Fried Shrimp Balls - crispy and crunchy shrimp balls, a popular and delicious Chinese appetizer. Learn how to make this Cantonese dim sum with the easy recipe.

1 lb. (0.4 kg) shelled and deveined shrimp, defrost
1 egg white, lightly beaten
1 teaspoon salt or fish sauce
1 teaspoon sugar
1 tablespoon corn starch
1/2 teaspoon sesame oil
1 tablespoon oil or some pork fat
3 dashes white pepper powder
8 pieces spring roll wrapper (8-inch square)

Steps:

  • In a mini food processor, add the shrimp, egg white, salt/fish sauce, sugar, corn starch, sesame oil, oil and white pepper. Blend until the ingredients form the shrimp paste.
  • Fold the spring roll wrappers up. Cut the spring roll wrappers into tiny strips using a pair of scissors. Cut them into shorter strips. Lay them on a flat surface. Wet your hands and form the shrimp paste into balls (about 1 tablespoon) and roll the shrimp balls onto the bed of spring roll strips.
  • The spring roll strips will stick to the shrimp ball, as shown on the picture below.
  • Trim off the spring roll strips using a pair of scissors. Make sure that the strips coat the shrimp ball evenly. You can reuse the strips that had been trimmed off.
  • Deep fry the shrimp balls in a deep fryer or wok until they turn golden brown, about 5 minutes. Dish out, drain on paper towels and serve hot with Thai sweet chili sauce or your favorite chili sauce.

1 lb fresh shrimp
4 water chestnuts, chopped fine
1/2 cup bamboo shoot, chopped fine
1/4 teaspoon fresh ginger, chopped
1 teaspoon salt (I prefer to use 2 tsp of light soya sauce)
1 dash black pepper (optional)
1 tablespoon white wine (sherry will do)
2 teaspoons cornstarch
1 egg white
deep frying oil

Steps:

  • Prepare shrimp by cleaning thoroughly and removing shell, legs and devein.
  • Mince the shrimp.
  • Combine all of the ingredients except oil Use a teaspoon of the mixture and shape into balls.
  • Heat oil in a deep pot or skillet and deep fry shrimp balls until Golden Brown.
  • Remove from oil and place onto paper towells to drain excess oil.
  • Serve Hot.
  • Note: You can add 150g minced pork to the mixture if you like. Increase the cornstarch to 1 tbs and use one whole egg.

16 jumbo shrimp, peeled, deveined and butterflied
1/2 lb green asparagus
1/4 cup vegetable oil
16 ginger, slices peeled
2 garlic cloves, minced
2 tablespoons shaoxing wine
1 tablespoon malt vinegar
1 tablespoon light soy sauce
2 teaspoons white sugar
1/4 teaspoon sesame oil
1/4 cup water

Steps:

  • Peel, devein and butterfly the shrimp, leaving tails intact.
  • Wash asparagus and snap off tough ends. Cut each spear into 4 diagonal cuts.
  • Heat 2 tbsp oil in a hot wok. Add half the shrimp and stir fry for 30 seconds.
  • Remove shrimp from wok with a slotted spoon and set aside. Repeat with remaining shrimp.
  • Add remaining oil to hot wok. Stir in asparagus, thinly sliced ginger and garlic. Stir fry for 30 seconds, stirring constantly so that garlic does not burn.
  • Put shrimp back into the wok with the wine, the vinegar, soy sauce, sugar and sesame oil. Stir fry for 30 seconds.
  • Pour in water and stir fry for another 30 seconds or until shrimp are just cooked through.
  • Arrange shrimp and asparagus on a platter and serve with steamed rice, if desired.

8-oz can water chestnuts (1 cup), rinsed and finely chopped
1 large egg white, lightly beaten
3 tablespoons finely chopped chilled fresh pork fat or lard
1 1/2 tablespoons rice wine or Scotch
1 tablespoon grated peeled fresh ginger
2 tablespoons finely chopped scallion greens
2 1/4 teaspoons coarse salt
2 tablespoons cornstarch
3 cups panko (Japanese bread crumbs)
About 8 cups vegetable oil
Accompaniment: apricot dipping sauce

Steps:

  • Pulse shrimp in a food processor until finely chopped. Transfer to a large bowl, then stir in water chestnuts, egg white, pork fat, rice wine, ginger, scallion, salt, and cornstarch. Beat shrimp mixture vigorously with a wooden spoon and throw it against side of bowl until combined well and compacted. Wet your hands with cold water and form teaspoons of shrimp mixture into balls, arranging in 1 layer on a wax-paper-lined tray. Coat balls, 1 at a time, in panko, then arrange in 1 layer on another wax-paper-lined tray.
  • Preheat oven to 425°F.
  • Heat oil in a 5-quart pot until a deep-fat thermometer registers 375°F and fry balls in 4 batches, turning, 1 to 1 1/2 minutes, or until golden and just cooked through. (Return oil to 375°F between batches.) Transfer with a slotted spoon to paper towels to drain. When all shrimp balls are fried, reheat on a rack set in a shallow baking pan in middle of oven until just hot, about 2 minutes.

2 teaspoons baking powder
1 pinch salt
1 teaspoon sesame oil
½ cup water, or more if needed
vegetable oil for frying
5 tablespoons cornstarch
1 pinch ground white pepper
4 boneless skinless chicken breasts, cubed

Steps:

  • Mix flour, baking powder, and salt together in a bowl. Drizzle in sesame oil. Gradually add water, whisking constantly until smooth; batter should be the consistency of cream. Let sit for at least 30 minutes.
  • Fill a deep pan or wok with oil and slowly heat to 375 degrees F (190 degrees C).
  • Mix cornstarch and white pepper together in a large shallow dish. Dust chicken in the cornstarch mixture and dip into the batter, evenly coating each piece. Transfer to the hot oil in batches and fry until golden and no longer pink in the center, 4 to 5 minutes. Scoop fried chicken out with a slotted spoon. Drain on a clean kitchen towel.
