This easy Chinese Chow Mein recipe is made with noodles, vegetables, chicken, and a simple chow mein sauce!

2 boneless skinless chicken breasts (, cut into bite-size pieces)
1 Tablespoon oil ((canola or vegetable))
1 1/2 cups Shredded cabbages ((*see note))
2 cups carrots (, shredded or julienne sliced (*see note))
2 ribs celery (, chopped)
4 green onions (, sliced with whites and green separated)
2 cloves garlic (, minced)
1 pound refrigerated Yaki-Soba noodles (discard seasoning packet**)
1 cup fresh bean sprouts ((optional))
1/4 cup low-sodium soy sauce
1 1/2 teaspoons sesame oil
1 Tablespoon oyster sauce ((***see note))
2 teaspoons freshly grated ginger
1 Tablespoon light brown sugar
1 teaspoon cornstarch

Steps:

  • Prepare noodles according to package instructions.
  • In a small bowl whisk the sauce ingredients together: soy sauce, sesame oil, oyster sauce, ginger, sugar, and cornstarch
  • Heat a large pan or wok on high heat. Add oil. Add chicken, season with salt and pepper and stir fry just until cooked through.
  • Add cabbage, carrots, celery, and the whites of the chopped green onion and stir fry for just for 1-2 minutes or until cabbage has wilted.
  • Add the garlic and cook for 30 seconds.
  • Add the pasta and sauce and cook for 1-2 minutes until the sauce has thickened. Add remaining green onion and fresh bean sprouts, if desired. Serve immediately.

No need to order in chow mein when you can make it yourself, this is just as good if not even better than any Chinese restaurant or take-out -- if you prefer more flavor then add in more soy sauce --- if desired after the pork is finished browning you may add in fresh minced garlic and stir for 2 minutes, this is only optional --- you will love this!

1 1/2 lbs lean pork, thinly sliced
3 garlic cloves, chopped (optional)
1/4 cup cornstarch
2 teaspoons sugar
5 tablespoons soy sauce (divided, more is desired)
2 tablespoons vegetable oil
2 tablespoons shortening
1 3/4 cups water, divided
2 stalks celery, diced
1 large onion, chopped
1 tablespoon molasses (do NOT omit)
1 (8 ounce) can sliced water chestnuts
1 lb bean sprouts (or more)
1 (4 ounce) can mushrooms, drained
salt and pepper
1 bunch green onion (optional)
blanched almond, lightly toasted

Steps:

  • Cut meat into thin strips.
  • Combine 2 tbsp cornstarch with sugar, blend in 1 tbsp soy sauce and 2 tbsp oil; mix to blend.
  • Pour over pork strips; toss well to coat, marinade in mixture for 20 minutes.
  • In a wok or large saute pan heat 2 tablespoons shortening; brown the meat lightly on all sides in hot shortening (after browning the pork you may add in chopped garlic and saute for 2 minutes if desired).
  • Add remaining 4 tbsp soy sauce and 1-1/2 cups water; simmer, covered on low heat for 45 minutes.
  • Add in the celery and onions; simmer for 15 minutes more.
  • In a small bowl, blend in remaining cornstarch with 1/4 cup water; stir into meat mixture.
  • Add molasses, water chestnuts, bean sprouts and mushrooms; heat thoroughly.
  • Season with salt and pepper.
  • Garnish with chopped green onions and toasted almonds.

2 1/2-3 lbs hamburger
3 cups chopped celery
3 cups chopped onions
4 cups cooked rice
2 (10 3/4 ounce) cans condensed cream of mushroom soup
1 (10 3/4 ounce) can cream of celery soup
3 (4 ounce) cans sliced mushrooms
3 tablespoons firmly packed brown sugar
6 teaspoons soy sauce
1 (4 ounce) can sliced water chestnuts, Drained Well
1 (4 ounce) can bamboo shoots, Drained Well
1 (12 ounce) package chow mein noodles

Steps:

  • Preheat oven to 350 °F.
  • In a skillet, brown the hamburger, celery and onion, then drain well.
  • Stir hamburger mixture, soup, mushrooms, brown sugar, soy sauce, rice, water chestnuts and bamboo shoots.
  • Bake covered in a 4 quart casserole dish for 30 minutes.
  • Uncover after 30 minutes, add chow mein noodles and mix well, cook for an additional 30 minutes or you can add the chow mein noodles just before serving.
  • I don't use the bamboo shoots or water chestnuts.
  • NOTE: You can use cream of chicken soup if you want.

