8 corn tortillas
1 1/4 cups chicken broth, divided
2 tablespoons olive oil
1 cup frozen chopped onions
1 cup frozen chopped green pepper
1 1/2 tablespoons minced garlic
1 (8-ounce) package fresh sliced mushrooms
1 pound ground turkey breast
2 cups plain yogurt
1 (15-ounce) can diced tomatoes
3 tablespoons fine flour (recommended: Wondra Flour)
2 tablespoons chili seasoning
1 (15-ounce) can artichoke hearts in water, drained and chopped
1 1/2 cups organic shredded jack cheese
1/2 cup crushed baked tortilla chips

Steps:

  • Preheat oven to 350 degrees F.
  • Place tortillas in a pie plate with 1 cup broth. Turn once in awhile to ensure all tortillas are soaked, set aside.
  • Place a large nonstick skillet over medium-high heat and add olive oil. Saute onions, peppers, garlic and mushrooms for 5 minutes until slightly browned. Add turkey and cook until turkey is cooked through, about 7 to 9 minutes. Add remaining 1/4 cup chicken stock and remaining ingredients, except cheese and tortilla chips. Stir thoroughly and bring to a boil. Reduce heat and simmer for 5 minutes.
  • Place 4 soaked tortillas in the bottom of prepared baking dish, tearing to fit. Layer half of turkey mixture and half of cheese. Repeat layers. Top with crushed tortilla chips. Place in oven and bake for 30 minutes.

Red Chilaquiles With Chicken image

Chilaquiles is a sort of top-of-the-stove tortilla casserole. In its simplest form, it consists of a freshly made salsa into which you stir fried tortillas. Sometimes eggs are added, and sometimes chicken as well. The salsa can be red or green; even thick black beans may be used. I favor microwave-toasted tortillas, but if you don't have the time, use baked tortilla chips. Serve this right after you've stirred in the tortilla chips, because if they're not fried, they will quickly become soggy.

1 (28-ounce) can tomatoes
1 jalapeño chile, or 2 serranos, seeded for a milder sauce and chopped
1/4 cup chopped onion, soaked for a few minutes in cold water, drained and rinsed
2 garlic cloves, halved, green shoots removed
1 tablespoon canola oil
1/2 to 1 cup water, chicken or vegetable stock, as needed
Salt to taste
1 large chicken breast, poached and shredded about 2 cups shredded meat
8 corn tortillas, toasted and coarsely broken up, or 2 cups baked tortilla chips
1/2 cup crumbled queso fresco or feta cheese
2 tablespoons chopped cilantro
1 small red or white onion, cut into thick rings, soaked for five minutes in cold water, then drained, rinsed and dried on paper towels

Steps:

  • Combine the tomatoes, chiles, chopped onion and garlic in a blender, and blend until coarsely pureed.
  • Heat the oil in a large, heavy nonstick skillet or a wide saucepan over medium-high heat, and add a drop of the puree. It should sizzle. Add all of the tomato puree, and cook, stirring, for about five to ten minutes, until the sauce darkens, thickens and begins to stick to the pan. Add water or stock if the mixture seems dry, and season to taste with salt. Turn the heat to low, and simmer, stirring often, for about 15 minutes, until the sauce coats the front and back of a spoon. Taste and adjust salt.
  • Stir in the chicken and heat through. Stir in the tortilla chips or pieces, stir together for a half minute, and remove from the heat. Spinkle the cheese, cilantro and sliced onion over the top, and serve.

10 (6 inch) corn tortillas, each cut into 8 wedges
Vegetable oil spray
2 poblano chiles, steamed, seeded, and chopped coarse
2 onions, minced
2 teaspoons Melt® Organic Buttery Spread

¼ cup minced fresh cilantro
6 cloves garlic, minced
2 teaspoons minced canned chipotle peppers in adobo sauce
1 (14.5 ounce) can whole peeled tomatoes
¾ cup low-sodium chicken broth
1 ½ pounds boneless chicken breasts, trimmed
Pepper
3 ounces crumbled queso fresco or feta cheese
¼ cup low-fat sour cream
1 tablespoon fresh lime juice
1 tomato, cored, seeded and chopped medium

Steps:

