GLUTINOUS RICE BALLS SOUP (PLAIN TANG YUAN IN SOUP)



Glutinous rice balls soup (Plain tang yuan in soup) image

One of the easiest Chinese desserts to make, the most basic version requires only 3 ingredients!

1 C glutinous rice flour
½ C WARM water
⅛ teaspoon tumeric powder (golden) (Substitute: turmeric paste. Use sparingly as turmeric is strong)
½ teaspoon pure cocoa powder (brown)
½ teaspoon beetroot powder (pink) (Substitute: beetroot juice)
½ teaspoon matcha powder (green)
½ teaspoon charcoal powder (black) (Maybe only for non-Chinese New Year days, or if you want a contrarian CNY party!)

3 C Water
2 thumb sized Ginger, sliced
Brown sugar, to taste
3 C Water
Dried Osmanthus Flowers, to taste (I usually go for 7-8g as I like the flavour strong. You can use less if adding osmanthus sugar.)
Rock sugar or osmanthus sugar (Substitute: brown sugar, white sugar or osmanthus syrup)

Steps:

  • For the plain tang yuan: Mix the glutinous rice flour with the warm water. If you're making flavoured/ coloured tang yuan, add some of the suggested natural colourings in the ingredients list above.
  • Make sure it's not too hot (so you don't burn yourself) then knead with your hands. If the dough is too sticky, add more glutinous rice flour. If too dry and hard, add more warm water teaspoon by teaspoon.
  • Separate the dough into equal sized pieces, then roll between the palms of your hands to form balls. Don't place them too close to each other or they'll stick
  • Bring water to the boil- when at a rolling boil, add the glutinous rice balls. Don't overcrowd the pot as they expand in the boiling water! Keep stirring or they'll stick to the bottom of the pot. They're cooked when they float (took me 3-4 minutes).

1 gallon chicken broth
1/2 gallon water
1/8 cup shrimp, dry
4 pork sausage, Chinese, slice
1 lb pork, slice
1 lb shrimp, deveined and shell
1 teaspoon salt
3 tablespoons oil
6 dried black mushrooms, soak and remove stems and slice into 1/4 inch pieces
3 tablespoons turnips, Chinese dried (choan choy)
3 lbs glutinous-rice flour, Mochiko brand
4 cups water
green onion, sliced
cilantro
sesame oil
soy sauce

Steps:

  • In a large stockpot add in the chicken broth and water brings to a boil.
  • In a saucepan sauté the shrimps, sausage and pork pour into the stock pot and pour into the stock pot.
  • In a very hot saucepan add oil and sauté the salted shrimps and when pink pour into the stock pot and pour into the stock pot.
  • In the hot broth combine the shrimp, sausage, and mushroom simmer for 10 minutes and add in the sauté shrimps and combine. Using a bamboo strainer removes the mixture and some of the broth into a warm pot and keeps warm. Add in the turnip and blend together and add salt if needed.
  • In a large mixing bowl add rice flour and slowly add in the water to combine. Roll into 1" balls and place onto a sheet pan. After all of the mixture is done; drop the finish the rice balls into the hot broth and when the rice balls is floating it done. Add in the shrimp mixture back into the pot and combine and into serving bowl.
  • Spoon the mixture into the bowl and garnish with green onion and parsley. Let each quest season with sesame oil and soy sauce.

  • Using a mortar and pestle, grind sesame seeds. Add 3 tablespoons melted coconut oil, and mash until a slightly coarse paste forms, 5 to 7 minutes. Transfer mixture to a small bowl; stir in granulated sugar and remaining 2 tablespoons melted coconut oil. Chill, uncovered, just until sesame mixture holds it shape when rolled, about 7 minutes. Roll sesame mixture into 32 balls (1 level teaspoon each); arrange on a baking sheet. Chill at least 10 minutes or until ready to use.
  • While sesame balls chill, lightly dust a baking sheet with white rice flour; set aside. Bring a large pot of water to a boil over high. While water comes to a boil, stir together glutinous rice flour and white rice flour in a large heatproof bowl. Stir in 1 cup water until flour mixture absorbs all water. Knead until a smooth ball forms, about 3 minutes. Divide dough in half.
  • Place 1 dough portion on a work surface very lightly dusted with white rice flour; cover remaining dough portion with a very damp paper towel. Gently roll dough portion on work surface into a 16-inch-long rope (about 1 inch thick). Dust knife blade with white rice flour, and slice rope crosswise into 16 (1-inch-long) pieces (1/2 ounce each). Cover dough pieces with a very damp paper towel. Transfer 16 chilled sesame balls to a plate. Working with 1 dough piece at a time, roll dough piece into a ball using your hands. Using your thumb, make a deep indentation in ball. Place 1 sesame ball in indentation; spread dough evenly around sesame ball to enclose. Using your hands, gently roll into a smooth ball without any seams or cracks. Place rice ball on reserved floured baking sheet. Repeat process with remaining 15 dough pieces and remaining 15 sesame balls. If dough begins to crack when assembling, wet hands with water, shake off excess, and gently knead dough piece until pliable.
  • Add assembled rice balls to boiling water, and gently stir to prevent balls from sticking to one another and bottom of pot. Cook, gently stirring occasionally and adjusting heat as necessary to maintain a gentle boil, until rice balls expand slightly and rise to the surface and skin of rice balls appears almost translucent, about 15 minutes. Meanwhile, repeat step 3 with remaining dough portion and remaining 16 chilled sesame balls.