12 ounces Chinese Egg Noodles
8 ounces boneless, skinless Chicken Breasts or Thighs
3 tablespoons Soy Sauce (divided)
1 tablespoon Rice Wine or Dry Sherry
1 tablespoon Dark Sesame Oil
4 tablespoons Peanut Oil (divided)
2 Baby Bok Choy (sliced into 1-inch strips)
2 cloves Garlic (finely chopped)
1/2 teaspoon minced peeled fresh ginger
1 Carrot (cut into matchsticks)
2 ounces Snow Seas (ends removed)
4 ounces Mung Bean Sprouts
2 ounces Ham (finely shredded)
10 dried Shittake Mushrooms (rehydrated, drained and thinly sliced)
3 tablespoons Oyster Sauce
4 Scallions (finely chopped)
Salt and freshly ground Black Pepper (to taste)
2 tablespoons Chow Mein Noodles (to serve)

Steps:

  • Cook the egg noodles according to package instructions. Drain in a colander in the sink and rinse under cold running water. Shake the colander to drain off excess water and pat the noodles dry with a towel.
  • In a medium bowl, combine 2 teaspoons soy sauce, rice wine or sherry and sesame oil. Mix well.
  • Slice the chicken into fine, 2-inch shreds. Add to soy sauce mixture. Set aside to marinate for about 10 minutes.
  • Heat 1/2 of the peanut oil in a wok or large frying pan over a high heat.
  • When oil is very hot, but not smoking, add the chicken mixture. Stir-fry for about 2 minutes. Transfer chicken to a plate, and keep warm.
  • Wipe the wok clean with a paper towel.
  • Add remaining peanut oil and heat.
  • Add bok choy, garlic, ginger, carrots, snow peas, bean sprouts, ham and mushrooms. Stir-fry for another minute or so.
  • Add in the noodles, oyster sauce, scallions and remaining soy sauce, to taste. Continue to stir-fry until the noodles are heated through.
  • Taste. Add salt and pepper, to taste.
  • Add chicken and any juices to the noodle mixture. Bring to a boil, and stir to coat the chow mein mixture.
  • Transfer mixture to a serving bowl or plate and sprinkle with chow mein noodles.
  • Serve hot.

3 ounces dried chuka soba noodles, or other Chinese egg noodles
1/4 cup, plus 2 tablespoons peanut oil
Kosher salt
1/2 cup chicken broth, homemade or low-sodium canned
3 tablespoons oyster sauce
1 tablespoon dark soy sauce, plus more for the table
2 teaspoons cornstarch
1 teaspoon sugar
1 boneless, skinless chicken breast (about 6 ounces), cut into thin 2-inch-long strips
1 teaspoon dark Asian sesame oil
1 heaping tablespoon minced peeled fresh ginger
3 cloves garlic, minced
1 scallion, white and green minced
Freshly ground black pepper
1/2 medium yellow onion, thinly sliced
1 stalk celery, thinly sliced on the diagonal
10 dried shittake mushrooms, rehydrated, drained, and thinly sliced
1/3 cup thinly sliced canned water chestnuts
6 ounces fresh mung bean sprouts
3 cups cooked white rice, hot

Steps:

  • Boil the noodles according to package instructions. Drain in a colander in the sink and rinse under cold running water. Shake the colander to drain off excess water and pat the noodles dry with a towel. Heat 1/4 cup of the peanut oil in a large seasoned or non-stick skillet over high heat. Add the noodles, spreading them out to evenly cover the skillet, and fry, turning once, until golden brown and crispy, about 8 minutes. (Break the noodles up, by stirring, near the end of the cooking). Transfer noodles to a paper towel-lined plate and season with salt to taste. Set aside. Discard any excess oil and wipe out the pan. Whisk together the chicken broth, oyster sauce, soy sauce, cornstarch, and sugar in a small bowl, and set aside. Season the chicken with the dark sesame oil, salt, and pepper, and set aside. Heat the skillet over high heat. Heat the remaining 2 tablespoons peanut oil until very hot. Add the ginger, garlic, and scallion and stir-fry, until fragrant, about 30 seconds. Add the chicken and stir-fry, until lightly browned, about 1 1/2 minutes. Add the onion, celery, and mushrooms and stir-fry, until crisp-tender, about 2 minutes. Add the water chestnuts and spread the ingredients to the outside of the pan to form a well in the center. Pour the chicken broth mixture into the well, bring to a boil, and stir to coat the chow mein mixture. Stir in the bean sprouts and remove from the heat. Season generously to taste with pepper. Transfer chicken chow mein to a warm platter and top with the fried noodles. Serve immediately with rice. Pass more soy sauce at the table.

1 pound ground beef
1 medium onion, chopped
1 bunch celery, sliced
2 cans (14 ounces each) Chinese vegetables, drained
2 envelopes brown gravy mix
2 tablespoons soy sauce
Hot cooked egg noodles or rice

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Transfer to a 3-qt. slow cooker. Stir in the celery, Chinese vegetables, gravy mixes and soy sauce. Cover and cook on low until celery is tender, 4-6 hours, stirring occasionally. Serve with noodles.

225g dried or fresh egg noodles
1 tbsp sesame oil, plus 1 tsp
100g boneless, skinless chicken breasts, cut into fine shreds
2½ tbsp groundnut oil
2 garlic cloves, finely chopped
50g mangetout, finely shredded
50g prosciutto or cooked ham, finely shredded
2 tsp light soy sauce
2 tsp dark soy sauce
1 tbsp Shaohsing rice wine or dry sherry
½ tsp freshly ground white pepper
½ tsp golden caster sugar
2 spring onions, finely chopped
2 tsp light soy sauce
2 tsp Shaoxing rice wine or dry Sherry
1 tsp sesame oil
½ tsp freshly ground white pepper

Steps:

  • Cook 225g egg noodles in a large pan of boiling water for 3-5 mins, then drain and put them in cold water. Drain thoroughly, toss them with 1 tbsp sesame oil and set aside.
  • Combine 100g chicken breasts, cut into fine shreds, with 2 tsp light soy sauce, 2 tsp Shaohsing rice wine or dry sherry, 1 tsp sesame oil, ½ tsp white pepper and ½ tsp salt for the marinade, mix well and then leave to marinate for about 10 mins.
  • Heat a wok over a high heat. Add 1 tbsp groundnut oil and, when it is very hot and slightly smoking, add the chicken shreds.
  • Stir-fry for about 2 mins and then transfer to a plate.
  • Wipe the wok clean, reheat until it is very hot then add 1½ tbsp groundnut oil.
  • When the oil is slightly smoking, add the 2 finely chopped garlic cloves and stir-fry for 10 seconds.
  • Add 50g finely shredded mangetout and 50g finely shredded prosciutto, and stir-fry for about 1 min.
  • Add the noodles, 2 tsp light soy sauce, 2 tsp dark soy sauce,1 tbsp Shaohsing rice wine or dry sherry, ½ tsp white pepper, ½ tsp golden caster sugar, 2 finely chopped spring onions and 1 tsp salt.
  • Stir-fry for 2 mins. Return the chicken and any juices to the noodle mixture. Stir-fry for about 3-4 mins or until the chicken is cooked.
  • Add 1 tsp sesame oil and give the mixture a few final stirs. Put on a warm platter and serve immediately.
