SPINACH AND CHICKPEA RICE PILAF

Spinach and Chickpea Rice Pilaf image

This Spinach and Chickpea Rice Pilaf is infused with herbs and bright pops of lemon and feta. Cooks in one skillet for easy cleanup!

Provided by Beth - Budget Bytes

Time 40m

Number Of Ingredients 13

1 fresh lemon ($0.37)
1/2 lb. frozen chopped spinach ($0.79)
2 cloves garlic ($0.16)
1 yellow onion ($0.32)
2 Tbsp olive oil ($0.32)
1 cup long grain white rice (uncooked) ($0.66)
1 tsp smoked paprika ($0.10)
1/2 tsp dried oregano ($0.05)
1/4 tsp ground cumin ( $0.03)
1 15oz. can chickpeas ($0.55)
1 3/4 cup vegetable broth ($0.23)
1 oz. feta, crumbled ($0.38)
1 pinch crushed red pepper (optional) ($0.02)

Steps:

  • Zest the lemon, set the zest aside, then squeeze the juice into a small bowl. Thaw the spinach in the microwave and then squeeze out the excess liquid.
  • Mince the garlic and dice the onion. Sauté the onion and garlic in olive oil over medium heat in a deep skillet until the onion are soft and translucent (about 3-5 minutes).
  • Add the smoked paprika, oregano, cumin, and dry rice to the skillet. Stir and cook over medium heat for about 2 minutes to toast the rice and spices. You should hear the rice popping and it should begin to look slightly translucent.
  • Drain the chickpeas and add them to the skillet along with the spinach. Add about 2 Tbsp of the lemon juice and the vegetable broth to the skillet, then stir the ingredients to combine.
  • Place a lid on the skillet and turn the heat up to medium-high. Allow it to come to a boil, then immediately turn it down to low or just above low. Let the skillet continue to simmer for 15 minutes, with the lid in place. After 15 minutes, turn the heat off and let it sit undisturbed for an additional 5 minutes.
  • Remove the lid and fluff the skillet with a fork to redistribute the chickpeas and spinach. Sprinkle the lemon zest and crumbled feta over the skillet just before serving.

BULGUR PILAF WITH CHICKPEAS

Bulgur Pilaf With Chickpeas image

Adapted from "The PDQ Vegetarian Cookbook" by Donna Klein. The recipe recommends fancy (fine grain) bulgur as it cooks faster, although none of the stores I went to had more than one kind to pick from so I took what I could get (I believe it was medium). The original recipe also called for frozen chopped onion and jarred minced garlic - I used fresh. This recipe was my first experience with toasted sesame oil - delicious!

Categories     One Dish Meal

Time 30m

Yield 4 , 4 serving(s)

Number Of Ingredients 11

1 cup Bulgar wheat
1 cup boiling water
1 tablespoon extra virgin olive oil
1/2 tablespoon toasted sesame oil (dark)
1/2 onions, chopped or 1/2 cup onion, frozen chopped
1 garlic cloves, minced or 1 teaspoon garlic, refrigerated bottled minced
1 (19 ounce) can chickpeas, rinsed and drained
1 cup low sodium vegetable broth
2 tablespoons diced pimentos, drained (optional)
1 teaspoon ground cumin
salt and pepper, to taste

Steps:

  • In a medium bowl, combine bulgur and boiling water. Let stand 10 minutes to soften.
  • In a deep-sided skillet with a lid heat olive oil and sesame oil over medium heat.
  • Add the onion and cook, stirring until softened, about 3 minutes.
  • Add the garlic and cook, stirring constantly, about 1 minute.
  • Add the chickpeas, broth, reserved bulgur (and any accumulated water at bottom of bowl), pimiento (if using), cumin, salt and pepper. Stir well to combine; bring mixture to boil over high heat.
  • Reduce heat to low, cover and simmer until the bulgur has absorbed all the liquid, about 15 minutes.
  • If the bulgur seems to wet (it should be moist but not soggy), increase heat to medium and cook, uncovered, stirring often, until fairly dry.
  • Fluff with a fork and serve warm.

  • Combine rice, water and 1/2 tsp salt in a saucepan, bring to boil, turn down then simmer for 8 to 10 minutes until the water is mostly absorbed. Remove from heat and let rest for 10 minutes - it will absorb the remaining water.
  • While rice is cooking, combine chickpeas, 1/4 tsp salt, cumin and garam masala in a bowl, toss to coat.
  • Heat 1 tbsp olive oil in large pan over high heat, add the chick peas and shake the pan every now and then for 1 minute. Alternatively, you can roast them in the oven at 350F/180C for 5 minutes. Set aside - you can leave them in the pan if you want.
  • After the rice has rested, combine with the chickpeas, parsley, coriander and sultanas, and a grind of black pepper. Some of the spice on the chickpeas will come off and disperse throughout the rice - this is supposed to happen. Adjust salt if necessary.
