1 (19 ounce) can chickpeas, drained
1/2 cup black olives, pitted & chopped
1/4 cup scallion, chopped
2 tablespoons fresh cilantro, finely chopped
1 garlic clove, crushed
1 tablespoon olive oil
2 tablespoons lemon juice
1/2 teaspoon paprika
1/8 teaspoon cayenne powder
salt, to taste

Steps:

  • Mix all the ingredients together in a glass bowl until well blended.
  • Serve at room temperature.

Use a touch of harissa to liven up a healthy chickpea salad. It takes just 10 minutes to whip up and makes an ideal side dish for slow-cooked Greek lamb

400g can chickpeas, drained and rinsed
small pack coriander, roughly chopped
small pack parsley, roughly chopped
1 red onion, thinly sliced
2 large tomatoes, chopped
2 tbsp olive oil
2 tbsp harissa
1 lemon, juiced

Steps:

  • Mix all the ingredients together, mashing a little so the chickpeas are a bit rough round the edges - this helps absorb the dressing. (Can be made a day ahead and kept in the fridge.) Try it with slow-cooked Greek lamb and tzatziki sauce.

I was inspired to do a Chickpea salad from this book132+ Delicious Salads, Dressings And Dips (Gabrielle's FUSS-FREE Healthy Veg Recipes) by Gabrielle Raiz. It had a Chickpea Salad with quinoa and many other veggies. But I only took view of it's ingredients like chickpea, parsley, olives. The rest I mostly made up myself and it turned out so Simple, healthy and yummy. You can adjust some of the ingredients, like add more chickpeas or use any kind of tomatoes you want (for this recipe I used grape tomatoes).

1/2 cup low-sodium chickpeas
6 cherry tomatoes (chopped into quarters)
1/8 cup black olives (chopped into quarters)
1 tablespoon fresh parsley (finely chopped)

1 tablespoon lemon juice
1 dash salt (optional)

Steps:

  • Mix the ingredients well and serve.

2 (15 ounce) cans chickpeas, drained and rinsed
5 ounces feta cheese, cut into cubes
8 ounces cherries or 8 ounces grape tomatoes
2 ounces black olives, pitted
4 tablespoons flat leaf parsley
lettuce or other salad greens
5 tablespoons olive oil
1 tablespoon lemon juice
1 garlic clove, crushed
salt, to taste

Steps:

  • Place the chickpeas in a bowl and add the feta cheese cubes.
  • Cut the tomatoes in half if necessary, to make them bite-sized.
  • Add tomatoes to the chickpeas and feta cheese mixture. Add the black olives, parsley, and lettuce.
  • Combine dressing ingredients in a small bowl.
  • Pour over chickpea mixture, toss gently, and chill.
  • Serve chilled or at room temperature.

  • Drain the jar of chickpeas and rinse under cold running water, once they´re well cleaned shake off any excess water and add the chickpeas to a large bowl, rinse 1/2 cup of green pimento stuffed Spanish olives under cold running water just for a few seconds, then shake off any excess water and transfer the olives to a wood cutting board, using a chef´s knife push down on the olives that way they dont roll off the board when you cut them, finely dice them and add to the bowl with the chickpeas, do the exact same thing with a 1/4 cup of black Spanish olives, then finely mince 2 cloves of garlic and them to the bowl
  • Season everything with a generous 1/2 teaspoon of dried thyme, a generous 1/2 teaspoon of dried oregano, a generous 1/2 teaspoon of dried parsley, a generous 1/2 teaspoon of sea salt and about 1/8 teaspoon of freshly cracked black pepper, for the last ingredient grab a handful of fresh chives, finely chop them and them to the bowl
  • To make the dressing add a 1/4 cup of extra virgin Spanish olive oil into a seperate bowl along with 1 tablespoon of white wine vinegar and whisk it all together, then drizzle the dressing on top of the salad and mix everything together until well combined, enjoy!