  • Adjust the oven racks to the upper-middle and lower-middle positions and heat the oven to 350 degrees. Spread the tortilla wedges on 2 rimmed baking sheets. Lightly coat both sides of the tortilla with vegetable oil spray.
  • Bake the tortilla wedges until they are lightly browned and begin to crisp, 8 to 12 minutes. Flip the tortilla wedges and continue to bake until the chips are fully toasted, 8 to 12 minutes longer. Set the tortilla wedges aside and turn the oven to 500 degrees.
  • Combine the poblano chiles, 1 cup of the onions, Melt®, and 1/8 teaspoon salt in a 12-inch skillet. Cover and cook over medium-low heat until the vegetables are softened, 8 to 10 minutes. Uncover, increase the heat to medium-high, and continue to cook, stirring occasionally, until the vegetables are lightly browned, 4 to 6 minutes longer.
  • Stir in 2 tablespoons of the cilantro, garlic, and chipotles and cook until fragrant, about 30 seconds. Stir in the tomatoes with their juice and the broth. Pat the chicken breasts dry with paper towels and season with 1/8 teaspoon pepper. Nestle the chicken breasts into the sauce and bring to a simmer over medium-low heat, about 5 minutes. When the sauce simmers, flip the chicken, cover, and continue to cook until the chicken registers 160 to 165 degrees on an instant-read thermometer, 10 to 12 minutes longer.
  • Transfer the chicken to a plate. When cool enough to handle, shred the meat into bite-sized pieces. Process the sauce in a blender until completely smooth, about 1 minute. Return the sauce to the skillet, season with salt and pepper to taste, bring to a simmer over medium heat.
  • Stir in the tortillas and cook until they begin to soften, about 2 minutes. Stir in the shredded chicken, then transfer the mixture to an 8-inch square baking dish. Sprinkle with the cheese and bake on the lower-middle rack until hot throughout, 5 to 10 minutes.

This tasty variation on traditional Mexican chilaquiles combines layers of fried corn tortilla strips with chicken simmered in a creamy, cilantro-lime sauce and a topping of melted Monterey Jack cheese.

6 6-inch corn tortillas (see gluten free notes below)
Vegetable oil
1-1/4 lb chicken tenderloins (about 12 pieces)
5 tablespoons flour (divided)
1 teaspoon ground cumin
Salt and freshly ground black pepper
1/2 cup onion (finely chopped)
1 clove garlic (very finely chopped)
1 cup low-sodium chicken broth
2 tablespoons freshly squeezed lime juice
1/4 cup cream
1 small red bell pepper (seeded and cut into thin strips)
1 jalapeño pepper (seeded and chopped)
4 to 5 scallions (chopped)
1/4 cup fresh cilantro (chopped)
1 cup coarsely grated Monterey jack cheese

Steps:

  • Stack the tortillas, cut them into thin (3/8-inch) strips, then cut the strips in half crosswise.
  • Add about 1/8-inch of vegetable oil to a large, heavy skillet. Heat over medium-high heat and once the oil is shimmering, add about 1/3 of the tortilla strips. Fry the strips until crisp and golden, tossing them frequently to ensure even cooking.
  • Transfer the cooked strips to a paper towel-lined plate and season with a pinch of salt while they're still hot. Repeat the process with the remaining 2 batches of tortilla strips, adding a little extra oil if necessary. Set aside and wipe out the pan.
  • Note: You can cut your prep time for this recipe by using store-bought tortilla chips. Just break up them up a bit and proceed with the rest of the recipe as written.
  • Preheat the oven to 350°F and coat a 9-inch square baking dish with nonstick spray.
  • If necessary, trim any white tendons from the chicken tenderloins and cut each one into 4 or 5 bite-sized pieces. Place 3 tablespoons of the flour in a shallow dish (a pie plate works well) and add the cumin, 1 teaspoon salt, a few grinds of black pepper and combine well. Dredge the chicken pieces in the flour, shake off the excess and set aside.
  • Add 2 tablespoons of oil to the pan you fried the tortilla strips in and return it to the stove over medium heat. Add the onion and sauté until soft and pale golden in color, 3 to 4 minutes. Add the garlic, sauté just until fragrant, then sprinkle with the remaining 2 tablespoons of flour. Combine well and continue cooking, stirring constantly, until the flour takes on a golden color, 2 to 3 minutes more.
  • Add the chicken broth and lime juice and whisk until smooth. Bring the mixture to a simmer and cook until the sauce is smooth and slightly thickened, 2 to 3 minutes. Stir in the cream, then pour the sauce into a measuring cup (2-cup) and set aside.
  • Wipe out the pan, return it to the stove over medium-high heat and add a little more oil. Add the chicken and cook, turning frequently, until the floured exterior is light gold, 2 minutes. Add the bell pepper and jalapeño, cook 1 minute longer, then add half of the reserved sauce. Stir in the scallions and cilantro and remove from the heat.
  • Scatter half of the fried tortilla strips in the bottom of the prepared baking dish. Add the chicken mixture in an even layer and top with the remaining tortilla strips. Pour the rest of the sauce over the top, then sprinkle with the cheese.
  • Bake for 15 to 20 minutes or until the cheese is melted and bubbly. Serve immediately.

