Inspired by depression-era pasta and peas, I decided to do my own take on this meager macaroni. I hope I'm wrong, but I think the next big thing in the food world is going to be these types of 'frugal fabulous' recipes.

Steps:
- Heat oil in a large saucepan over medium-high heat. Saute onion and prosciutto in hot oil until onion is soft, 5 to 6 minutes. Stir garlic, salt, red pepper flakes, and black pepper into onion mixture; saute until fragrant, about 1 minute.
- Pour chicken broth, tomato sauce, and thyme into onion mixture. Add peas and beans; bring to a boil. Stir penne into broth mixture and cook for 7 minutes; remove from heat.
- Stir Parmesan cheese into penne mixture, cover the saucepan with a lid, and let sit until the pasta absorbs most of the liquid, about 5 minutes.

FRENCH-STYLE CHICKEN WITH PEAS & BACON

- In a large frying pan, dry-fry the bacon over a medium heat for 3 mins until the fat is released and the bacon is golden. Transfer the bacon to a small bowl, leaving the fat in the pan. Add the chicken and brown for 4 mins each side.
- Push the chicken to one side of the pan and tip in the garlic and spring onions, cooking for about 30 secs, just until the spring onion stalks are bright green. Pour in the chicken stock, return the bacon to the pan, cover and simmer for 15 mins.
- Increase heat under the pan. Tip the peas and lettuce into the sauce and cook for 4 mins, covered, until the peas are tender and the lettuce has just wilted. Check chicken is cooked through. Stir in the crème fraîche just before serving.

- Bring a large pot of lightly salted water to a boil. Add the penne pasta and cook until al dente, 8 to 10 minutes. Drain, and reserve pasta.
- Whisk the cornstarch and chicken broth together in a bowl until smooth. Set aside until needed.

- In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain and return to pot.
- Season chicken with salt, pepper, garlic powder, and Italian seasoning. In a large skillet over medium-high heat, heat oil, then cook chicken until browned on both sides and cooked through. Dice chicken, set aside, and cover to keep warm.

- Heat olive oil in a large pot over medium heat. Add onion and mushrooms and saute for 7-8 minutes, until onions are tender and the mushrooms have released most of their liquid.
- Add garlic, salt and pepper and saute for another 30 seconds.
- Add pasta and chicken broth and bring to a boil.
- Cover, reduce heat to medium-low and cook for 8-10 minutes, until most of the liquid is absorbed and the pasta is nearly cooked. I lift the lid and stir it once or twice during the cooking time so the pasta gets moved around and can cook evenly.

- Cook pasta in a large pan of boiling water 10 minutes, or until al dente.
- Drain and set aside.
- Combine stock and 1/2 cup peas in a food processor or blender and process until smooth.
- Set aside.
- Heat oil in a heavy nonstick skillet over medium high heat.
- Sauté garlic 30 seconds.
- Add bell pepper and chicken and sauté 4 minutes, stirring occasionally, or until chicken is cooked throughout.

This is a quick and delicious meal. I skipped the oil and found I didn't need to drain the sausage because it was a good sausage and didn't have a lot of grease. I also used homemade chicken broth from my freezer and skipped the salt (the chicken broth and sausage had plenty of flavor). I also added 3 to 4 cups of peas instead of a cup. - Soak dried porcini mushrooms in hot water for 15 minutes, until soft.
- Cook penne according to package directions.
- While penne is cooking, heat oil in large skillet over medium-high heat. Add leeks and cook for 2 minutes, or until soft. Add shiitake mushrooms and cook for 3 minutes, until mushrooms soften. Strain porcini mushrooms through a sieve, reserving soaking liquid. Chop porcini mushrooms and add to skillet. Add chicken and tarragon and cook 1 minute, until tarragon is fragrant.

To me, it’s a bit of a Spanish twist on the combination, and the spicy chorizo (even just a bit it) adds a ton of flavor, while the peas a nice color and even a bit of a creamy texture. A side benefit is it’s one of the easiest chicken pasta recipes around, and should only take you about 30 minutes to make. I hope you enjoy it much as I do. Recipe Overview & Keys to Success To make the best Chicken Penne with Chorizo and Peas make sure you do the following:
- As with all pasta recipes, don’t over cook the penne. Since I like to finish the penne in the pan with the sauce, you need to take it out of the water a bit early (30 seconds to a minute). Don’t rely on the package directions, make sure you taste it as it cooks. Personally, I don’t care how much chorizo you use…but just keep in mind that it’s a strong ingredient, and a little can go a long way. I like to make sure the dish is balanced, and the chorizo is a accent flavor, not the main. Add the peas at the last second. They don’t really need to cook, they just need to heat up and integrate with the pasta "sauce". If you cook them longer than 2 – 3 minutes they can get mushy and dull colored There are a few types of Chorizo out there. I prefer a harder, salami like version to the more sausage like style. That type of chorizo is already cooked, so you really just need to render a bit of the fat (and the flavor) out, for a few minutes…longer and you can overcook it
