CHINESE FIVE SPICE CHICKEN THIGHS
These Chinese Five Spice Chicken Thighs are a quick and easy dinner that is naturally gluten free, paleo friendly and healthy! Spicy, sweet and so tasty!

Steps:
- Remove any large chunks of fat from the chicken thighs and pat them dry with a paper towel. Sprinkle half the 5 spice over the top of the thighs, rubbing in. Sprinkle with salt. Then, flip the thighs and rub in the rest of the 5 spice and sprinkle with salt.
- Heat the oil in large non-stick frying pan (not a cast iron skillet. That's just for pictures!) on medium high heat. Place the chicken thighs into the hot oil and sear until golden brown, about 2-3 minutes.
- While the thighs sear, combine the rest of the ingredients in a small microwave safe bowl and microwave for 30 seconds, whisking together.
- Flip the chicken, reduce the heat to low and pour in the honey mixture. Cover the pan and cook until an instant read thermometer inserted in the thickest part of the chicken reads 165 degrees F, about 5-15 minutes depending on how thick your chicken is.
- Once cooked, uncover and simmer until the sauce is thick, about 3-5 minutes.
- Garnish with cilantro and DEVOUR!

ASIAN CHICKEN NOODLE SALAD

- For the salad: Cook the noodles according to the package directions. Drain and rinse with cold water until cool, then drain again thoroughly.
- Mix the cilantro, mint, peanuts, scallions, chicken, carrots and cucumber with the noodles in a large bowl.
- For the sauce: Whisk together the soy sauce, fish sauce, honey, vinegar, lime juice, ginger, oil, garlic and jalapeno in a medium bowl.
- Toss the salad with the sauce. Serve immediately or refrigerate until ready to serve.
CHINESE FIVE SPICE CHICKEN (五香烤鸡)
Tender, juicy and thoroughly flavoured, Chinese five spice chicken brings roast chicken to a new level. Learn how to cook it perfectly.

- Place the chicken over a large tray with the breasts down and the legs towards you. Find its backbone in the middle. Use kitchen scissors/shears to cut along both sides of the backbone, separating it from the ribs (see images for reference in the post above).
- Flip over the chicken so that the breasts are facing up. Use the palm of your hand to firmly push the middle of the chicken until it's completely flattened.
- Pat dry the whole chicken with kitchen paper to remove any moisture.
- Mix salt, five spice powder, garlic powder and white pepper in a bowl. Rub half of the mixture over the cavity side.
- Flip over the chicken. Mix dark soy sauce and Shaoxing rice wine. Rub it over the skin side. Then spread the rest of the dry mix. Massage to evenly distribute.
- Leave to rest uncovered in the fridge overnight (12-24 hours).
- One hour before cooking, take the chicken out of the fridge and allow it to come back to room temperature.
- Preheat a fan-assisted oven at 390F°/200C°, or 425F°/220C° if using a conventional oven.
- Use a roasting tray with a wire rack that fits inside. Fill the tray with some water (lower than the rack) and put the chicken on the rack (skin facing up). Place the tray in the middle of the oven. Leave to cook for 15 minutes.
- Turn the oven down to 320F°/160C° (or 350F°/180C° if using a conventional oven). Continue cooking for a further 20 minutes. If your chicken is a little bigger or smaller, increase or reduce the time by 5 minutes or so (Check the water level in the tray and top up if necessary).
- Take out the chicken. Mix honey and soy sauce then brush a thin layer over the skin. Put back into the oven. Cook for another 5 minutes.
- Turn the heat back up to 390F°/200C° (or 425F°/220C° for a conventional oven). Take out the chicken and brush a second time. Roast for 5 more minutes to finish.
- Check the doneness (see footnote to learn how). Then take the chicken out and leave to rest for 10 minutes before carving into small pieces to serve.

GRILLED FIVE-SPICE CHICKEN
The best five-spice chicken I have had in Vietnam was made by a street food vendor in the port town of Hoi An in the central region. The vendor used a spice mix of freshly toasted star anise and turmeric. When she grilled the chicken, the whole neighborhood was perfumed with the most enticing fragrance. This is my version of that dish.

