CHILI-GLAZED MEAT LOAF
Chili Glazed Meat Loaf is simple, good old-fashioned comfort food which is the BEST kind of comfort food! This meatloaf is also a client favorite!

Steps:
- Preheat oven to 350 degrees. In a large bowl, combine all ingredients except the beef and mix well. Add beef and combine well.
- Turn mixture into a 9 x 5-inch loaf pan and pat down to form a nice loaf shape.
- Bake 40 minutes. Brush glaze ingredients over meatloaf and bake another 20-25 minutes or until cooked through to 165 degrees.
- Let rest 10 minutes before slicing.
- Combine glaze ingredients in a small bowl.

CHILI MEATLOAF
Quick and easy to make yet SO packed with flavor! Serve with buttery mashed potatoes and crisp green beans.

Steps:
- In a large bowl, beat egg with a fork.
- Add bread crumbs, salt and pepper.
- Gently mix in ground beef.
- Set aside.
- In a large frying pan, heat oil on medium-high heat.
- Add onion; cook for 5 minutes or until softened.
- Add sweet pepper and chili powder.
- Cook for another 4 minutes.
- Let cool slightly and then add to beef mixture.
- Add kidney beans and salsa.
- Pack into an 8 by 4 inch loaf pan.
- Bake in preheated 350F (180C) degree oven for 60-75 minutes.
- Drain off fat.
- Sprinkle cheddar cheese on top of meatloaf and return to oven for 5-7 minutes or until cheese is bubbly.
RED CHILE-GLAZED MEATLOAF
Steps:
- For the red chile glaze: Put the chiles in a bowl, cover with 2 cups boiling water and let sit for 30 minutes.
- Transfer the chiles to a blender, add 1/2 cup of the soaking liquid (save the rest) and blend until smooth. Add the honey, vinegar and some salt and pepper and transfer to a bowl. If the glaze is too thick to spread on the meatloaf, add a bit more of the soaking liquid.
- For the meatloaf: Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper and spray lightly with nonstick spray.
- Heat the oil in a large saucepan over high heat. Add the poblanos and onions and cook until soft, about 4 minutes. Add the garlic and cook for 1 minute. Add the cumin and cook 1 minute longer. Remove from the heat and let cool slightly,
- Whisk the eggs with a splash of water in a large bowl. Sprinkle with salt and pepper and add in the ground chuck and ground pork, the cooled onion mixture and the chips and cilantro; mix until just combined.
- Transfer the meat to the prepared baking sheet and form into an oval loaf about 6 by 12 inches. Bake for 45 minutes, then begin to brush with a good amount of the red chile glaze. Bake, glazing occasionally, until the meatloaf reaches an internal temperature of 160 degrees F, about 15 minutes longer.

Steps:
- Make foil handles for slow cooker. Do this by cutting three 18x3 inch strips of heavy duty foil paper; place in bottom of slow cooker in criss-cross strips to resemble bicycle spokes on a wheel.
- Spray foil paper in slow cooker with cooking spray.
- In a bowl, combine beef, beefy onion soup mix, oats, eggs, 3/4 cup chili sauce, and black pepper; mix well.
- With your hands, shape meat mixture into round ball.
- Place round ball into slow cooker; pat down into loaf shape.
- Cover and cook on low for 3 to 4 hours. Before last half hour of cooking time, spread remaining chili sauce over top of loaf and continue cooking.
- Use foil handles to lift meat loaf out of slow cooker.

LEFTOVER MEATLOAF CHILI
Got leftover meatloaf and you're tired of sandwiches (like if anyone could be;) and you want something different? Try this very good recipe. Be careful though, the way that this is written it's very spicy. (Well at least to me anyway :)). I let this simmer for about 30 minutes for a better flavor. - Heat and stir until seasonings are well blended.

- Cut four 20x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a 5-qt. slow cooker. CHILI CON CARNE LOAF

- Heat oil in skillet and add onions and garlic. Cook, stirring, until wilted. Add green pepper, celery and chili powder and cook, stirring, about 1 minute longer. Add tomatoes and bring to boil. Let cook about 5 minutes. Sprinkle with black pepper and pepper flakes. There should be about 3 cups. Let cool.
- Preheat oven to 375 degrees.
- Put pork and veal in mixing bowl. Add egg, then stir in cooled vegetable mixture and bread crumbs. Blend thoroughly.
- Spoon mixture into 6 1/2-to-7-cup loaf pan and smooth over top. Put dish in oven and bake about 1 1/4 to 1 1/2 hours. Internal temperature on meat thermometer should be 160 degrees. Serve hot with tomato sauce with chili if desired or serve cold in sandwiches.

NEW MEXICO GREEN CHILE MEATLOAF
Growing up in New Mexico, we had access to the Hatch green chile (the best!). I add green chile to a lot of my recipes and it rather sets this meatloaf off. It's very good cold, made into sandwiches the second day.

- Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
- Mix hamburger, tomatoes, green chiles, onion, milk, eggs, crackers, salt, and pepper together in a bowl. Transfer to the prepared loaf pan.
- Bake in the preheated oven until until no longer pink in the center, about 1 hour and 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

- Preheat the oven to 180°C/fan160°C/ gas 4. Blitz the pitta into breadcrumbs in a food processor, and put in a bowl.
- Heat the oil in a frying pan and cook the onion until softened. Stir in the chillies and garlic, cook for 1 minute, then stir in the spices and cook for a further minute. Set aside.
- Chop two-thirds of the peppers and add to the pitta crumbs with the beef, lamb, lemon zest and juice, tomato purée, parsley, egg and spicy onion. Mix together well with your hands. Season and spoon into a 900g non-stick or greased loaf tin.
- Put in a deep roasting tin, fill with boiling water so it comes halfway up the loaf tin, then cover the whole thing with foil. Bake for 45 minutes, until cooked. Leave in the tin for 15 minutes.
