SAUSAGE AND LEEK SAVORY BREAD PUDDING



Sausage and Leek Savory Bread Pudding image

Brioche is the secret to this savory dish: The fluffy, eggy bread soaks up the cream and broth to produce a moist, custardy interior. Sausage, leeks and Gruyere are a go-with-everything combination, so this dish will fit right into any holiday buffet.

4 tablespoons unsalted butter
8 cups 1/2-inch cubes brioche, crusts removed
8 ounces sweet Italian sausage, casings removed
1 cup finely chopped butternut squash
4 leeks, white and light green parts only, thinly sliced
1 tablespoon fresh thyme leaves, chopped
Kosher salt and freshly ground black pepper
1 1/2 cups chicken broth
1 cup heavy cream
1/4 cup fresh flat-leaf parsley leaves, chopped
3 tablespoons minced fresh chives, plus more for garnish
4 large eggs
2 cups grated Gruyere

Steps:

  • Preheat the oven to 350 degrees F. Grease six 12-ounce ramekins with 2 tablespoons of the butter and set aside on a rimmed baking sheet.
  • Spread the brioche on a second rimmed baking sheet and bake, tossing halfway through, until lightly browned, about 15 minutes.
  • Melt the remaining 2 tablespoons butter in a large skillet over medium-high heat. Add the sausage and squash and cook, breaking up the meat with the back of a spoon, until the sausage is browned and the squash is tender, about 8 minutes. Stir in the leeks, thyme, 1 teaspoon salt and 1/2 teaspoon pepper and continue to cook, stirring often, until the leeks are wilted and softened, about 5 minutes.
  • Whisk together the chicken broth, cream, parsley, chives and eggs in a medium bowl. Add half the brioche to the ramekins. Divide the sausage mixture among the ramekins; top with 1 cup of the Gruyere and the remaining brioche. Pour the egg mixture over and sprinkle with the remaining 1 cup Gruyere.
  • Set aside at room temperature for 15 minutes to allow the bread to absorb the egg mixture. Bake on the baking sheet until the custard is set and the bread pudding is puffed and golden, about 20 minutes. Sprinkle with chives before serving.

4 cans (4 ounces each) chopped green chiles, drained
1 pound bulk pork sausage, cooked and drained
2 cups shredded Monterey Jack cheese
10 large eggs, lightly beaten
1/2 cup 2% milk
1/2 teaspoon each salt, garlic salt, onion salt, pepper and ground cumin
Paprika
2 medium tomatoes, sliced
Sour cream and salsa

Steps:

  • In a greased 13x9-in. baking dish, layer half of the tortilla strips, chiles, sausage and cheese. Repeat layers. , In a large bowl, whisk the eggs, milk and salt, garlic salt, onion salt, pepper and ground cumin; pour over cheese. Sprinkle with paprika. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 50 minutes. Arrange tomato slices over the top. Bake 10-15 minutes longer or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting. Serve with sour cream and salsa.

Nonstick cooking spray
1 tablespoon canola oil
1 (8-ounce) package sliced white mushrooms
1/2 pound sweet Italian sausage, removed from casing
4 eggs
2 cups milk
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/2 baguette, day old, cubed

Steps:

  • Spray a 12 cup muffin tin with nonstick cooking spray and set aside.
  • Heat the canola oil in a large skillet over medium heat and saute the mushrooms. Add the sausage and stir over the heat until browned and cooked through.
  • In a large bowl whisk together the eggs, milk, Italian seasoning and salt and pepper. Add the cubed bread to the egg mixture and let the egg and bread mixture sit for at least 30 minutes in the refrigerator to allow the bread to absorb the liquid.
  • Preheat the oven to 325 degrees F.
  • Remove the egg mixture from the refrigerator, add the sausage and mushrooms and stir to combine. Ladle the bread pudding mixture into the muffin tins and bake until set, about 30 to 35 minutes. 3 cups all-purpose flour
1 cup yellow cornmeal
1/4 cup sugar
2 tablespoons baking powder
2 teaspoons kosher salt
2 cups milk
3 extra-large eggs, lightly beaten
1/2 pound (2 sticks) unsalted butter, melted, plus extra to grease the pan
8 ounces aged extra-sharp Cheddar, grated, divided
1/3 cup chopped scallions, white and green parts, plus extra for garnish, 3 scallions
3 tablespoons seeded and minced fresh jalapeno peppers