- 1. Cut the chicken into 6 pieces and make 1 or 2 slashes in each piece for faster cooking. Trim and discard any excess fat. Pat the chicken dry.
- 2. In a bowl, combine the oil, soy sauce, ginger, garlic, sugar, turmeric, five-spice powder and salt. Stir well to blend. Add the chicken pieces and turn several times to coat them evenly. Marinate in the refrigerator for at least 4 hours.
- 3. Start a charcoal grill or preheat a gas grill to moderate heat. (You can also use a broiler.) Thirty minutes before cooking, add the freshly toasted star anise powder to the marinated chicken, turning so the meat is coated evenly.
- 4. Place the chicken, skin side up, on the grill. Cook 10 minutes, then turn over and grill until the chicken is cooked and the juices run clear, another 10 minutes, depending on the thickness. While grilling, move the chicken pieces around so that they cook evenly. Transfer the chicken to a serving platter and serve with the dipping sauce.
GARLICKY INSTANT RAMEN NOODLE SALAD WITH GRILLED CHICKEN THIGHS
The perfect summer picnic dish. Once the chicken is grilled and sliced, the noodle salad comes together in less than a minute.

- Chicken
- Place chicken in a medium bowl. Process garlic, cilantro roots, oyster sauce, soy sauce, brown sugar, fish sauce, pepper, and salt in a small food processor until smooth. Using a rubber spatula, scrape marinade into bowl with chicken and mix well. Cover and chill at least 4 hours and up to 12 hours.
- Dressing
- Place chiles, vinegar, brown sugar, and fish sauce in a small glass jar; cover and shake to combine. Do ahead: Dressing can be made 1 day ahead. Store at room temperature.
- Garlic
- Cook garlic and oil in a small skillet over medium-low heat, stirring often, until garlic begins to turn light brown around the edges, about 2 minutes. Continue to cook, stirring constantly, until garlic is medium brown and crisp, about 1 minute more. Immediately strain oil through a fine-mesh sieve into a small heatproof bowl. Let cool. Do ahead: Garlic can be cooked 1 day ahead. Transfer garlic oil and crispy garlic to separate airtight containers and store at room temperature.
- Noodles and Assembly
- Cook noodles in a large pot of boiling water according to package directions. Drain and return noodles to pot. Pour in lukewarm water to cover and stir with a wooden spoon or rubber spatula to release as much starch from noodles as possible. Drain and repeat until water is clear. Drain well, shaking off excess moisture. Transfer noodles to a large bowl, pour in garlic oil, and toss to coat.
- Prepare a grill for high heat; lightly oil grate. Grill chicken until lightly charred on both sides and an instant read-thermometer inserted into the thickest part registers 165°, 8-10 minutes. Let rest 5 minutes before slicing against the grain.
- Add dressing to noodles and toss well to coat. Taste and add more fish sauce and/or vinegar if needed; noodles should be salty and sour with sweetness trailing behind. Add scallions, lettuce, cilantro, salt, half of peanuts, and half of crispy garlic and toss to combine.
- Transfer noodles to a platter and arrange chicken on top. Sprinkle crispy garlic and remaining peanuts over. Do ahead: Noodles can be cooked and dressed with oil 6 hours ahead. Store tightly covered at room temperature.
CHINESE FIVE SPICE CHICKEN SALAD
This recipe was inspired by a meal that I had at a locally owned cafe. Their chicken salad had that distinctive five spice flavor. This is my adaptation with a bit more kick and colorful diced vegetables.

- Debone rotisserie chicken & cut into roughly 1/2" pieces.
- Finely dice all of the vegetables.
- Combine chicken & vegetables in a large mixing bowl. Add salt, all spices & lime juice. Mix with a large spoon to combine well. This is best when allowed to sit overnight for the flavors to combine.
- Serve on baguette slices, pita chips or crackers. If your diet low carb like mine, this is lovely on tomato slices.

CHINESE CHICKEN NOODLE SALAD

- Cook spaghetti in boiling water for 9 minutes.
- Add sliced snow peas and cook for 1 more minute.
- Drain and rinse under cold, running water.
- Drain well.
- Combine pasta mixture, chicken, green onions and bell pepper in a very large mixing bowl. Set aside.
- In a separate bowl combine teriyaki sauce, sesame seeds, sesame oil. Also salt, pepper and chili oil (if using).
- Pour over pasta mixture and toss well.
- Serve at room temperature or chilled.
- Keeps well in the fridge for up to a week.
CHINESE NOODLE SALAD
I didn't like this the first few times I tried it but now I love it! It's got a tangy taste and goes well with Chinese food or sandwiches. Leftovers are softer but great as a snack the next day.
