Steps:
- Place all the ingredients except for the spice mixture in a medium-sized pot and bring to a boil. Reduce the heat to medium-low and simmer uncovered for 30 minutes. Use an immersion blender or transfer to a blender to puree until smooth (then return to pot).
- Place the whole spices (skip if using store-bought five spice powder) in a small dry pan and toast over medium-high heat just until fragrant. Be careful not to scorch the spices or they will taste bitter. Let the spices cool and then place the whole spices in a piece of cheesecloth tied shut with string or in a tea sachet. Do the same if using store-bought ground five spice powder.
- Place the spice packet in the pot with the plum sauce and continue to simmer uncovered for 25-45 minutes until the sauce is thickened to the desired consistency. Discard the spice packet. Let the sauce cool. Store in the fridge in an airtight non-reactive container. Will keep for up to 2 weeks.
- CANNING INSTRUCTIONS: Ladle the hot plum sauce into sterilized jars, seal with the lids and process in a boiling water canner for 15 minutes. Turn off the heat and let sit for 5 minutes. Remove the jars and let sit undisturbed for 24 hours then check the seals. Will keep in a dark, cool place for at least a year.

CHINESE PLUM SAUCE
This tangy sauce is perfect, it was wonderful served with pork spring rolls. This easy recipe doesn't require you to peel the fruit. The skins provided tartness that complimentes the sweetness of the fruit. The plum skins also provide natural pectin to thicken the sauce. Posted here for play in Culinary Quest, recipe courtesy...

PUMPKIN EGGROLL SAUCE
This recipe is a bit different than some others. It has a great flavor. I love this sauce for egg rolls. A chef friend of mine gave this to me a very long time ago. Whenever I know I will be making Chinese Food I make this a few days ahead of time so the flavors could blend.

Steps:
- Heat the oil in a wok or large frying pan until very hot.
- Whilst the oil is heating, place chicken in a bowl and sprinkle on the cornflour. Mix together with a fork or your hands until the chicken is coated.
- Now break the egg into the bowl with the chicken, and use a fork to mix everything together thoroughly. There should be no egg pooling at the bottom of the bowl. If there is, discard it.
- Next, sprinkle on the flour, followed by salt, pepper, garlic salt and paprika. Mix everything together with your hands. The chicken should be well-coated, but will also be sticky.
- Add the chicken to the wok and cook on a high heat for 6-7 minutes, turning two or three times during cooking, until well browned. You may need to cook in two batches (I find I can do it in one batch so long as there are no more than 3 chicken breasts).
- Once golden brown, add the plum slices, peppers and garlic. Cook, with the chicken for 2 minutes, stirring often, until the plum starts to soften.
- Now add all of the sauce ingredients to the wok, stir and bubble on a high heat until the sauce reduces by about a third (should take 2-3 minutes).
- Turn off the heat and divide between four bowls. Serve with boiled rice and top with spring onions and chilli flakes.

CHINESE PLUM SAUCE
The condiment sū méi jiàng is typically made with plums, vinegar, sugar and some spices. Our version of plum sauce has the perfect balance of sweetness, brightness and light spice. It's traditionally used as a dipping sauce for fried foods like spring rolls, egg rolls and fried wontons, and for basting duck, chicken and pork. But there's no need to stop there. Try it tossed with noodles or a stir-fry, or mixed into a salad dressing for a twist.

- Allow the mixture to cool for 5 minutes, then transfer to a blender, filling halfway. Put the lid on, leaving one corner open. Cover the lid with a kitchen towel to catch splatters, and pulse until smooth. Alternatively, use an immersion blender until smooth.

- Transfer to a medium bowl or plate to cool to room temperature, about 2 hours.
- The sauce can be stored in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 2 months.

- You will need to pit the plums sooner or later. If you are using domestic, freestone plums, cut them in half and pop out the pit. Most plums, however, have fruit that sticks to the pit. In this case, you can do one of three things: Use a cherry pitter to remove the pits; slice and cook, then strain; or freeze the plums whole to soften, then cook and strain. Freezing loosens the fruit's grip on the pit. Either way you will need some way to strain the pulp from the pits. I use a simple food mill.
- I cook the plums in two stages. In the first stage, I put just a little water in the bottom of a heavy pot and add all the plums. Turn the heat to medium and, once they are simmering a little, use a potato masher to squash them as they cook. Keep agitating the plums as you simmer them gently -- you will probably need to turn the heat down at some point -- until most of the flesh comes off the pits. This takes about 20 to 35 minutes.
- Move all the plums to a food mill. Pick out as many pits as you can right off the bat. Mill the plums into a coarse puree, removing pits as you go. This is actually really easy with domestic plums, as both the pit and the plum itself is larger than its wild cousin. Wild plums are only about the size of a large cherry, so this stage will take a bit longer with them.
- Once the cooked plums are free of pits, return them to the pot along with all the other ingredients. Simmer gently for another 30 minutes, until all the flavors are melded and the garlic, shallot and ginger have softened. Pour everything in to a blender and puree until smooth.

