BEEF STROGANOFF WITH CREAM CHEESE

Beef Stroganoff With Cream Cheese image

I absolutely love this recipe because it gets most of its creaminess from cream cheese instead of sour cream, but it still has a zing from the dollop of sour cream stirred in at the end. (I'm not a fan of the heavy sour cream flavor of a lot of recipes...) And of course, since it's a crock pot recipe, it's super easy.

Provided by Robyns Cookin

Categories     Meat

Time 8h10m

Yield 6 , 6 serving(s)

Number Of Ingredients 12

2 lbs beef stew meat, cubed
2 (10 1/2 ounce) cans condensed golden mushroom soup
0.5 (1 1/4 ounce) packet onion soup mix
1/2 cup onion, chopped
1 tablespoon Worcestershire sauce
2 garlic cloves, minced
1/2 cup water
1 beef bouillon cube
pepper
1 (7 ounce) can sliced mushrooms, drained
4 ounces reduced-fat cream cheese, softened
2 tablespoons reduced-fat sour cream

Steps:

  • Combine the meat, soups, onion, worcestershire sauce, garlic, water, bouillon, and pepper together in a crock pot.
  • Cook on low for 8 hours.
  • Just before serving, stir in the mushrooms, cream cheese, and sour cream.
  • Serve over cooked, whole wheat egg noodles.

BEEF STROGANOFF

Beef Stroganoff image

Melt in your mouth strips of sirloin and sliced cremini mushrooms, melded with a rich, creamy, perfectly seasoned sauce. This Beef Stroganoff recipe makes for a truly memorable meal.

Provided by Valerie Brunmeier

Categories     Main Course

Time 1h20m

Number Of Ingredients 18

3 pounds boneless top sirloin
1 ½ teaspoons salt
freshly ground pepper, (to taste)
2 tablespoons butter
2 tablespoons vegetable oil
1 small onion, (diced (about 1 cup))
1 tablespoon minced garlic
½ cup full-bodied red wine
2 cups low-sodium beef broth
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
12 medium cremini mushrooms, (sliced (about 2 cups))
⅓ cup cream cheese or Neufchatel, (softened)
⅓ cup sour cream ((I use light sour cream))
2 tablespoons cornstarch
additional salt and fresh ground pepper, (to taste)
2 tablespoons chopped fresh chives
long grain white rice or egg noodles, (prepared according to package directions)

Steps:

  • Trim edges of sirloin of any excess fat. Thinly slice the meat and then slice each piece in half again lengthwise. Slices should be about ½-inch thick by about 2-inches long.
  • In a large skillet over MEDIUM-HIGH heat, melt the butter with the vegetable oil. Brown the beef strips quickly in batches, seasoning with salt and pepper as they cook. Be generous with the pepper. Remove beef from pan to a dish and repeat with remaining beef.
  • Once all the meat is cooked, add onions and garlic to beef drippings in empty pan. Cook and stir for a couple of minutes. Add wine and cook for a minute or two. Add beef broth, Dijon mustard and Worcestershire sauce and cook and stir for another minute. Add beef strips and combine well. Bring to a low boil, reduce heat to low, cover pot and simmer for 45 minutes to 1 hour, until beef is fork tender.
  • Remove about ¼ cup of the cooking liquid from the beef stroganoff to a small bowl. Add cornstarch to the liquid and mix until cornstarch has dissolved. Pour the cornstarch slurry into the beef stroganoff and cook, stirring, for a minute or two as sauce thickens slightly. Add sliced mushrooms and allow to cook, stirring occasionally about 10 minutes. Add cream cheese and sour cream, stir to combine and allow to cook another 5 minutes or until the cream cheese has completely melted into the sauce. Taste and season with additional salt and pepper if needed. Sprinkle with fresh chives and serve over rice.

EASY BEEF STROGANOFF (WITHOUT SOUR CREAM)

Easy Beef Stroganoff (without Sour Cream) image

This Easy Beef Stroganoff without Sour cream is the ultimate, perfect comfort food! Tender beef slices are simmered in a rich creamy sauce with mushrooms and a few spices. It has that all-day cooked flavor, but is on the table in 30 minutes!

Provided by Casey Rooney

Categories     Dinner     Main Course

Time 30m

Number Of Ingredients 16

1 tbsp olive oil (vegetable oil or canola oil are also fine)
1 lb. flank steak, sliced into thin strips against the grain (See Note 1)
2 tbsp butter
2 cups fresh mushrooms, sliced (white button mushrooms, cremini, baby portobellos, are all great)
2 cups onions, sliced (about 1 medium onion)
1 tbsp garlic, minced (the BEST garlic chopper!)
1 tsp salt, plus more to taste
2 cups beef stock
1/2 cup whole milk Greek yogurt (See Note 2)
1 tbsp Worcestershire sauce
3 tbsp all purpose flour
1 tsp fresh thyme leaves (or 1/2 tsp dried thyme leaves)
1/2 tsp dry mustard (optional)
freshly ground black pepper, to taste
1 lb. egg noodles (for serving)
fresh parsley or chives for serving (optional)

Steps:

  • In a large pot of boiling water, add egg noodles. Cook until al dente, according to package directions.
  • While the noodles are boiling, heat one tablespoon oil a large skillet over medium-high heat.
  • When oil is hot, add beef to the skillet in a single layer. Cook for 2 minutes on one side without stirring or tossing the meat. You want it to get a nice sear on one side. After 2 minutes, toss meat and cook 1 minute more (it's ok if the meat isn't completely cooked yet). Transfer meat to a plate and cover with foil.
  • Turn pan down to medium heat and melt butter. Add onions and cook, stirring occasionally, 2-3 minutes until onions are slightly softened. Then add garlic and mushrooms and cook 2 minutes more. Stir often to make sure garlic doesn't burn.
  • In a large measuring cup or small bowl, whisk together beef stock, flour, thyme, Worcestershire sauce and dry mustard (if using). Add mixture to the pan, scraping up any brown bits on the bottom of the pan. Turn heat up a bit and bring to a boil. Cook 3-4 minutes until sauce has thickened.
  • Turn to low heat. Add in Greek yogurt and stir to combine. Then, add in reserved beef and all the juices from the plate. Cook 2-3 minutes more, stirring often, until beef is cooked and everything is heated through. Taste and season with salt and pepper if needed.
  • At this point, you can either toss your egg noodles right in with the beef and mushroom sauce, or just spoon the mixture over the egg noodles on individual plates. Garnish with fresh parsley or chives, if you like!

  • Polenta. Polenta, can be a great choice as an accompaniment to beef stroganoff. Most people think it is made with corn flour, however, it’s a hearty dish made with cornmeal.
  • Cauliflower. If you want to avoid starchy potatoes but still want the beef-and-potatoes meal, try mashing up some cauliflower. It’s an excellent substitute for mashed potatoes, especially if you’re aiming for a lower-carb option.
  • Side Salad. A side salad is an excellent option because it’s delicious, and you can throw it together quickly. Toss with a bit of olive oil, salt, and pepper to keep it low-calorie.

  • Cabbage. Stewed red cabbage is a flavorful side dish that can add a pretty burst of color to your stroganoff. Cabbage can be braised with sugar, vinegar, and apples or chopped into a shredded veggie salad.
