FRIED CHICKPEA SALAD

Steps:
- In a small bowl, stir together the yogurt, lemon juice, and 1 tablespoon of the oil, or more as needed. Season with salt and pepper. Set aside.
- In a large skillet over high heat, add 3 tablespoons of the oil. When the oil is hot, add the chickpeas. Cook, tossing occasionally, until they're golden and crisp on the exterior, 2 to 3 minutes.
- Reduce the heat to medium high and add the scallions, garlic, and cumin. Cook and stir until the scallions just begin to wilt, about 2 minutes. Transfer to a sheet tray and let cool slightly, about 15 minutes.
- Pour the chickpeas into a large bowl. Add the arugula, kale, tomatoes, cilantro, mint, cheese, and pine nuts. Pour over the yogurt dressing, season with salt and pepper. Toss well and serve.
CHICKPEA-VEGGIE LOAF
I enjoy this scrumptious loaf time and again, including for Christmas dinner. Be sure to serve with Roasted Garlic Gravy (#203656) and a baked acorn squash, along with salad or sweet peas, for a real feast.

- Saute the vegetables in a little water, till the onions are well softened.
- Put the chickpeas in a colander, and rinse for 1 minute under hot water. This will make them much easier to mash. Put them in a large bowl and mash with a fork or potato masher.
- Heat oven to 300°F.
- Combine all other ingredients with the chickpeas, and mix well.
- Transfer mixture to a nonstick or lightly oiled loaf pan and pat in in evenly. Cover the pan with aluminum foil and bake for 1 hour.
- Cool the loaf, in the pan, for a few minutes before serving.
- Leftovers are great warmed up on a toasted sandwich with gravy!

CHOCOLATE HAZELNUT BANANA BREAD

- Preheat the oven to 350 degrees F. Lightly brush the inside of a 10-by-5-inch loaf pan with coconut oil and line with a strip of parchment paper. Set aside.
- Mash the bananas with the back of a fork in a large bowl until only a few lumps remain. Add the eggs and mix until smooth. Using the fork, whisk in the coconut oil, yogurt, sugar, salt and vanilla until smooth and incorporated. Add the flour and baking soda and use a rubber spatula to stir until combined, being careful not to overmix. Fold in the hazelnuts, if using, and the chocolate chips.
- Pour half of the batter into the prepared pan. Dollop half of the hazelnut spread over the top of the batter. Swirl the spread into the batter using the tip of a knife. Top with the remaining batter and repeat with the remaining hazelnut spread. Bake until the bread is firm to the touch and a toothpick inserted in the center comes out with very few crumbs (the streaks of hazelnut spread will still be wet), 1 hour to 1 hour and 5 minutes. Allow to cool for 30 minutes in the pan.
- Turn the pan on its side and let rest an additional 30 minutes. Loosen the edges with a knife and remove to a wire rack to cool completely. The bread will keep for 4 days at room temperature.
HAZELNUT-CHICKPEA-CHOCOLATE SPREAD

- In a food processor, pulse the hazelnuts until they form a fine meal. Add the chickpeas and process until combined. Add the coconut sugar, cocoa powder, oil, vanilla and 1/4 cup water and process until smooth.
- Serve the spread with strawberries, pretzels and/or graham crackers.
CHICKPEA LOAF WITH HAZELNUTS
A lovely savoury loaf with some extra crunch from hazelnuts! I made this for DH's vegetarian daughter this Christmas - it was a big hit with the carnivores, too! Recipe adapted from Kasviskasari website. ETA: Note that the potatoes must be grated very fine. The end result should be more like mash, not shreds - this way they won't be left uncooked.

- Soak raisins (if using) for a few hours to plump them up.
- Preheat oven to 150°C Line a loaf pan with foil.
- Finely chop onion. Peel and finely grate potatoes.
- Drain and rinse chickpeas. Mash.
- Combine onion, potatoes and chickpeas. Add raisins, oil and seasonings. Mix well.
- Transfer mixture to prepared pan, press down gently and smooth the surface. Bake in the preheated oven for about 20 minutes.

- In a small stockpot over medium heat, saute the onions in olive oil for about 7 minutes. Add the garlic and saute for 2 more minutes.
- Add the tomato paste, coriander, cumin, black pepper, and salt; saute for another minute.
- Add the quinoa and saute for 2 minutes.
- Add the chickpeas and broth; cover and bring to a boil. Once the mixture is boiling, lower the heat to very low, cover, and cook for about 18 minutes, or until the quinoa has absorbed all the water; stir occasionally.
- Fluff with a fork and serve.
MEATLOAF WITH CHICKPEAS
This recipe intrigued me because it had all the ingredients I liked, plus the fact that I would be getting more fiber in the meal. The chickpeas are "hidden" in the meat loaf, so a bonus for anyone who does not like beans. I am not a big fan of ketchup, so next time I may try chili sauce....(mind you, the other ingredients masked the taste quite well). As I was cooking for my DH and myself, I divided the meat mixture into 2 smaller loaf pans and froze one. The loaf was quite moist, so freshly ground up flaxseed ( 2 T - 1/4 cup) could be an option that I might use for the next time.

- In a food processor, puree onion with garlic. In a large bowl, combine onion mixture, beef, chickpeas, breadcrumbs, egg, chili sauce, mustard, Worcestershire, hot pepper sauce, cumin, salt, pepper and parsley. Knead together lightly.
- Transfer to a 9 - 5 loaf pan and smooth top. Bake in at 350°F oven for 45 minutes or until meat thermometer inserted into centre of loaf reads at least 160°F.
- To prepare topping, combine chili sauce with mustard; spread over the loaf. Bake, uncovered for 30 minutes.
- Note: For smaller portions, divide the loaf into 2 smaller loaf pans. Cooking time is the same. I used the food processor to chop up the chickpeas. I am not a fan of store bought (dried out) bread crumbs, so I used 3 slices of flax seed bread. Regular or whole wheat bread could be used.

- Preheat oven to 350°F.
- In a food processor, puree' onion and garlic.
- In a large bowl, combine onion/garlic puree', both ground beef, chickpeas, breadcrumbs, beaten egg, chili sauce, Dijon mustard, Worcestershire sauce, hot pepper sauce, cumin, salt, pepper and parsley; mix well to blend.
- Transfer mixture to a lightly oiled 9" x 5" loaf pan, press mixture firmly down and smooth the top.
- Cover with aluminum foil and bake in preheated 350 F oven for 45 minutes or until tested with a thermometer inserted into the center of the loaf; shoud read at least 160 - 165°F.
- In the meantime, prepare the topping in a small bowl, combine chili sauce and Dijon mustard.
- Remove loaf from oven and drain any fat that may have accumulated.
- Spread the chili sauce/Dijon mixture over the loaf.
- Immediately return meat loaf to oven and bake uncovered for another 30 minutes at 350°F.
- Remove from oven and let rest for about 15 minutes before slicing.
- This meat loaf is excellent eaten cold in a sandwich.

- Preheat the oven to 375ºF and line a bread pan with parchment paper so that the parchment hangs out over the two opposing longer sides and set aside. See the explanation and video in the post.
- In a small bowl, mix the flaxseed with 5 tablespoons of water and set aside for 5 minutes to thicken.
- In a large sauté pan, sauté the onion, carrot, and celery in ¼ cup of water for 10 minutes or until the onions have softened and the carrots are tender. Add water as needed, 1 tablespoon at a time, to prevent burning. Add the garlic and sauté for another minute or until any liquid in the pan has evaporated. Remove from the stove and set aside.
- Now add the chickpeas, walnuts, and rolled oats to a food processor and pulse until everything Is broken up.
