SPICED FRIES SIX WAYS WITH DIPPING SAUCES
Steps:
- For all recipes, preheat two baking sheets at 450 degrees F on the top and bottom oven racks. Add spices to a 32-ounce bag of frozen fries and spread on the hot baking sheets. Bake as directed, switching the pans halfway through.
- Moroccan Fries: Toss the fries with 2 tablespoons olive oil, 2 teaspoons ground cumin, 1 teaspoon ground coriander, 1/2 teaspoon ground ginger and 1/4 teaspoon each ground cinnamon and cayenne; bake. Sprinkle with chopped cilantro.
- Cumin Ketchup: Toast 1 tablespoon ground cumin in a small dry skillet. Let cool, then mix with 1/2 cup ketchup, 3 tablespoons apricot preserves and a dash of hot sauce.
- Caraway-Dill Fries: Toss the fries with 2 tablespoons olive oil, 2 teaspoons each dried dill and ground caraway and 1/2 teaspoon mustard powder; bake.
- Pickled Mayo: Combine 1/2 cup mayonnaise, 1/4 cup chopped dill pickle and 2 tablespoons deli mustard.
- Celery Salt Fries: Toss the fries with 2 tablespoons olive oil, 1 tablespoon smoked paprika and 1 teaspoon celery salt; bake.
- Bloody Mary Ketchup: Combine 1/2 cup ketchup, 2 tablespoons horseradish, the juice of 1/2 lemon, 2 teaspoons Worcestershire sauce anda dash of hot sauce.
- Jerk-Spiced Fries: Toss the fries with 2 tablespoons olive oil and 2 tablespoons jerk seasoning; bake. Sprinkle with thinly sliced scallions.
- Chutney Mayo: Combine 1/2 cup mayonnaise, 1/4 cup mango chutney, the zest and juice of 1 lime and a dash of hot sauce.
- Chipotle Fries: Toss the fries with 2 tablespoons olive oil, 1 tablespoon smoked paprika and 1 teaspoon chipotle chile powder; bake.
- Smoky Barbecue Sauce: Combine 1/2 cup barbecue sauce, 1 to 2 tablespoons adobo sauce (from a can of chipotles) and 2 tablespoons pure maple syrup.
- Garlic-Parmesan Fries: Toss the fries with 2 tablespoons olive oil and 1 teaspoon granulated garlic; bake, sprinkling with 1/2 cup grated parmesan during the last 5 minutes. Sprinkle with chopped parsley.
- Herb-Anchovy Mayo: Pulse 1/2 cup mayonnaise, 1/4 cup each basil and parsley, 2 teaspoons dijon mustard, 2 anchovy fillets and 1 small crushed garlic clove in a food processor until smooth.

- Prepare 1 pound frozen french fries as the label directs. Meanwhile, cook 1/2 thinly sliced onion, 1 tablespoon hot paprika and 1 teaspoon salt in 2 tablespoons butter in a large skillet over medium-high heat, stirring, 4 minutes. Add 1 minced garlic clove and cook 2 more minutes. Remove from the heat and add 3 chopped scallions and 2 tablespoons chopped parsley. Add the fries and toss to coat.
WW CUMIN-SCENTED OVEN FRIES
This is a great tasting recipe. It is out of my Weight Watchers cookbook called "Best of Weight Watchers Magazine". It has 3 points per serving.

- Preheat the oven to 450 degrees F, lightly spray a baking pan with nonstick spray.
- Combine the potatoes and olive oil in one bowl.
- Combine the cumin, garlic powder, paprika, salt, cayenne, and cinnamon in another bowl.
- Sprinkle the spice mixture over the potatoes and toss well.
- Arrange the potatoes in a single layer on the pan.
- Bake 20 minutes, then turn the potatoes, and bake until crisp and cooked through, 8-10 minutes longer.
- For a little extra crispness, finish cooking the fries under the broiler.

SPICY CUMIN FRIES
Steps:
- 1. Position racks in the upper and lower third of the oven and preheat to 450 degrees. Line 2 rimmed baking sheets with foil, then divide the fries between them. Bake, tossing once or twice, until crisp and golden brown, 30 to 45 minutes. Transfer to a large bowl.
- 2. Place the chiles in a bowl, cover with a plate and shake to release seeds. Fish out the chiles, leaving the seeds behind.
- 3. Heat the vegetable oil in a large skillet over medium heat. Add the cumin seeds, peppercorns, chopped chiles, and 1 tablespoon salt and cook, stirring, until toasted, 2 to 3 minutes. Stir in the scallions and remove from heat.
- 4. Toss the fries with the spiced oil and season with salt. Remove and discard and large chile pieces.
SPICY STEAK FRIES

- 2.In a large bowl, toss potatoes with Mrs. Dash® Extra Spicy Seasoning Blend, olive oil, and garlic.

- 4.Place potatoes in preheated 425 degrees F oven and bake for 20 minutes. Turn the potatoes and bake another 15 minutes or until potatoes are browned and tender.