Chilaquiles are tortillas cut into strips, fried, and cooked in either a red or green sauce. Literally meaning "poor man's food", chilaquiles were undoubtedly invented as a way of using up leftover tortillas. They have evolved into a very versatile dish, with some rather sophisticated variations. The following version uses a red sauce; however a green sauce, such as the one given for Huevos al Albañil, below, is also very good. This is by KAREN HURSH GRABER.

20 medium corn tortillas
1/2 cup vegetable oil
6 ancho chilies, seeded, deveined and soaked in hot water until soft
4 roma tomatoes, roasted and peeled
2 large garlic cloves, peeled
1/2 medium white onion, peeled
1/2-1 cup chicken broth
1 1/2 cups gouda cheese or 1 1/2 cups chihuahua cheese
1 chicken breast, poached and shredded
thinly sliced onion
1 cup creme fraiche (crema acida) or 1 cup sour cream (crema acida)

Steps:

  • Cut the tortillas into strips or wedges. In a large saucepan or cazuela, heat the oil, add the tortilla strips, and fry until crisp. Remove and drain on paper towels.
  • Place the softened chiles, tomatoes, garlic and onion in a blender and puree until smooth. Pour the mixture into the same saucepan used to fry the tortillas, bring to a boil, lower heat, and cook for about 15 minutes. Add salt to taste.
  • Place the tortilla strips in the hot sauce, add the chicken broth and cook until most of the sauce has been absorbed.
  • Distribute the shredded cheese and chicken over the chilaquiles. Garnish with onion rings and serve with crema.

This casserole comes from the "Los Barrios Family Cookbook" and although it is tasty with just plain chicken, it is elevated to sublime using Canary Girl's Chicken Verde. Just make sure you drain any excess liquid off the chicken. Assemble the dish right before baking -- if you do it in advance, the sauce may make the tortilla strips soggy. You can buy green tomatillo sauce in cans, but I have also posted Los Barrios recipe.

2 whole chicken breasts, split

2 cups chicken stock
3 1/2 cups Tomatillo Salsa, recipe follows
1/2 cup heavy cream
1 onion, sliced paper-thin
1/2 cup vegetable oil
12 day-old Corn Tortillas, recipe follows (18 if individual casseroles are being made)
1 cup grated Manchego cheese
1 cup grated Panela cheese
1/2 cup grated Anejo cheese
1 pound tomatillos, husked, washed and cut into quarters
2 - 4 large jalapeno chiles, stemmed, seeded if desired and roughly chopped
1/2 cup cold water
1/2 medium onion, cut in half
2 bunches cilantro, stems and leaves
2 teaspoons salt
4 cups finely ground deep yellow masa harina
2 3/4 cups cold water
1 teaspoon salt

Steps:

