The BEST homemade carrot cake recipe is extra moist from crushed pineapple and buttermilk, has the perfect blend of spices, and is smothered in cream cheese frosting.

1 1/2 cups granulated sugar
2/3 cup light brown sugar (, firmly packed)
1 cup oil (,vegetable or canola oil)
1/2 cup buttermilk
4 large eggs (, room temperature)
2 teaspoons vanilla extract
1/2 cup crushed pineapple*
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
2 1/2 cups carrots (, finely grated (about 1 lb.))
1 cup chopped pecans (, optional)
1 cup golden raisins (, optional)
16 ounces cream cheese (, softened)
3/4 cup butter (, softened)
2 teaspoons vanilla extract
4-5 cups powdered sugar

Steps:

  • Preheat oven to 350 degrees F. Prepare three 8 inch cake pans* by lightly coating with cooking spray and lining with parchment paper on the bottom.
  • Beat the eggs, granulated sugar, brown sugar, oil, buttermilk, vanilla, and pineapple together in a large bowl.
  • In another bowl combine the flour, baking powder, baking soda, cinnamon, ginger, salt and nutmeg. Add the dry ingredients to the wet ingredients and mix until incorporated.
  • Fold in the carrots, pecans and raisins just until evenly distributed throughout the batter.
  • Pour the batter into the prepared pans. Bake on the center oven rack until a toothpick inserted into the center of the cake comes out clean, about 25-30 minutes. Allow cakes to cool in the pans for 10-15 minutes before inverting them onto a wire rack to cool completely.

3 cups all-purpose flour
½ cup white sugar
2 teaspoons ground cinnamon
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
½ teaspoon ground ginger
1 (20 ounce) can crushed pineapple in juice, drained and juice reserved
1 cup brown sugar
1 (8 ounce) carton egg substitute (such as Egg Beaters®)
⅔ cup vegetable oil
1 tablespoon vanilla extract
2 cups shredded carrots
1 cup shredded zucchini
1 cup raisins
¾ cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a fluted tube pan (such as Bundt®).
  • Combine flour, white sugar, cinnamon, baking soda, baking powder, salt, and ginger in a large bowl.
  • Whisk drained pineapple, brown sugar, egg substitute, vegetable oil, and vanilla extract together in a separate bowl until smooth.
  • Stir pineapple mixture, carrots, zucchini, and raisins into flour mixture just until flour is moistened.
  • Pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted in the cake comes out clean, 55 to 65 minutes.
  • Cool in the pan for 10 minutes; remove cake from pan and cool completely on a wire rack, about 30 minutes.
  • Whisk reserved pineapple juice, 1 tablespoon at a time, with confectioners' sugar until a spreadable glaze forms. Drizzle over cooled cake.

1 cup all purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground ginger
1 tsp ground cinnamon
10 tbsp canola oil (1/2 cup + 2 tbsp)
1/2 cup brown sugar
1/2 cup sugar
2 large eggs
1.5 cups carrots (grated and peeled, about 2-3 medium carrots)
1 tsp ginger (fresh grated)
4 oz cream cheese (room temp)
4 oz marscapone (room temp)
1/4 cup sugar
1/4 cup heavy cream

Steps:

  • Preheat the oven to 350°F. Lightly butter and line a 8 inch square cake pan with parchment paper. In a bowl, whisk together the flour, baking soda, salt, cinnamon, and ginger. Set aside.
  • Whisk the oil and sugars together in a bowl until well blended. Whisk in the eggs, one at a time until incorporated.
  • Stir in the flour mixture until just blended, then stir in the carrots and grated ginger.
  • Pour the batter into the prepared pans and bake for 25-30 minutes or until a tester in the middle of the cake comes out clean. Cool in the pan for 15 minutes, then turn out onto a cooling rack, peel off the parchment paper and cool completely.
  • Make the frosting by whip together all the frosting ingredients in a stand mixer until full and fluffy. Frost your cake and enjoy!

On October 2, 2001, I discovered the Recipezaar Web site. I immediately joined so I could post a request for a recipe I had lost. In less than an hour, I had a reply: this recipe. Unfortunately, I never posted it into the database -- until now. My mistake. This cake was the reason I joined, and the friendly response I received was the reason I stayed!

1 cup flaked coconut
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  • Mix flour, baking soda, baking powder, salt and cinnamon; make a well in the center and add sugar, oil, eggs and vanilla. Mix with wooden spoon until smooth.
  • Stir in carrots, coconut, walnuts and pineapple. Pour into 9x13 inch pan and bake for about 45 minutes. Don't panic, the centre will sink a little.
  • Allow to cool; when cool, ice the cake. You can certainly use your favourite cream cheese frosting to ice this cake, but the one I've included is highly recommended (I usually leave the cake in the 13x9 pan and just ice the top).
  • To make the frosting: Cream the butter and cream cheese until smooth; add the icing sugar and beat until creamy.

Steps:

  • In a large bowl, combine the flour, sugar, cinnamon, baking soda and salt. Add the eggs, oil, carrots and vanilla; beat until combined. Stir in pineapple, coconut and nuts. , Pour into a greased 13x9-in. baking pan. Bake at 350° for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., For frosting, beat cream cheese and butter in a small bowl until fluffy. Add the confectioners' sugar and vanilla; beat until smooth. Frost cake. Sprinkle with additional nuts. Store in the refrigerator.

  • Pre-heat oven to 175 deg C (350 deg F). Grease the sides and base of two 9-inch (23-cm) round cake pans. Line the base in both pans with baking paper, then lightly grease the top of the paper.
  • Using an electric or hand-held mixer, whip cream cheese on medium speed until smooth and creamy, about 1 minute. Beat in the icing sugar, 1/4 cup at a time, until well incorporated. Taste the frosting as you add each 1/4 cup of sugar, to your desired sweetness (you may need a little less or more), each time beating until fluffy. Pour in the cream, vanilla extract and rum (optional) and beat on medium speed for 1 minute. You may not need to add all the cream, if you prefer a thicker or pipeable consistency. Chill the frosting for 15 minutes, to firm it up a little, to make spreading easier.
  • When the cake layers are completely cool, using an offset spatula, spread 1/3 of the frosting on top of one layer, place the other layer on top, and spread another 1/3 of the frosting. With the remaining 1/3, spread a thin layer all around the sides. Smooth the top and sides of the cake. Using your palm, gently press in toasted coconut flakes on the sides. Scatter toasted, chopped pecans on top as desired.
