Inspired by depression-era pasta and peas, I decided to do my own take on this meager macaroni. I hope I'm wrong, but I think the next big thing in the food world is going to be these types of 'frugal fabulous' recipes.

1 tablespoon olive oil
1 onion, diced
3 thin slices prosciutto, chopped
3 cloves garlic, sliced
1 teaspoon salt
1 pinch red pepper flakes, or to taste
freshly ground black pepper to taste
6 cups chicken broth
½ cup tomato sauce
1 teaspoon dried thyme
1 pound frozen peas, thawed
1 (15 ounce) can white beans, drained
1 (14.5 ounce) package penne pasta
½ cup grated Parmesan cheese

Steps:

  • Heat oil in a large saucepan over medium-high heat. Saute onion and prosciutto in hot oil until onion is soft, 5 to 6 minutes. Stir garlic, salt, red pepper flakes, and black pepper into onion mixture; saute until fragrant, about 1 minute.
  • Pour chicken broth, tomato sauce, and thyme into onion mixture. Add peas and beans; bring to a boil. Stir penne into broth mixture and cook for 7 minutes; remove from heat.
  • Stir Parmesan cheese into penne mixture, cover the saucepan with a lid, and let sit until the pasta absorbs most of the liquid, about 5 minutes.

6 rashers smoked streaky bacon, chopped
8 skinless, boneless chicken thighs
2 garlic cloves, thinly sliced
1 bunch spring onions, roughly chopped
300ml hot chicken stock
250g frozen peas
1 Little Gem lettuce, roughly shredded
2 tbsp crème fraîche

Steps:

  • In a large frying pan, dry-fry the bacon over a medium heat for 3 mins until the fat is released and the bacon is golden. Transfer the bacon to a small bowl, leaving the fat in the pan. Add the chicken and brown for 4 mins each side.
  • Push the chicken to one side of the pan and tip in the garlic and spring onions, cooking for about 30 secs, just until the spring onion stalks are bright green. Pour in the chicken stock, return the bacon to the pan, cover and simmer for 15 mins.
  • Increase heat under the pan. Tip the peas and lettuce into the sauce and cook for 4 mins, covered, until the peas are tender and the lettuce has just wilted. Check chicken is cooked through. Stir in the crème fraîche just before serving.

1 tablespoon cornstarch
1 (15 ounce) can chicken broth
2 tablespoons olive oil
1 tablespoon garlic, minced

½ green bell pepper, seeded and thinly sliced
½ red bell pepper, seeded and thinly sliced
1 (16 ounce) can diced tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
¼ cup medium-dry white wine
½ cup freshly grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the penne pasta and cook until al dente, 8 to 10 minutes. Drain, and reserve pasta.
  • Whisk the cornstarch and chicken broth together in a bowl until smooth. Set aside until needed.
  • Heat the olive oil in a skillet over medium heat. Add the garlic and chicken; stir and cook until the chicken is no longer pink and juices run clear, about 10 minutes. Stir in the onion, and green and red peppers; cook until tender, about 5 minutes. Stir in the tomatoes, and simmer for 10 minutes. Pour in the chicken broth mixture and wine, if desired, and season with oregano and basil. Stir in the cooked pasta, and simmer over medium heat until thoroughly heated through, about 5 minutes. Serve garnished with Parmesan cheese.

Steps:

  • In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain and return to pot.

3 cups 750 mL uncooked penne pasta
2 cups 500 mL frozen peas

2 teaspoons extra-virgin olive oil
1 small onion, chopped
8 oz. button mushrooms, sliced
2 cloves garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 (1 lb.) box penne pasta (whole wheat, regular or gluten free are fine)
3 cups low-sodium chicken broth
4 oz. plain cream cheese (I use 1/3 reduced fat)
2 cups shredded mozzarella cheese
1 (10 oz.) bag frozen peas, thawed
2 cups cooked, shredded chicken (see notes)
1/4 cup fresh parsley, chopped (optional)
Shredded Parmesan cheese (optional)

Steps:

  • Heat olive oil in a large pot over medium heat. Add onion and mushrooms and saute for 7-8 minutes, until onions are tender and the mushrooms have released most of their liquid.
  • Add garlic, salt and pepper and saute for another 30 seconds.
  • Add pasta and chicken broth and bring to a boil.
  • Cover, reduce heat to medium-low and cook for 8-10 minutes, until most of the liquid is absorbed and the pasta is nearly cooked. I lift the lid and stir it once or twice during the cooking time so the pasta gets moved around and can cook evenly.
  • Add cream cheese and mozzarella cheese and stir until melted and well combined. You can add an extra splash of chicken broth if needed to get everything to mix well.
  • Add thawed peas and shredded chicken and stir to combine. Turn off heat, cover and let sit for a few minutes.
  • Taste and adjust seasonings.
  • Serve with fresh chopped parsley and Parmesan cheese (if using).

