1 package old bay crab cake classic mix
1/2 cup mayonnaise
1 pound fresh crabmeat drained and cartilage removed
1/4 cup vegetable oil
old bay tartar sauce

Steps:

  • In a large bowl combine Crab Cake Mix and mayo. Add crabmeat and gently toss until well blended. Shape into 24 balls.Fry in batches in hot oil until golden brown turning once. Drain on paper towels. Serve with tartar sauce.

1 egg
3 tablespoons self-rising flour
1 tablespoon prepared mustard
2 tablespoons mayonnaise
1 tablespoon Old Bay Seasoning
3 drops hot pepper sauce

Steps:

  • Put crabmeat in a bowl and gently sort through it for pieces of shell with a 2-pronged fork.
  • Remove shell.
  • Add all ingredients and mix gently until thoroughly blended.
  • Form into balls.
  • Deep fry until golden.
  • Yields about 30 balls.

1 lb jumbo lump crab meat
1/3 cup fine soft bread crumbs
2 tablespoons dry sherry
1 teaspoon chives, chopped
1 teaspoon dry mustard
1/4 teaspoon salt
10 slices bacon, cut in thirds
4 tablespoons mayonnaise

Steps:

  • Remove cartilage from crab meat. Combine all ingredients except bacon.
  • Mix thoroughly.
  • Chill for 30 minutes.
  • Portion crab mixture with a tablespoon.
  • Shape into small rolls.
  • Wrap bacon around crab rolls and secure with a toothpick.
  • Place crab rolls on a broiler pan.
  • Broil about 4 inches from source of heat for 8 to 10 minutes or until bacon is crisp.
  • Turn carefully.
  • Broil 4 to 5 minutes longer.
  • Makes 30 hors d'oeuvres.
