GRILLED STRAWBERRY-LIME MEZCAL MARGARITA



Grilled Strawberry-Lime Mezcal Margarita image

Number Of Ingredients 7

4 limes, halved, plus fresh lime juice for rimming, optional
10 strawberries, stems removed, skewered
Kosher salt, optional
2 ounces triple sec, plus more for rimming, optional
1/4 cup agave syrup
4 ounces mezcal
Garnish: 2 fresh strawberries or lime wedges or wheels

Steps:

  • Preheat a grill to high.
  • Place the limes cut-side down on the grill along with the skewered strawberries and cook until charred, 3 to 5 minutes. Allow the limes and strawberries to cool, then juice the limes, enough to get 2 ounces.
  • Rim 2 margarita or rocks glasses with salt, if desired, by dipping the rim in lime juice, water or extra triple sec, then in the salt. Place the agave, mezcal, grilled lime juice, grilled strawberries and triple sec in a blender along with 1 cup ice. Blend for 30 seconds. Pour into rimmed glasses. Garnish with a strawberry or lime.

Yield Makes 8 cocktails

Number Of Ingredients 6

1 1/2 cups Oaxacan mezcal
2 cups Limonada
1/2 cup triple sec
50 to 60 drops (1 1/2 to 2 teaspoons) orange bitters (store-bought or homemade)
6 cups ice
About 2 heaping teaspoons finely chopped orange zest (colored peel only; see Cook's Note)

Steps:

  • In a pitcher, combine the mezcal, Limonada, triple sec and bitters. Stir well to combine, then cover and refrigerate until chilled, about 2 hours.
  • Fill a cocktail shaker half full with ice and pour in 1 cup of the margarita mixture. Shake and strain into two 6-ounce martini glasses. Add 1/4 teaspoon orange zest to each glass and serve immediately. Repeat for the remaining margaritas.

LEMON MEZCAL MARGARITA

Say hello to summer's new go-to drink. Instead of the traditional lime juice used in a margarita, we went with lemon juice to soften the smokiness of the mezcal. It's light and refreshing enough for a pool party but has a little edge thanks to its salt and pepper rim.

2 ounces fresh lemon juice, plus wedges for serving
6 ounces mezcal
4 ounces orange liqueur, such as Cointreau
Flaky sea salt and freshly ground black pepper
Ice

Steps:

  • Mix equal parts salt and pepper on a plate. Run a wedge of lemon around the rim of two rocks glasses; dip into salt and pepper mixture. Place mezcal, triple sec, and lemon juice in a cocktail shaker filled halfway with ice; shake until outside is cold and frosty, about 30 seconds. Strain over ice into prepared glasses; serve immediately with lemon wedges.

MEZCAL-TEQUILA MARGARITA

The spirit base of this margarita is split between tequila and mezcal, which gives the final drink a deep, complex flavor, and provides an excellent excuse to rim the glass with sal de gusano, or worm salt. With roots in Oaxaca, Mexico, sal de gusano is made from toasted, ground gusano (the moth larvae that feeds on the agave plant), salt and dried chiles, and is traditionally served alongside mezcal. If you're running low on tequila or mezcal, feel free to use 1 1/2 ounces total of whichever agave-based spirit you have.

3/4 ounce mezcal
3/4 ounce reposado tequila
3/4 ounce orange liqueur (such as Pierre Ferrand Dry Curaçao, Cointreau or triple sec)
3/4 ounce fresh lime juice
1/4 ounce simple syrup
Ice
Sal de gusano (worm salt) or kosher salt
Lime wedge

Steps:

  • Prepare the salted half rim, if using: In a small shallow bowl or plate, sprinkle a thin layer of the sal de gusano. Run the lime wedge along half of the rim of a rocks glass, then dip the rim into the salt mixture.
  • In a shaker, combine the tequila, mezcal, orange liqueur, lime juice and simple syrup. Add ice, cover, and shake vigorously until the drink is well chilled, about 15 seconds.
  • Fill the glass with ice, then strain the margarita into the glass. Add the lime wedge; enjoy immediately.

1 tablespoon white sugar
1 teaspoon kosher salt
1 lime wedge
1 jalapeno pepper, seeded and roughly chopped
1 ½ teaspoons white sugar
½ cup freshly squeezed orange juice
¼ cup mezcal
3 tablespoons freshly squeezed lime juice

Steps:

  • Mix 1 tablespoon sugar with salt on a shallow, rimmed plate. Use lime wedge to wet rims of two 6- to 8-ounce glasses. Dip rims into sugar mixture.
  • Combine jalapeno and 1 1/2 teaspoons sugar in a cocktail shaker and muddle until sugar is dissolved and jalapeno is juiced. Add orange juice, mezcal, and lime juice to shaker, then fill with ice. Cover and shake until chilled, about 30 seconds. Strain into glasses to serve.
