Chinese Shredded Cabbage Stir-Fry image

Cabbage stir-fry is a really tasty dish that's savory, tangy, and very satisfying. Plus,this cabbage stir-fry is CHEAP and quick to prepare.

2 tablespoons oil
6 oz. pork belly ((170g, pork loin, or chicken, thinly sliced))
5 cloves garlic ((smashed and cut in half))
5 dried red chilies ((deseeded and roughly chopped))
1 1/2 lb. cabbage ((680g, hand-shredded into bite sized pieces, washed, and thoroughly dried))
2 teaspoons Shaoxing wine
1 tablespoon soy sauce
1/2 teaspoon sugar
1 tablespoon water
1/2 teaspoon Chinese black vinegar
2 scallions ((cut into 2-inch lengths))

Steps:

  • In a wok over high heat, add the oil. Sear the meat until caramelized. Add the garlic and chili, turn down the heat to medium, and stir-fry for a minute, taking care not to burn the garlic.
  • Add the cabbage, wine, soy sauce, sugar, and water. Turn up the heat to high, cover the lid and let the cabbage cook for 1-2 minutes. Uncover the lid, and stir in the black vinegar, scallions, and salt to taste. The cabbage should be wilted, but still slightly crunchy and caramelized. Serve hot!

4 slices bacon
¼ cup butter
1 tablespoon all-purpose flour
1 teaspoon salt
1 large head cabbage, cored and shredded
½ cup sour cream

Steps:

  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove the bacon slices to cool.
  • Whisk the butter, flour, and salt into the drippings in the same pan. Stir in the cabbage, and cook, stirring occasionally, over medium heat until cabbage is tender, about 15 minutes. Crumble the bacon; stir the bacon pieces and sour cream into the cabbage mixture.

I got this recipe from the Chinese Cookery cookbook. This Shanghai Chinese cabbage is delicious. Left overs are easy to reheat. Any kind of green cabbage will work in this recipe.

1 1/2 lbs Chinese cabbage
1 (4 ounce) can sliced mushrooms, drained
1/2 cup chicken broth
2/3 cup water
5 tablespoons milk
1 tablespoon cornstarch
1/2 teaspoon salt
5 tablespoons vegetable oil
1 garlic clove, crushed
1/2 teaspoon salt
1 tablespoon vegetable oil
1/4 teaspoon white pepper

Steps:

  • Chop cabbage into 1 1/2 inch squares with a cleaver.
  • Slice mushrooms with cleaver.
  • Combine ingredients for seasoning sauce in a small bowl. Mix well and set aside.
  • Heat 5 Tb oil in a wok over high heat 1 minute.
  • Stir fry garlic until golden, 30 seconds.
  • Add cabbage squares and mushroom slices. Stir fry about 3 minutes until cabbage is crisp tender.
  • Add salt. Stir fry 2-3 minutes longer.
  • Remove cabbage mixture with a spatula and set aside.
  • Heat 1 Tb oil wok over high heat 30 seconds. Add seasoning sauce. Stir fry until creamy.
  • Add white pepper.
  • Mix well and pour sauce over cabbage. Serve hot.

Posted for the March 2008 Green Eggs and Ham game in the Asian forum. China isn't known for its creamed dishes, but in this Shanghai cabbage recipe from Rhonda Parkinson is lightly coated with a cream sauce and garnished with chopped ham and scallions.

1 medium napa cabbage (about 1 3/4 pounds)
1/4 cup evaporated milk (plus)
2 tablespoons evaporated milk
1 tablespoon cornstarch or 1 tablespoon potato starch
2 tablespoons peanut oil
1/4 teaspoon salt
2 slices fresh ginger
1/3 cup chicken broth or 1/3 cup homemade chicken stock
2 -3 tablespoons chopped ham
pepper, to taste

Steps:

  • Remove the tough outer stems from the cabbage and cut off the core. Wash remaining stems and drain. Cut the stems crosswise into 1-inch pieces, discarding the upper leaves.
  • In a large saucepan or a wok, bring enough water to cover the cabbage to a boil. Boil the cabbage for 1 minute and drain in a colander. Pat the cabbage dry with paper towels. (If using a wok to boil the cabbage, dry the inside and outside with paper towels).
  • In a small bowl, whisk the cornstarch into the evaporated milk.
  • Preheat the wok and add the oil. When the oil is hot, add the salt and ginger slices. Add the cabbage and cook for a minute, until the cabbage is heated through. Discard the ginger.
  • Add the stock and bring to a boil.
  • Push the cabbage to the sides of the wok, making a "well" in the middle. Give the evaporated milk and cornstarch mixture a quick restir, then add to the chicken stock in the middle of the wok, stirring quickly to thicken.
  • When the sauce has thickened, stir to mix everything together. Season with pepper and salt to taste.
  • Garnish the creamed cabbage with the chopped ham and scallions. Serve immediately.

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan over medium heat, blend milk, flour, butter, salt and pepper. Stir constantly until a thick white sauce has formed.
  • In a separate medium saucepan over boiling water, steam cabbage until tender but firm.
  • In a small baking dish, alternate layers of sauce, cabbage and Romano cheese.

1large Savoy cabbage
4large carrots
50g butter
4 tbsp double cream
pinch nutmeg

Steps:

  • Pull off any tough outer leaves from the cabbage and discard. Cut in half, then remove the hard inner core. Rinse the leaves, then shred as finely as you can. Cut the carrots into fine, thin strips or grate in the food processor.
  • Bring a pan of water to the boil and add the cabbage and carrots. Boil for 6 mins until just tender, then drain. Return to the hot pan and add the butter and cream. Season with pepper, and salt if you like, add the nutmeg and stir well to coat. Pile into a serving dish and serve immediately.

1 large red cabbage , finely shredded
3 red chillies , halved, deseeded and chopped
large piece fresh root ginger , peeled and finely sliced
4 star anise
4 garlic cloves , chopped
75ml rice wine vinegar
2 tbsp soy sauce
50g caster sugar
4 spring onions , finely sliced
toasted sesame seeds
1 tbsp sesame oil

Steps:

  • Tip all the ingredients, except the spring onions, sesame seeds and oil, into a large pan with a lid, and bring to a simmer. Cook over a low heat for 25-30 mins until all the liquid has evaporated and continue to cook, stirring regularly, until the juices become really sticky and glaze the cabbage.
  • Stir through half the spring onions and sesame seeds and pile into a bowl. Serve scattered with rest of the spring onions and sesame seeds and drizzled with the sesame oil.
