PAPPASITO'S SALSA

You can make Pappasitos salsa at home with this easy copycat recipe.

1 fresh poblano pepper
1 minced jalapeno pepper
1½ pounds tomatoes (pick the most fresh and ripe tomatoes)
½ cup diced white onion
½ teaspoon celery salt
⅛ teaspoon dried oregano
¼ cup fresh cilantro
¼ teaspoon garlic salt
¼ teaspoon ground black pepper
½ teaspoon sugar
½ cup water

Steps:

  • In a moderately hot skillet that has been sprayed with a cooking spray, brown the coarsely chopped poblano pepper and jalapeno pepper.
  • Cook and stir until the skins have turned dark on many sides of peppers.
  • Add tomatoes and brown them until the skins on the tomatoes have turned a dark brown on several sides.
  • Remove the pan from the heat.
  • Put the onion in the hot skillet that has been removed from the heat. Stir to combine.
  • In a food processor, add celery salt, oregano cilantro, sugar, garlic salt, and pepper.
  • Pour peppers, onions, and tomatoes into the food processor.
  • Process and add water a little at a time. Process just enough to chop to a medium consistency but not to a smooth paste. Leave it a little chunky.
  • Remove salsa from the processor and pour it into a hot skillet over medium-high heat.
  • Cook and quickly stir for 3 minutes.
  • Serve hot.

1 tablespoon Minced Garlic
1/4 teaspoon Garlic Salt
1/2 cup Diced Onion
1/2 cup Diced Ripe Tomatoes (discard seeds)

Steps:

  • Melt cheese with milk and stir until blended.
  • Add chilies with liquid, garlic, and onion. Cook and stir until onions are transparent.
  • Remove from heat and add tomatoes before serving.

When I was in college, I worked at Pappasito's as a waitress. I LOVED their brochette shrimp and I asked the cook for the recipe. He didn't give me the exact measurements, but he did give me the list of ingredients. I went home and played around with the quantities of the ingredeints and came up with what I think is very close to the real thing!

12 large shrimp
6 slices bacon, cut in half
1 fresh jalapeno
1 slice monterey jack cheese, thick
1 tablespoon paprika
1 tablespoon cayenne pepper
1/2 teaspoon fresh ground black pepper
1/2 cup butter
1/4 cup white wine
wooden skewer, soaked in water

Steps:

  • Clean and devein shrimp, leaving the last section and tails intact.
  • With a paring knife, carefully slice each shrimp from tail to tip.
  • Wash and seed jalapeno, and cut into a pieces about 1/2-inch X 1/2-inch squares.
  • Cut slice of cheese into 12 small pieces.
  • Stuff one small piece of cheese and one small piece of jalapeno into each shrimp.
  • Wrap a half slice of bacon around each shrimp.
  • Place shrimp on a wet skewer.
  • Repeat this process until all shrimp have been placed on skewers.
  • Place in refrigerator for a few minutes while you prepare the rest of the recipe.
  • Mix the paparika, cayenne pepper and black pepper together.
  • In a small skillet, heat butter and white wine until butter is completely melted.
  • Prepare grill.
  • ~note~I use my indoor grill, but these can be made on an outdoor grill too, but I would use a low flame!
  • Remove shrimp from fridge and brush completely with melted butter.
  • Sprinkle with seasonings.
  • Grill on each side until shrimp are done.

This is my version of queso that is familiar with Pappasito's in Houston, TX. I found this copycat from CopyKat.com with my adjustments of more onion, garlic, and tomato.. and this is fairly close..but not quite there.. it's really good all the same!! Hope you think so too!

1 small yellow onion, diced (1/3 - 1/2 C Diced)
1 fresh jalapeno pepper, stem removed and seeded
1/2 teaspoon celery salt
1/8 teaspoon oregano
1/4 cup fresh cilantro
1/2 teaspoon sugar
1 fresh poblano pepper
1/4 teaspoon garlic salt
1/2-3/4 cup water
1/4 teaspoon black pepper

Steps:

  • In a moderately hot skillet that has been sprayed with a cooking spray brown the coarsely chopped Pablano pepper and jalapeno pepper.
  • Brown and stir until the skins have turned dark on many sides of peppers.
  • Add tomatoes and brown them until the skins on the tomatoes have turned a dark brown on several sides, remove pan from heat.
  • Put onion in hot skillet that has been removed from the heat and stir.
  • In a food processor add celery salt, oregano, cilantro, sugar, garlic salt and pepper.
  • Pour peppers, onions and tomatoes and add water a little at a time; process just enough to chop to a medium

  • Rinse shrimp in strainer or colander. Remove three-fourths of shell of each shrimp, leaving the last section and tail intact. With small, sharp paring knife, cut shrimp along the vein underneath, but do not cut completely through. Both veins should now be exposed. Wash veins out of the shrimp. Repeat for all shrimp. Drain shrimp and refrigerate, covered.
  • With kitchen shears or sharp knife, cut bacon in half all at once; set aside with red peppers, green peppers, and onion wedges. Combine black pepper, cayenne, and paprika; stir until well-blended; set aside. Whip softened butter with garlic and wine until well-combined. Set aside until needed. Wrap 1/2 piece bacon around each shrimp body (not tail).On each of 6 (12-inch) wooden or metal skewers, place, in order:1 green pepper piece1 slice beef1 red onion wedge1 chicken strip1 red bell pepper piece1 bacon-wrapped shrimp (skewer through main body)1 pineapple cubeanother bacon-wrapped shrimp1 red bell pepper piece1 chicken strip1 red onion wedge1 beef strip1 green pepper piece
  • Do not place vegetables, meat or shrimp too close together, or they will not cook evenly. Refrigerate skewers while preparing a medium fire (or low flame on gas grill with the lid open). A high flame will cause bacon grease to flare up and burn wooden skewers. Keep a small cup of water at hand to sprinkle over fire if this happens. Soak skewers of food in Italian dressing (or marinade) 2 to 3 minutes before starting to cook. Place on grill , sprinkle with pepper-paprika mixture and baste with reserved butter mixture (about 1/2 cup total).
