2 cups ice
3 fl oz tequila
1 ½ fl oz sour mix
3 fl oz orange liqueur
1 cup pineapple, cubed
1 cup pineapple juice
2 limes lime
½ tablespoon chili powder
pineapple juice, for rimming the glass
chili powder, for rimming the glass
1 slice pineapple, sliced

Steps:

  • Rim the top of a tall glass by dipping it first in pineapple juice, then in chili powder.
  • In the blender, add the ice, tequila, sour mix, orange liqueur, pineapple, pineapple juice, lime juic,e and chili powder.
  • Serve and garnish with a pineapple slice.
  • Enjoy!

Steps:

  • Fill a cocktail shaker with ice and add the mezcal, lime juice and simple syrup. Shake vigorously for 10 seconds, then strain into a rocks glass over ice. Dip the pineapple wedges in chile powder and garnish the glass.

Number Of Ingredients 11

1 cup plus 1½ teaspoons white sugar
1 cup water
4 1-inch strips lime zest
4 1-inch strips orange zest, plus 1 orange wedge
1 jalapeño chili, halved
1 habanero chili, halved
1 tablespoon kosher salt
¾ teaspoon chili powder
4 ounces (½ cup) reposado tequila
2 ounces (¼ cup) pineapple juice
1½ ounces (3 tablespoons) lime juice (1 to 2 limes)

Steps:

  • In a small saucepan, combine 1 cup of the sugar, the water, both zests and both chilies. Bring to a boil, stirring occasionally, then remove from the heat and steep for 15 minutes. Strain into a jar, discarding the solids. Let cool.
  • While the syrup cools, in a small bowl, stir together the salt, chili powder and remaining sugar. Spread the mixture on a small plate. Use the orange wedge to moisten the rims of 2 rocks glasses, then dip in the chili salt, turning to coat.
  • In a cocktail shaker, combine the tequila, pineapple juice, lime juice and 1½ ounces (3 tablespoons) of the chili syrup. Add 2 cups of ice cubes and shake vigorously, 10 to 15 seconds. Strain into the prepared glasses.

1 1/2 ounces silver tequila
3/4 ounce orange liqueur (Cointreau)
3/4 ounce lime juice (fresh)
2 ounces pineapple juice
1 dash hot sauce (Tabasco Habanero)
Garnish: pineapple slice, lime wedges, salt and/or Tajin for rim

Steps:

  • Gather the ingredients.
  • In a cocktail shaker , pour the tequila, triple sec, lime and pineapple juices, and hot sauce. Fill with ice.
  • Shake vigorously .
  • Prepare the rim of the glass by rubbing a slice of lime along it, and dipping glass in coarse salt and/or Tajin Seasoning for extra spice, if desired.
  • Strain cocktail into the ice-filled glass.
  • Garnish with a pineapple wedge and lime wheel.

  • Wet the rim of 4 short glasses and dip in a mixture of 2 tablespoons coarse salt and 1 1/2 teaspoons chili powder. Fill a cocktail shaker two-thirds of the way with ice. Add 1 cup tequila, 1 cup pineapple juice, 1/2 cup fresh lime juice and 11/2 tablespoons agave nectar. Shake well, then strain into the glasses.

The chef who introduced me to this idea, Lindsey Bareham, recommends serving this recipe with drinks before dinner. To really make the dish shine you need to have a chilli with a bit of kick in it, although it doesn't have be one of the really firey ones like a habanero or bird's eye.

  • Core and peel the pineapple and cut into bite-sized chunks.
  • Trim and split the chilli, scrape away the seeds and slice into small strips.

  • Serve on a plate with toothpicks.
  • Every bite should have a bit of chilli.

4 slices red jalapeño chile with seeds
1/2 cup 100% blue agave silver tequila
3 tablespoons fresh lime juice

2 cups ice cubes, divided

Steps:

  • Place pineapple chunks and red jalapeño slices in medium bowl. Press firmly on solids with muddler or back of wooden spoon until mashed. Mix in tequila, lime juice, Simple Syrup , and Cointreau, then 1 cup ice. Stir to blend well. Strain into large glass measuring cup. Divide remaining ice between 2 tall glasses.