BEST CHINESE SAUCES AND SEASONING RECIPES
From thespruceeats.com
Author Rhonda ParkinsonPublished 2014-08-27Estimated Reading Time 3 mins
- Soy Sauce. Ubiquitous in Chinese cooking, soy sauce is used in marinades, sauces, as a dip and more. Light soy sauce (also called thin soy sauce) is lighter and saltier, while dark soy sauce has a darker color and richer flavor.
- Hoisin Sauce. This thick, dark brown sauce is known for its pungent, slightly sweet flavor with just a bit of heat. Hoisin sauce is used in sauces, to marinate meat, especially pork, and as a dip.
- Rice Wine. Indispensable in Chinese cooking, rice wine is used as a tenderizer in marinades, to add flavor to sauces and in many dishes. Fortunately, good quality rice wine is becoming more widely available.
- Rice Vinegar. While there are exceptions, most Chinese vinegar is rice-based. Generally milder and with more subtle flavor than western vinegar, Chinese rice vinegar is a key ingredient in several recipes, including sweet and sour and hot and sour dishes, and is used as a dip.
- Oyster Sauce. Made from oyster extract and spices (and frequently thickened with cornstarch and with caramel added for color), oyster sauce is used to enhance existing flavors and add a darker color to dishes.
- Asian Sesame Oil. All it takes is a small amount of this dark colored oil, made from pressed and toasted sesame seeds, to add flavor to marinades, dips, and cooked dishes.
- Chili Paste/Sauce. Made from chili peppers and salt, with garlic and other seasonings, a dash of chili paste is all that is needed to add heat to dishes.
- Chili Bean Sauce. Not to be confused with regular chili paste or sauce, this thick, spicy chili bean sauce is made with chilis, fermented soybeans and often fermented broad beans and a variety of seasonings.
- Plum Sauce. While in the West it’s known mainly as a dip, in China this jam-like sauce with a sweet and sour flavor is also used in cooking. In any event, you’ll want to keep a jar on hand, or you can make your own plum sauce.
THE 9 BEST PLUM SAUCE SUBSTITUTES FOR YOUR RECIPES
From myconsciouseating.com
- Homemade plum sauce. If you don’t happen to have any plum sauce in your fridge, you can simply make some! Perhaps you’re skeptical about cooking your own sauce, but with the right recipe, it can turn out just as good as the “real deal”.
- Duck Sauce. Duck sauce is often mistaken for plum sauce, as they can have similar appearance, texture, and uses. However, this sauce usually has a bright orange color, it is translucent, and has a jelly-like structure.
- Sweet and sour sauce. If you’re looking for that sweet and sour flavor, the best substitute for plum sauce could be the sweet and sour sauce. This sauce is easy to find, so if you’re having trouble finding a good plum sauce brand, it is definitely your safest bet.
- Hoisin sauce. Hoisin sauce is yet another convenient plum sauce alternative since it has that sticky, thicker texture everyone loves in plum sauce. Since it is widely available both in grocery stores and Asian food stores, you shouldn’t have trouble finding it.
- Soy sauce. Soy sauce is not only a great plum sauce alternative, but possibly the most widely used Asian sauce there is. It has a unique salty flavor, yet sweet flavor, usually a liquid texture, and deep brown color.
- Char siu sauce. Char siu sauce, also known as the Chinese barbecue sauce, is mostly paired with pork. It is most commonly used as a marinade or a glaze for roasted pork fork skewers.
- Teriyaki sauce. Teriyaki is a popular Japanese sauce, and it is best known as a meat marinade. When it comes to the structure, this plum sauce substitute is more on the basic side, since it only contains 4 ingredients: soy sauce, sake, ginger, and sugar.
- Ponzu Sauce. This is yet another traditional Japanese sauce, and a worthy plum sauce substitute if you need a dipping sauce. What makes ponzu stand out is its refreshing citrus aroma, savory bonito flakes, and sweet mirin.
- Caramelised Onion Chutney. Caramelized onion chutney is a unique combination of sweet and savory flavors that can compliment pretty much any dish. You can use it as a condiment with meat and grilled vegetables, a spread on your toast or bruschetta, or a chunky dipping sauce.
