1 cup unsweetened shredded coconut
2 Tbsp coconut oil
1 tsp vanilla extract
1/4 cup cocoa powder
2 Tbsp honey

Steps:

  • Combine ingredients in a food processor.
  • Mix until a crumbly dough starts to form.
  • Drop the mixture onto max paper and press into a block shape about 1/2" thick.
  • Refrigerate until set (about 30 minutes).
  • Cut into bars with a pizza cutter.

2 cups pitted Medjool dates
3/4 cup raw cacao powder
3/4 cup unsweetened shredded coconut
1/4 cup cacao nibs
2 tablespoons agave syrup
1 teaspoon kosher salt
2 tablespoons water
1/4 cup unsweetened shredded coconut
Equipment:
One 8x8" baking pan, Parchment paper

Steps:

  • Coat 8x8" baking pan with nonstick vegetable oil spray; line with parchment, leaving overhang on all sides. Process 2 cups pitted Medjool dates, 3/4 cup raw cacao powder, 3/4 cup unsweetened shredded coconut, 1/4 cup cacao nibs, 2 tablespoons agave syrup, 1 teaspoon kosher salt, and 2 tablespoons water in a food processor until smooth (you may need to stop and scrape down sides a few times). Press mixture firmly into prepared pan. Scatter 1/4 cup unsweetened shredded coconut over top; press to adhere. Cut into bars.

2 cups pitted Piarom dates
¾ cup raw cacao powder
1 cup unsweetened shredded coconut, divided
¼ cup cacao nibs
2 tbsp agave syrup
1 tsp kosher salt

Steps:

  • Coat 8×8 ̎ baking pan with vegetable oil spray; line with parchment, leaving overhang on all sides. Process Piarom dates, cacao powder, 3/4 cup coconut, cacao nibs, agave syrup, salt and 2 tablespoons water in a food processor until smooth (you may need to stop and scrape down sides a few times.) 1 cup sugar
2/3 cup shortening
2 large eggs
1-1/2 cups all-purpose flour
1 teaspoon baking soda

1 cup semisweet chocolate chips
1/2 cup packed brown sugar
1/2 cup chopped nuts

Steps:

  • In a small bowl, combine dates and water; set aside to cool (do not drain). In a large bowl, cream sugar and shortening until light and fluffy. Beat in eggs. Combine the flour, baking soda and salt; gradually added to creamed mixture. Stir in dates. , Pour into a greased and floured 13x9-in. baking pan. Combine the topping ingredients; sprinkle over batter. Bake at 350° for 40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

3 cups Oreo cookie crumbs
2 cups sweetened shredded coconut
1/2 cup cream of coconut
FILLING:
1/3 cup butter, softened
3 tablespoons cream of coconut
1/4 teaspoon coconut extract
3 cups confectioners' sugar
1 to 2 tablespoons 2% milk
TOPPING:
1-1/2 cups semisweet chocolate chips
4 teaspoons canola oil
3 Mounds candy bars (1-3/4 ounces each), coarsely chopped, optional

Steps:

  • Microwave butter on high until melted; stir until smooth. Stir in cookie crumbs, coconut and cream of coconut until blended (mixture will be wet). Spread onto bottom of an ungreased 13x9-in. baking pan. Refrigerate until set, about 30 minutes., For filling, beat butter, cream of coconut and extract until smooth. Gradually beat in confectioners' sugar and enough milk to reach a spreading consistency. Spread over crust., For topping, microwave chocolate chips and oil until melted; stir until smooth.
