Keropok is something like a cracker and makes a lovely snack. They are seldom home-made as the dried unfried crackers are easily available at the provision shops or markets. The times are estimations and the servings depends on whether you are using it as an ingredient or as snack. I've put in 8 as a ballpark figure.

1/2 teaspoon baking soda
1/2 teaspoon water
120 g prawns (shelled, deveined, and head removed)
1 teaspoon salt
2 1/2 teaspoons sugar
1 teaspoon msg
1 egg, lightly beaten
180 g tapioca flour
oil, enough for deep frying

Steps:

  • Mix baking soda and water.
  • Mash prawns into a paste Add salt, msg, sugar and baking soda.
  • Mix thoroughly by hand.
  • Add egg bit by bit and knead well with hand.
  • Add flour bit by bit and knead until dough is stiff enough to roll into logs 3 cm thick.
  • Steam rolls for 1- 1.5 hours until there is no whiteness in the rolls.
  • If your rolls are thicker (>3cm), then steam for a longer time.
  • Leave to set overnight.
  • Slice with sharp and well oiled knife to 2mm thick slices.
  • Arrange them on a drying rack and sun them until they are very dry (About a few days.)
  • Deep fry the slices and cool before serving.
  • It is important to store them in air-tight containers to prevent them from going soft.
  • They expand during frying.

1 kg medium raw prawns, peeled and roughly chopped
1 medium red onion, finely chopped
1/4 cup fresh coriander, chopped
1 large tomatoes, finely chopped
1 garlic clove, minced
1/2 teaspoon minced ginger
1/2 teaspoon ground red chili pepper
75 g besan flour (chick pea flour)
1/8 teaspoon bicarbonate of soda
salt
2 cups vegetable oil (for deep frying)

Steps:

  • Pulse prawns in food processor-they need to just come together not turn into a paste!
  • Combine the prawns and remaining ingredients except the oil.
  • Using a tablespoon, measure out approximately 30 balls.
  • Using damp hands, roll each portion into a ball; place on a plate, cover with cling film until ready to use.
  • Heat the oil in a wok or heavy based frypan.
  • Fry 6-8 balls at a time until golden brown all over.
  • Drain on paper towels.
  • Serve hot with tomato and mint chutney.

  • Steam the dough rolls for about an hour. You will notice that the color and texture of your rolls will change quite a bit throughout the steaming process. Add more water, as needed.
  • Dry the slices using the sun, a dehydrator, or an oven at the lowest heat setting. If sun-drying the crackers, cover them with netting to keep insects away.They may curl up a little. You can flip them halfway through to get them to dry more evenly. They should dry up into hard little disks.
  • Once completely dry, you can deep fry the prawn crackers.Use enough oil so that your crackers can be submerged in the oil completely. To achieve the right temperature (around 360ºF/180ºC), wait until a small piece of cracker sinks down in the oil and then immediately floats up to the surface and begins to expand. You may have to press down on the crackers to submerge them completely in the oil. If they aren't fully submerged, they may not expand completely, leaving dry, hard, un-fried areas.