Steps:

  • Combine the flour, cornmeal, sugar, baking powder, and salt in a large bowl. In a separate bowl, combine the milk, eggs, and butter. With a wooden spoon, stir the wet ingredients into the dry until most of the lumps are dissolved. Don't overmix! Mix in 2 cups of the grated Cheddar, the scallions and jalapenos, and allow the mixture to sit at room temperature for 20 minutes.
  • Meanwhile, preheat the oven to 350 degrees F. Grease a 9 by 13 by 2-inch baking pan.
  • Pour the batter into the prepared pan, smooth the top, and sprinkle with the remaining grated Cheddar and extra chopped scallions. Bake for 30 to 35 minutes, or until a toothpick comes out clean. Cool and cut into large squares. Serve warm or at room temperature.

1 1/2 cups creamed corn
1 cup yellow cornmeal
1 cup butter, melted (2 sticks)
3/4 cup buttermilk
2 medium onions, chopped
2 eggs, beaten
1/2 teaspoon baking soda
1 1/2-2 cups sharp cheddar cheese, grated
3 jalapeno peppers, seeded, deveined and diced

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 9-inch square baking pan.
  • Combine first seven ingredients in a large bowl and mix well.
  • Turn half of batter into pan: cover evenly with half of cheese, then peppers, then remaining cheese.
  • Top with remaining batter.
  • Bake 60 minutes.
  • Let cool 15 minutes, cut into squares and serve.

8 ounces small shell pasta
8 ounces ground pork sausage, mild sweet, hot whatever
1/2 cup chopped onion
1 (15 ounce) jar mild salsa
1 (15 ounce) jar salsa con queso
1/2 cup fat free sour cream
6 ounces shredded cheddar cheese

Steps:

  • Preheat oven to 350. Lightly grease a 13 x 9 dish; set aside.
  • Cook shell pasta according to package; set aside and keep hot.
  • While pasta cooks, brown the sausage in a skillet with the onions until no longer pink; drain well.
  • Return the cooked sausage and onions to the skillet. Stir in the salsa, salsa con queso, and fat free sour cream.
  • Stir in the cooked shell pasta and mix well.
  • Pour into the prepared casserole dish.
  • Sprinkle with the cheese.
  • Bake at 350 for about 20 - 25 minutes.

Bergy gave me the idea to use jalapeno bread to make hamburger rolls... while my hamburger idea didn't quite fly, the buns were out of this world! I used 2 fresh and 1 canned Trappey's jalapenos, and sprinkled sesame seeds on top. I thought it had a wonderfully spicy flavour, and my fiancee informed me that many folks would think these were 'hot'. Give it a shot! I baked the buns on a baking stone for about 20 minutes. They made 6 large rolls.

1 package active dry yeast
1 cup water
1 egg, beaten
2 tablespoons butter, softened
4 -4 1/2 cups flour, divided

3 small canned jalapeno peppers or 3 small fresh jalapeno peppers, seeded and chopped
1 cup shredded sharp cheddar cheese
1/4 cup minced red onion

Steps:

  • Dissolve yeast in warm water in a large bowl; let stand 5 minutes until foamy.
  • Combine dissolved yeast, egg and butter; mix until butter melts.
  • Combine 3 cups flour, sugar, salt and garlic salt.
  • Gradually add flour mixture to yeast mixture, beating at medium speed of electric mixer until smooth.
  • Beat in peppers, cheese, onion and enough of the remaining flour to form a soft dough.
  • Turn dough out onto a well-floured surface and knead 1 minute.
  • Shape dough into a loaf; place in a greased 9 x 5 x 3-inch loaf pan.
  • Cover and let rise in a warm place, free from drafts, 30 minutes or until doubled in bulk.
  • Preheat oven to 400.
  • Bake 40 to 45 minutes or until done and loaf sounds hollow when tapped.
  • Remove from pan and allow to cool on wire rack.

1 jalapeno pepper, seeded and minced