  • Season the chicken all over with salt and pepper. Bring the chicken stock to a boil in a large saucepan. Place the breasts in the stock, reduce the heat to moderate, cover and cook until the meat is tender, about 15 minutes. Set aside to cool in the stock. When cool, remove the skin and bones and shred the meat into bite-sized pieces. Strain and reserve the stock for another use.
  • In a large mixing bowl, combine the fresh tomatillo salsa, heavy cream, 1 teaspoon salt, 1/2 teaspoon pepper, the onion and shredded chicken pieces.
  • Heat the vegetable oil in a medium skillet over medium-low heat. Cook the tortillas just about 5 seconds per side to soften, and then transfer to a large colander to drain.
  • Preheat the oven to 350 degrees F. Butter a 4 quart casserole or 6 to 8 individual casseroles (at the restaurant, we use small soup bowls).
  • Combine the cheeses in a mixing bowl.
  • To assemble the chilaquiles, spread a thin layer of the cheese mixture over the bottom of the baking dish. Push the solids in the bowl of chicken and tomatillo sauce to the side so the liquids form a pool in the bottom. Dip all the softened tortillas in the pool to moisten. Layer one third of the moist tortillas over the cheese and top with half of the chicken mixture with its sauce. Sprinkle half of the remaining cheese over the chicken. Repeat the layers, ending with a layer of tortillas on top. Cover tightly with aluminum foil.
  • Bake 30 minutes or until the edges are slightly brown. Let sit for 10 minutes before slicing and serving or unmolding.
  • In blender place tomatillos, jalapenos and water. Puree until just chunky. Add remaining ingredients and puree about 2 minutes more, or until no large chunks remain. This salsa keeps in the refrigerator, in a covered container, about 3 days.
  • In large bowl combine all ingredients and stir until smooth. The dough should be slightly sticky and form a ball when pressed together. To test, flatten a small piece of dough between your palms. If the edges crack, add water to the dough, a tablespoon at a time, until a test piece does not crack.
  • Divide the dough into 24 golf ball size pieces for tacos and 12 large balls for quesadillas. Place on a platter and cover with a damp towel. Line a tortilla press with 2 sheets of plastic cut from a plastic freezer bag or other heavy duty plastic bag.
  • Heat a dry cast iron skillet, or non-stick pan until moderately hot. Flatten each ball of dough in the tortilla press, then remove the plastic from the top and, holding the tortilla with your fingertips, peel off the bottom sheet. Lay the tortillas one by one on the skillet and cook about 30 to 45 seconds per side, pressing the top of each tortilla with your fingertips to make it puff. Place the hot tortillas on a towel.
  • When they are still warm but not hot, stack and wrap in a towel. Serve immediately or let cool, wrap well in plastic or a plastic bag and store in the refrigerator up to a week.

This is my daughters favorite recipe for leftover turkey. I love it too! Don't let the long list of ingredients scare you. It seems time consuming but it does go together quickly once you have everything ready. I got it out of an old cookbook magazine called Fresh Turkey Ideas. We really look forward to Thanksgiving just to have this as our traditional left over. Hope you enjoy!

4 poblano chiles, roasted, peeled, seeded and finely chopped or 1/2 cup poblano chile
1 large onions, finely chopped or 1 cup onion
1 jalapeno, seeded and finely chopped
1 garlic clove, finely chopped
2 tablespoons vegetable oil
1/2 cup heavy whipping cream
1/4 teaspoon salt
1/2 cup vegetable oil
10 (6 inch) flour tortillas, cut into 1/2 inch strips
2 cups cooked chicken or 1 lb boneless chicken
2 cups mozzarella cheese, shredded or 8 ounces mozzarella cheese

Steps:

  • Prepare New Mexico Green Sauce; Set oven control to broil. Arrange poblano chilies on broiler rack with tops about 5 inches from heat. Broil 12 to 17 minutes, turning occasionally, until skin is blistered and evenly browned (not burned). Remove chilies to plastic bag; close tightly. Let stand 20 minutes. Peel, seed and finely chop chilies.
  • Cook onion, poblano and jalapeno chilies and garlic in 2 tbls oil over medium heat about 8 minutes, stirring occasionally, until onion is tender. Stir in whipping cream and salt. Set aside.
  • Heat 1/2 cup oil in 10-inch skillet until hot. Cook tortilla strips in hot oil 30 to 60 seconds or until light golden brown; drain.
  • Heat oven to 350 degrees. Grease 2-quart casserole.

