot smoked salmon , cut into chunks or flaked
4 hard-boiled eggs , shelled then roughly chopped
4 spring onions , cut into 3cm lengths and finely shredded
juice of 1 lime
2 tbsp each chopped fresh coriander and flatleaf parsley

Steps:

  • Throw the rice into a large heavy-based saucepan, pour over 700ml/11⁄4 pints water and sprinkle in a good shake of salt. Cover and bring to the boil, then remove the lid and allow all the water to be absorbed - this should take about 15 minutes. Turn off the heat, cover again and allow to steam dry.
  • Melt half the butter with the oil in a large frying pan. Stir in the curry paste and cook until you start to smell the wonderful aromas.Now add the onion and cook until softened and beginning to brown.
  • Next throw in your rice and quickly stir to make sure all the buttery juices are absorbed and the rice is heated through. Now mix in the salmon, eggs, spring onions and lime juice. Stir gently, chuck in the herbs along with cubes of the remaining butter and serve in warm bowls.

A hearty brunchtime meal with smoked haddock, boiled eggs, rice and curry flavours

300g undyed smoked haddock fillet, skin on
2 bay leaves
300ml milk
4 eggs
handful chopped parsley
handful chopped coriander
2 tbsp vegetable oil
1 large onion, finely chopped
1 tsp ground coriander
1 tsp ground turmeric
2 tsp curry powder
300g easy-cook long grain rice, rinsed under running water

Steps:

  • For the rice, heat 2 tbsp vegetable oil in a large, lidded pan, add 1 finely chopped large onion, then gently fry for 5 mins until softened but not coloured.
  • Add 1 tsp ground coriander, 1 tsp ground turmeric and 2 tsp curry powder, season with salt, then continue to fry until the mix starts to go brown and fragrant; about 3 mins.
  • Add 300g rinsed easy-cook long grain rice and stir in well. Add 600ml water, stir, then bring to the boil. Reduce to a simmer, then cover for 10 mins.
  • Take off the heat and leave to stand, covered, for 10-15 mins more. The rice will be perfectly cooked if you do not lift the lid before the end of the cooking.
  • Meanwhile, put 300g skin-on undyed smoked haddock fillet and 2 bay leaves in a frying pan, cover with 300ml milk, then poach for 10 mins until the flesh flakes. Remove from the milk, peel away the skin, then flake the flesh into thumb-sized pieces.
  • Place 4 eggs in a pan, cover with water, bring to the boil, then reduce to a simmer. Leave for 4½-5 mins, plunge into cold water, then peel and cut the eggs into quarters.
  • Gently mix the fish, eggs, a handful each of chopped parsley and coriander, and rice together in the pan. Serve hot, sprinkled with a few extra herbs.

2 tbsp vegetable or sunflower oil
2medium onions , halved and very thinly sliced
350g undyed smoked haddock
175g lightly smoked salmon fillet
1 dried red chilli (Angela used Kashmiri)
½ full-fat milk
3 tbsp vegetable or sunflower oil
1medium onion , chopped
about 14 fresh or freeze-dried curry leaves
4 cardamom pods , split
1 cinnamon stick , broken into pieces
280g basmati rice
½ tsp turmeric
50g butter
2 eggs
handful of coriander leaves and some lime wedges, to serve

Steps:

  • For the crisp onions, heat the oil in a frying pan, add the onions with a pinch of salt (which helps to stop them burning), then cook on a medium heat, stirring occasionally, until deep golden, about 20-25 mins. When done, spread on paper towels and leave to crisp up. While the onions are frying, put both fish in a frying pan with the chilli. Pour the milk over, cover and simmer for 4 mins. Take off the heat and let stand, covered, for 10 mins to finish gently cooking the fish.
  • Meanwhile, heat the 3 tbsp oil in a deep frying or sauté pan (with a lid). Add the onion, curry leaves, cardamom and cinnamon and fry until the onion is soft and golden, about 7-8 mins, stirring often. Lift the fish from the milk with a slotted spoon, discard the skin and any bones, cover to keep warm and set aside. Make the milk up to 600ml/1pt with water. Rinse the rice in warm water in a colander, drain, then stir it into the onion. Keep stirring for 1 min so the rice is coated. Pour in the milk mix and stir in the turmeric. Bring to a boil, then simmer for 10 mins, covered, lowering the heat if it starts to stick on the bottom.
  • When the rice is tender, remove from the heat, drop the butter on top so it melts in, then lay the whole pieces of fish on the rice. Cover and leave for the flavours to mingle. Meanwhile, put the eggs in a pan, cover with cold water and bring to the boil, then boil for 6 mins (for lightly boiled). Remove from the heat and plunge into cold water, cracking the shells against the side of the pan. Peel off the shells and quarter the eggs.
  • To serve, break the fish into big pieces with a fork, throw in the coriander and stir gently to mix without breaking up the fish, adding the eggs at the end. Season, scatter crisp onions on top and serve with lime wedges for squeezing over.
