6 6-ounce black cod fillets with skin
1/2 cup good-quality sweet Sherry
1/4 cup plus 1 tablespoon extra-virgin olive oil
Freshly ground black pepper
1 cup (2 sticks) unsalted butter, room temperature
1 garlic clove, peeled, flattened
1/4 cup panko (Japanese breadcrumbs)*
2 tablespoons fresh lemon juice
1 tablespoon Pimentón de La Vera (Spanish smoked paprika)**
Coarse kosher salt
Roasted Sweet-and-Sour Onions

Steps:

  • Using sharp knife, make three 1/4-inch-deep, 2 1/2-inch-long diagonal cuts in skin of each fish fillet. Arrange fillets in single layer, skin side up, in 15x10x2-inch glass baking dish. Pour Sherry and 1/4 cup olive oil over; sprinkle with freshly ground black pepper. Cover and refrigerate at least 4 hours and up to 6 hours, turning occasionally.
  • Preheat oven to 425°F. Combine butter and garlic in heavy medium saucepan. Cook over medium heat until butter melts and garlic begins to brown, about 12 minutes, stirring occasionally. Discard garlic clove. Add panko to butter (mixture will bubble); cook until golden brown, about 3 minutes. Add lemon juice; remove from heat. Stir in pimentón. Season sauce to taste with salt and pepper. Cover to keep warm while preparing fish.
  • Remove fish from marinade and drain. Sprinkle fish with coarse salt. Heat remaining 1 tablespoon oil in large ovenproof skillet over medium-high heat. Add fish fillets, skin side down, and cook until lightly browned, about 1 minute. Turn fillets over; place skillet in oven and roast until fish is just opaque in center, about 2 minutes.
  • Spoon Roasted Sweet-and-Sour Onions into center of 6 plates. Top each serving with 1 fish fillet. Spoon sauce over and serve.

1 cup reduced-sodium chicken broth
1 tablespoon lemon juice

3/4 cup julienned green pepper
3/4 cup julienned sweet red pepper

  • In a large nonstick skillet, combine the first 7 ingredients. Bring to a boil. Reduce heat; cover and simmer until onion is tender, 6-8 minutes. , Arrange fish and peppers over onion mixture. Cover and simmer until fish flakes easily with a fork and peppers are tender, 6-9 minutes. Remove fish and vegetables and keep warm. , Combine cornstarch and water until smooth; gradually stir into pan juices. Bring to a boil; cook and stir until thickened, about 2 minutes. Vinegary sauce in which fish is marinated after cooking is sometimes referred to as escabeche. This one is inspired by a recipe in Yotam Ottolenghi's cookbook "Jerusalem." It is at once a sauce and vegetable side dish. Instead of frying the fish like Ottolenghi does, I oven-steam it, then bury it in the sauce.

1 1/2 pounds Alaskan cod fillets
Salt and freshly ground pepper to taste
2 tablespoons extra virgin olive oil
1 large onion, halved and sliced across the grain

2 large red bell peppers, or 1 red pepper and 1 yellow pepper, sliced
2 garlic cloves, minced
2 teaspoons curry powder (optional)
1 14-ounce can chopped tomatoes
2 tablespoons mild honey, such as clover
4 tablespoons sherry vinegar or cider vinegar
2 bay leaves

Steps:

  • Preheat the oven to 300 degrees. Line a sheet pan with foil and oil the foil. Season the fish fillets with salt and pepper and lay on the foil. Leave at room temperature while you make the sauce.
  • Heat the oil in a large skillet or casserole over medium heat and add the onion and coriander seeds. Cook, stirring often, until the onion is tender, about 5 minutes, and add the bell peppers and a generous pinch of salt. Cook, stirring often, until the peppers and onions are soft, another 8 to 10 minutes. Stir in the garlic and curry powder, if using, and stir together for a minute, until fragrant. Add the tomatoes and bay leaves and cook, stirring often, until the tomatoes cook down slightly, about 8 minutes. Stir in the honey and vinegar, salt to taste and black pepper, and simmer 5 minutes.
  • Meanwhile, place a pan of just boiled water on the floor of your oven and place the baking sheet with the fish in the oven on the middle rack. Bake 10 to 15 minutes, until the fish is opaque on the surface but still slightly firm in the middle. Remove from the oven and place in the sauce. Spoon sauce over the top so that the fish is surrounded by it. Simmer for 5 minutes, until the fish is cooked through and can be pulled apart with a fork. 2 (400 g) whole red snapper
2 tablespoons fish sauce
1 tablespoon oil (I use peanut oil)
1 tablespoon oil (for sweet and sour sauce)
2 garlic cloves, crushed
1/4 teaspoon ground ginger
1 pinch chili powder
2 tablespoons brown sugar
2 tablespoons fish sauce
1 large tomatoes, sliced
1 small yellow pepper, chopped
4 baby carrots, sliced
1/4 cup water

Steps:

  • Cut 4 deep slits into each side of fish, pour fish sauce into slits.
  • Heat oil in heavy baking dish, cook fish on both sides to seal. Bake, covered, in moderate oven for about 30 minutes or until cooked through. Serve with hot sweet and sour sauce.
  • Sweet and sour sauce-heat oil in pan, cook garlic, ginger and chilli, stirring 1 minute.
  • Add sugar, vinegar and sauce, stir over heat until sugar is dissolved.
  • Stir in remaining ingredients, bring to boil; simmer, covered, for about 3 minutes or until vegetables are just tender.

2 small onions halved and thinly sliced
2 1-pound cans plum tomatoes drained (liquid reserved) and finely chopped
1/2 teaspoon grated orange zest
3 tablespoons fresh orange juice
2 tablespoons Madeira
1/4 cup raisins
2 tablespoons balsamic vinegar
1 tablespoon honey
1/4 teaspoon ground cinnamon
2 teaspoons salt
Freshly ground pepper to taste
2 tablespoons toasted slivered almonds
4 4-ounce cod fillets
2 tablespoons minced scallions

Steps:

  • Heat the olive oil in a large nonstick skillet over medium heat. Add the onions and turn the heat to medium-low. Cook until completely wilted and browned, about 10 minutes. Add the tomatoes, 1/2 cup of the reserved liquid, orange zest and juice, Madeira, raisins, vinegar, honey, cinnamon, salt and pepper. Simmer for 25 minutes.
  • Stir in the almonds. Place the cod in the skillet and cover with the sauce. Simmer until just cooked through, about 10 minutes. Carefully transfer the fillets to plates using a wide spatula. Spoon some of the sauce over the fish, sprinkle with the scallions and serve immediately.