2 quarts water
1 1/2 pounds tomatillos, husks removed
4 serrano chiles
2 garlic cloves
1/2 small yellow onion
12 medium-size day-old corn tortillas
Canola oil, for frying
2 medium size chicken breasts boneless and skinless
8 ounces asadero-style cheese grated (may substitute Monterey Jack)
4 ounces Mexican cream or creme fraiche
1/2 small yellow onion, finely chopped
1 medium avocado, peeled and sliced

Steps:

  • In a medium sauce pan boil the water, add the tomatillos and serrano chiles and let them cook for about 8 minutes. In a blender puree the tomatillos, chiles, garlic, and onions using enough of the tomatillo water to make a sauce consistency. Strain.
  • Cut the tortillas in half and then in quarters making 8 triangles from each one. In a medium-size skillet heat the oil, fry the tortillas until crisp and remove from heat.
  • In a medium-size skillet saute the chicken breast until done and then slice into 1-inch strips.
  • In a medium sauce pan bring the tomatillo salsa to a boil, taste for salt, and season if necessary, add the crispy tortillas and let simmer for about 4 minutes or until the tortillas get soft.
  • In a 8 by 8 inch baking dish, place some of the chilaquiles with sauce, add some of the chicken strips, cover with more tortillas then top with the grated cheese. Bake in a preheated 400 degree F. oven until the cheese melts, garnish with the cream, chopped onion, and avocado slices.

Simple Chipotle Chilaquiles (Tortilla

12 medium-thick (10 ounces) corn tortillas, cut into sixths, fried to make chips or 8 ounces (8 to 12 loosely packed cups, depending on thickness) thick, homemade-style tortilla chips
1 (28-ounce can good quality whole tomatoes in juice, drained or 1 1/2 pounds (about 3 round, or 9 to 12 plum) ripe tomatoes
2 to 3 canned chipotle en adobo or 2 to 3 dried chipolte chiles, stemmed
1 1/2 tablespoons vegetable or olive oil
1 large white onion, sliced 1/4-inch thick
3 garlic cloves, peeled and finely chopped
2 1/2 cups chicken stock, vegetable broth or water, plus a little extra if needed
Salt, about 1/2 teaspoon
About 1/3 cup homemade crema, creme fraiche or store bought sour cream thinned with a little milk
1 1/2 cups coarsely shredded cooked chicken (optional)
1/4 cup finely crumbled Mexican queso anejo or other dry grating cheese like Romano or Parmesan
3 tablespoons roughly chopped fresh epazote or 1/2 cup chopped cilantro

Steps:

  • Make the chips or measure out the store bought chips. For the sauce. If using drained canned tomatoes, place them in a blender jar. If using fresh tomatoes, spread the onto a baking sheet and place them 4 inches below a very hot broiler. When they are darkly roasted (they'll be blackened in spots), about 6 minutes, flip them over and roast the other side-5 to 6 minutes more will give you splotchy-black and blistered tomatoes that are soft and cooked through. Cool. Working over your baking sheet, pull off and discard the blackened skins, and for round tomatoes, cut out the hard cores where the stems were attached. Transfer to a blender, along with all the juices on the baking sheet. If using canned chipotles, add them to the blender, seeds and all, If using dried chipotles, toast them in a dry skillet over medium heat for a couple of minutes, turning frequently until very aromatic. Place in a small bowl, cover with hot tap water and let rehydrate 30 minutes. Drain and add to the blender. Blend the tomatoes and chiles to a puree, but one that still retains a little texture. You should have 2 1/4 cups puree. Over medium heat, set a medium-large wide pot (like a 4-quart Dutch oven of Mexican cazuela) or a deep, large (12-inch) saute pan-you'll need a lid for whatever vessel you choose. Measure the oil, add half of the onion and cook, stirring regularly, until richly golden, about 7 minutes. Add the garlic and stir for another minute, then raise the heat to medium-high. Add the tomato puree and stir nearly constantly for 4 to 5 minutes, until the mixture thickens somewhat. Stir in the broth or water and season with salt. The sauce needs to be seasoned highly with salt, but watch out if your chips or broth is already salted. Cover the pot if not continuing with step 2 right away. You should have 4 1/2 cups broth mixture. To cook and serve the chilaquiles. Set out the crema, chicken and cheese. Put the pot over medium high heat until the broth mixture boils. Stir in the epazote (if you're using cilantro, set it aside to add later) and the tortilla chips, coating all the chips well. Let return to a rolling boil, cover tightly and turn off the heat. Let stand 5 minutes (no longer). Immediately uncover and very carefully stir to coat the chips evenly with the sauce and to check that the chips have softened nicely-they should be a little chewy, not mushy. (If they are too chewy, stir in a little more broth, cover and set over medium heat for 3 or 4 more minutes). Sprinkle with the cilantro, if that is the herb you're using. Either spoon onto warm individual plates in the kitchen or serve directly from the vessel it was made in. Whichever you choose, drizzle the chilaquiles with the crema (or one of its stand-ins), strew with the remaining sliced onion and the optional shredded chicken, and dust generously with the finely crumbled cheese.;