2 1/2 cups penne
1/2 cup chicken stock
1 cup frozen green pea, thawed
1 tablespoon olive oil
1 clove garlic, minced
1 red bell pepper, seeded and diced
3/4 lb boneless skinless chicken breast half, cut into 1/2 inch pieces
1/4 cup romano cheese or 1/4 cup parmesan cheese, grated

Steps:

  • Cook pasta in a large pan of boiling water 10 minutes, or until al dente.
  • Drain and set aside.
  • Combine stock and 1/2 cup peas in a food processor or blender and process until smooth.
  • Set aside.
  • Heat oil in a heavy nonstick skillet over medium high heat.
  • Sauté garlic 30 seconds.
  • Add bell pepper and chicken and sauté 4 minutes, stirring occasionally, or until chicken is cooked throughout.
  • Add pea purée, whole peas and salt and pepper to taste.
  • Stir well.
  • Stir in pasta and bring to a boil.
  • Cook 2 minutes, or until mixture thickens, stirring constantly.
  • Stir in cheese and toss well before serving.

This is a quick and delicious meal. I skipped the oil and found I didn't need to drain the sausage because it was a good sausage and didn't have a lot of grease. I also used homemade chicken broth from my freezer and skipped the salt (the chicken broth and sausage had plenty of flavor). I also added 3 to 4 cups of peas instead of a cup. 12 ounces chicken sausage, sliced on the diagonal
2 garlic cloves, chopped

1 cup peas, thawed if frozen

1-ounce dried porcini mushrooms
1 cup hot water
1 pound penne pasta
1 tablespoon olive oil
1 leek, rinsed well and chopped
1 cup sliced shiitake mushrooms
1 heaping cup cooked chicken
1 teaspoon dried tarragon
1 1/4 cups reduced-sodium chicken broth, divided
1 teaspoon cornstarch
1/2 cup frozen green peas
2 tablespoons chopped fresh parsley
Salt
Ground black pepper

Steps:

  • Soak dried porcini mushrooms in hot water for 15 minutes, until soft.
  • Cook penne according to package directions.
  • While penne is cooking, heat oil in large skillet over medium-high heat. Add leeks and cook for 2 minutes, or until soft. Add shiitake mushrooms and cook for 3 minutes, until mushrooms soften. Strain porcini mushrooms through a sieve, reserving soaking liquid. Chop porcini mushrooms and add to skillet. Add chicken and tarragon and cook 1 minute, until tarragon is fragrant.
  • Add reserved mushroom soaking liquid and 1 cup of the chicken broth and bring to a simmer, for 5 minutes. In a small bowl, using a whisk, dissolve cornstarch in remaining 1/4 cup chicken broth and add to the pan with the peas. Simmer 2 minutes until it reaches a full boil, and the sauce thickens. Stir in cooked penne and cook 1 minute to heat through. Remove from heat and stir in parsley. Season, to taste, with salt and freshly ground black pepper.

In this recipe, I show you how to make a Chicken Penne with Chorizo and Peas. To me, it’s a bit of a Spanish twist on the combination, and the spicy chorizo (even just a bit it) adds a ton of flavor, while the peas a nice color and even a bit of a creamy texture. A side benefit is it’s one of the easiest chicken pasta recipes around, and should only take you about 30 minutes to make. I hope you enjoy it much as I do. Recipe Overview & Keys to Success To make the best Chicken Penne with Chorizo and Peas make sure you do the following:
  • As with all pasta recipes, don’t over cook the penne. Since I like to finish the penne in the pan with the sauce, you need to take it out of the water a bit early (30 seconds to a minute). Don’t rely on the package directions, make sure you taste it as it cooks. Personally, I don’t care how much chorizo you use…but just keep in mind that it’s a strong ingredient, and a little can go a long way. I like to make sure the dish is balanced, and the chorizo is a accent flavor, not the main. Add the peas at the last second. They don’t really need to cook, they just need to heat up and integrate with the pasta "sauce". If you cook them longer than 2 – 3 minutes they can get mushy and dull colored There are a few types of Chorizo out there. I prefer a harder, salami like version to the more sausage like style. That type of chorizo is already cooked, so you really just need to render a bit of the fat (and the flavor) out, for a few minutes…longer and you can overcook it