When I read the recipe it sounded SO good I just had to try it. Once I located all the ingredients and made it, all my friends and family asked the same...

2 c rotisserie chicken, deboned, shredded or cut into large bite size pieces. you may also use 2 chicken breasts cooked in chicken broth. cut when cooled.
3 1/2 c jarred tomatillo salsa (salsa verde). you may also make from fresh. see recipes on jap.
1/2 c heavy cream
2 Tbsp sour cream, mixed well into heavy cream
1 onion, sliced paper thin
1/2 c vegetable oil
12 day old corn tortillas
1 c manchego cheese, grated
1 c panela cheese, grated
1/2 c anejo cheese, grated.
NOTE: IF YOU CANNOT FIND THESE CHEESES YOU MAY USE A FIESTA BLEND BAGGED CHEESE.

Steps:

  • 1. Preheat oven to 350 degrees F. Lightly butter 4 qt. casserole. In large mixing bowl, combine tomatillo salsa, heavy cream/sour cream, dash salt/pepper.
  • 2. Heat the vegetable oil in large skillet over low-medium heat. Cook tortillas just 5 seconds per side to soften. Transfer to platter w/ paper towels or into colander to drain.
  • 3. TO ASSEMBLE CHILAQUILES: Spread layer of cheeses mixture over bottom of casserole dish. Dip each tortilla, one at a time, in tomatillo sauce to moisten. Set moistened tortillas aside.
  • 4. Integrate onions and chicken into sauce, mix well to combine. Layer 1/3 of moistened tortillas over cheese in casserole dish. Top tortillas with 1/2 of tomatillo sauce.
  • 5. Sprinkle remaining cheeses over sauce. Now repeat the second layer with tortillas and remaining sauce, ending with layer of moistened tortillas on top. If desired (I always do!) sprinkle another half cup of cheeses over tortillas.
  • 6. Cover casserole tightly with aluminum foil. Bake @ 350 for 35 minutes. Remove foil and bake 5-10 minutes more or until edges are slightly brown. Let sit 10-15 minutes prior to serving.

  • In a 3- to 4-quart pan over high heat, combine 1 1/2 quarts water, onion, and garlic. Rinse dried ancho chilies, break off and discard stems, and add chilies to pan. Cover and bring to a boil. Add chicken, cover, and return to a boil. Remove from heat and let stand, covered, until chilies are soft and chicken is no longer pink in center of thickest part (cut to test), 12 to 18 minutes. If chicken is still pink, return it to the hot liquid, cover pan, and let steep a few minutes longer.
  • Meanwhile, cut tortillas into 1/2-inch-wide strips, then cut strips in half crosswise. Put oil in a 10- to 12-inch frying pan over medium-high heat. When oil is hot, add a fourth of the strips and cook until lightly browned and crisp, 3 to 5 minutes. Remove with a slotted spoon and drain on paper towels. Keep warm in a 200° oven. Repeat to fry remaining strips.
  • Remove cooked chicken from liquid, reserving liquid and vegetables. When chicken is cool enough to handle, in about 10 minutes, tear meat into shreds.
  • Pour onion-chili mixture into a strainer set over a bowl; reserve liquid and put strained vegetables into a blender or food processor. Purée chili mixture, tomatoes, and jalapeño until smooth. If you prefer a thinner sauce, add 2 to 3 tablespoons reserved liquid (discard remainder). Season to taste with salt.
